Iam pleased to report that 2018 was another great year for our club. A vast majority of you capped it off in high style with another “Simply Irresistible” New Year’s Eve blast. A mild, wild and beautiful evening had most of you dancing into the new year, while others relaxed around the firepits, roasting “smores” at poolside.

Through the year there were 20 new families to join our club family of fun seekers, resulting in net member growth of 10. This puts our membership role at 493 members, the most in the history of the club. Please join me in welcoming our newest members…

RESERVATION POLICYThe club strongly suggests reservations for dinner. However, we will make every attempt to accommodate any member wishing to dine with us. Walk-ins and late reservations will be accepted on a space available basis.

CANCELLATION POLICY If a reservation for a special event (where the policy is in action) is cancelled less than 24 hours before the start of the event, then the member holding the reservation will be billed for 50% of the cost of the event. This will apply for each guest that the original reservation was made for. Cancellations made more than 24 hours from the time of the reservation will not be billed a cancellation fee.

In the private club business it is widely known that staff development and tenure are keys to success. To the extent that we can keep our best people and give them opportunities for growth, our club will benefit immeasurably. This is difficult with a business the size of the Yacht Club, and further complicated by our extreme seasonality.

It’s early-January and we are now basking briefly in the glory of a most successful holiday season, and year in general. However, our plates are full, pushing a few improvement projects to further enhance the clubhouse and club campus for your return…hopefully soon!

From us all, we extend a great big THANK YOU for your support and contributions towards a most fun and successful 2018. You have made me and many others proud to be a part of the Figure Eight Island community, and we eagerly look forward to serving you through the coming year.

Reservations are required. The 24-hour cancellation policy will apply for this event. You must be dining from the buffet to participate in Bingo. The Helm is also open for dining this evening.Buffet opens at 6:30 pm. Cards go on sale for $1.00 each (cash only) at 6:45 pm. Game play beings promptly at 7:00 pm. Please note: This is different timing from our regular bingo schedule. We are beginning the game play earlier to accommodate our younger players.

SEAFOOD EXTRAVAGANZA 6:30–8:30 PM

We sure do love our seafood at the beach and this event will showcase it all! Shrimp, flounder, grouper, scallops, tuna are just a few of the items that will be the stars of the event. There will also be many items for the land lovers and non-seafood eaters plus a children's buffet and bountiful array of desserts.

EASTER CHURCH SERVICE 8:30 AM (RAIN OR SHINE)

Once again, the Figure 8 Island Church is excited to welcome a wonderful officiant for our Easter service, Dr. Jerry Bron. Dr. Bron was born in the Netherlands in December of 1945. He is the oldest of five children. He immigrated to the U.S. in 1955 and grew up in Wilmington, North Carolina. He played basketball at New Hanover High and UNC -Wilmington. Rev. Bron was graduated from Union Seminary in 1972 with a Master of Divinity and a Doctor of Ministry in 1983. He studied under Rev. Dr. Ben Lacey Rose while at Union. Dr. Bron pastored three churches over the last 38 years: Pink Hill Presbyterian Church, Pink Hill, NC from 1972-1978, First Presbyterian in Washington, NC from 1978 to 1993, and then as Organizing pastor of the Southminster Church in Gastonia, NC from 1993 to 2010. Please join your fellow islanders for this non-denominational service.

EASTER EGG HUNT 10:00 AM

In front of the Yacht Club Complimentary to all children

The Easter Bunny is hopping all over the property hiding thousands of eggs. Children will be divided into three age groups for hunting. Please meet in front of the flag pole promptly at 10am. Don't forget to bring your Easter basket for the eggs and your camera to catch all the cuteness! Prizes will be awarded for the most eggs found.

INGREDIENTS8 ounce Baguette, cut into bite size pieces

4 large Shallots, quartered lengthwise

¾ cup Capers, drained

2 whole Lemons, washed and quartered lengthwise

¼ cup Olive Oil (plus more as needed for brushing)

to taste Kosher salt and ground black pepper

4 each 12 ounce whole chicken legs

Optional Assorted root vegetables

FEATURING: Meatloaf, Pot Roast, Chicken Pot Pie, Liver & Onions,

Spaghetti & Meatballs, etc.

Roast Chicken on Toasted Baguette with Capers & Charred Lemons

DIRECTIONSPre-heat oven to 400 degrees.

On a large rimmed baking sheet toss the bread with the shallots, lemons and the olive oil. Season with salt and pepper.

Brush the chicken with olive oil and season with salt and pepper.

Arrange the chicken over the bread.

Roast the chicken for 50 minutes until the bread is crisp and an instant thermometer inserted in the chicken thigh reads 160 degrees.

Transfer the chicken, bread, lemons and capers to a platter and serve.

CHEF’S NOTE: I usually add root vegetables to the bread mixture (sliced carrots, turnips, parsnips and fingerling potatoes) for additional crunch and flavor. If doing so, you will want to peel and cut the vegetables uniformly and toss in olive oil with additional seasoning or wait for service and season as needed. I also experiment with other herbs to season the chicken with such as Herbs de Provence.

Serve this dish along with a green salad of Boston Bibb or arugula tossed with olive oil, sherry vinegar and pecorino Romano. A few turns of the peppermill… and there you go.
