in last February’s CDD article in the Seven Oaks News, I pro-vided background informa-

tion about what the CDD Board is doing about the trees between the sidewalks and streets as well as what other communities are doing about oak trees pushing up their sidewalks. The article also provided details on our meeting with Commissioner Mulieri and members of the Pasco County staff at our CDD meeting on January 11, 2012. If you would like to review this article, it is posted on the Seven Oaks Web-site. Now, I will explain what the CDD Board has done since January 2012.

three evaluations

At the February 9, 2012 CDD meeting, the Board hired PHC Professionals, Inc to give a professional evaluation of what can be done to mitigate further damage being caused by the trees between the sidewalks and streets. They provided an 11 page report on March 1, 2012. The report stated that “Most of the oak trees planted between the sidewalks and streets throughout Seven Oaks are in poor health and exhibiting tip and branch dieback and death in some cases.” The recommendation in the report stated, “The only viable option to prevent further damage to the sidewalks by actively-growing trees (the ones that still have green leaves) is to remove the trees.”

At the January CDD meeting, Commission Mulieri recom-mended that we work with Chris Dewey, who works in the Pasco County Extension. This office of-fers educational services in Pasco

County through a three way cooperative arrangement between the Board of County Commis-sioners, the University of Florida, and the United States Depart-ment of Agriculture. When I talked with Chris Dewey, he said because of the size of Seven Oaks, he wanted to get the opinion of Bob Northrop, who is his counterpart in the Hillsborough County Extension Office. After both of them inspected Seven Oaks, Chris Dewey sent us a report on May 8, 2012 stating, “Without consideration of the cost of the two options, tree re-placement is the only option that can provide street trees of high quality, proper structure, good rooting and minimal potential for sidewalk damage and lifting that can be a tripping hazard.” His conclusion was based on observations by both of them that included the poor quality of the planted trees, trees planted at excessive depth, poor structure of trees, trees having circling roots due to the way grown, and poor soil conditions.

At the March 14, 2012 CDD Board meeting, the Board passed a resolution to change the repair of the sidewalk adjacent to home-owner lots from the homeowner to the CDD. This would include removal and replacement of dam-aged sidewalk. The homeowner will continue to be responsible for maintaining the sidewalk to include keeping the sidewalks clear of debris, removing any slipping hazards, and cleaning off any mold and dirt.

damaged sidewalks

At the June 5, 2012 CDD meeting, the Board made the decision to begin repair-ing the sidewalks. We started with three sidewalks that were raised the highest. So the new sidewalks would not be damaged by the oak trees causing the problem, we voted to remove the oak trees. The CDD hired Joe’s Tree Service for $1,300 to cut down the three trees plus one additional oak tree, grind the stumps, and lay new sod.

At the September 12, 2012 CDD Board meeting, the Board made the decision to re-pair all the sidewalks at Seven Oaks that were uneven. There were now about 350 sidewalks that needed to be repaired with most of them being damaged by oak trees. All but 15 sec-tions of sidewalk could be ground down with the equipment that Bob Semple had pur-chased months earlier for just over $1,000. We also achieved an economy of scale by Driveway Maintenance, Inc replacing the 15 sections plus 3 sections at the same time. The cost of the 18 sections was $10,485 where the cost for just 3 sections would have been $3,750. This required that an additional 44 trees be removed for $15,700 so the trees would not continue to raise the repaired sidewalks. Our maintenance staff has ground down about 50 sidewalks and are working on the remainder.

At the October 10, 2012 CDD meeting, each Board member felt the research that they had done indicated that the approxi-mately 2,000 remaining oak trees in the areas between the sidewalks and streets needed to be removed. The next step would be to hire an arborist to look at each tree to determine if the research that we had done had led us to the correct conclusion. To insure all Board members wanted to proceed with this next step, we unanimously approved a motion to remove the street trees and replace them with another species in a location to be determined at a later date. In November, the CDD hired Ron Litts, who is an arborist that had worked with the county to write the new land development code that we will need to follow.

At the November 14, 2012 CDD meeting, the Board discussed options concerning replace-ment trees to start developing a plan to submit to Pasco County. The new Land Development Code requires that if more than 35 trees are removed at least 8 species have to be planted. One cost estimate for all 2,037 trees was $90 to remove each tree and $159 to plant a replace-ment tree. Therefore, it would cost approxi-mately $500,000. This cost will vary based on the type of tree chosen and how many are removed and replanted at the same time.

A workshop was held November 10th at noon and 7:30 p.m. Extra booklets are at the clubhouse. More workshops will be held dur-ing the coming months. Each homeowner will receive a detailed letter. It will also be posted on the website and put on the marquee a few days prior to the workshop. v

Congratulations to the New Tampa/Wesley Chapel Wildcats families on

1 3-4 pound pork tenderloin (non-marinated)

The Filling:2 cloves garlic10 oz. spinach4. oz sun-dried tomatoes4 oz. goat cheese4 oz. cream cheese1/2 c. sour cream

Saute garlic and chopped spinach in olive oil until nearly cooked through. Add sun-dried tomatoes. Remove from stove when the spinach is cooked to your liking. In a separate bowl, mix goat cheese, cream cheese, and sour cream together until smooth. Add the spinach + sun-dried

tomatoes to your creamy mixture.

Lay loin fat side down. Make a cut lengthwise down the center of the meat and about 2/3 of the way through it. Push meat flat and, starting from the deepest part of the center cut, make a 1-inch horizontal cuts toward each side running the length of the meat. Push meat flat again. Pat the pork dry with a paper towel, then place on a baking sheet. Spread the filling across the pork, then roll the tenderloin up like a jelly roll, keeping the mixture enclosed. Tie the pork with cotton strings to secure it.

Brush the top of the pork with olive oil, and season with salt and pepper.

Bake at 400 degrees, for about an hour, until the internal temperature of the pork is 155 degrees (you will need a meat thermometer). To avoid overcooking the pork, check the meat with the thermometer after 40 minutes of cooking. Cooking times will vary based on the weight of the tenderloin.

COOkIE COOkBOOkS FOR THE HOLIDayS By TaMMIE HaRRIS

As the holiday season fast approaches, cookie recipes become a hot commodity.

Cookies are the perfect homemade gift for friends, family -- even the mailman. There are dozens of cookie cookbooks at the library, but here are four highly recommended books and the cookies that came out of them.

The first is “Cookies at Home,” published by the Culinary Institute of America. The book begins with several chapters on materials, decorations and techniques, showing you the right consistency for batter and icing, and the proper methods of piping. The recipes cover a lot of the standards, including brownies, bars and meringues. Fewer than half of them have photos, but everyone knows what an oatmeal cookie looks like. I chose to make butterscotch cookies, which turned out very flavorful, with ground butterscotch candies and butterscotch extract.

“101 Gourmet Cookies for Everyone” by Wendy Paul plays to the whole crowd with “Forget the Calories” and “Watch the Waistline” recipes. There are even chapters for special diets, like vegan and gluten-free. I picked out the low-fat, low-sugar butternut squash pecan cookies. They were moist and cake-like, much like pumpkin bread. The texture was a nice change of pace.

The last pick, “One Sweet Cookie,” was a collection of recipes from celebrated chefs. Many of these chefs specialize in international cuisine. There are Australian lamington bars, which are almost like little cakes. There is a chocolate-chip cookie recipe from Jacques Torres, a famed chocolatier. I decided to try the flourless chocolate cookies. These cookies resemble classic chocolate crackle cookies and have no butter or oil. They were sweet and rich all the same, and the chopped walnuts gave them a pleasant texture.

There are cookies for every diet, every budget and every skill level out there. Find the right book, and don’t forget to read the entire recipe before starting. v

WCAA Tampa Tribe girls lacrosse competitive travel team is proud to

have reached yet another goal in its lacrosse program. Sixteen Tribe players, including Shaylagh Murphy of Seven Oaks, recently traveled to Pineville, North Carolina to compete in The Southern College Showcase. The Southern College Showcase is a recruiting tournament that allows coaches the opportunity to get a closer look at players they already

know about, see new players, and to also keep a watch on rising talent for future lacrosse seasons. “After six years of building the Tribe girls program, we’ve reached a milestone by being able to provide this opportunity for our players to be seen and recruited by college coaches”, said Assistant Program Director Rene Diaz. “We are proud of all the girls who played in the tournament, they were fierce on the field, but most

importantly, they played as a team,” said Head Coach Mike Diaz. It paid off because the Tampa Tribe placed first in their high school division and were potentially seen by 21 different DII and DIII college lacrosse coaches. The WCAA Tribe program has grown to be a quality girls lacrosse program and as it continues to build on the quality of student/ athlete it has in its program so will its search for new opportunities to meet these players’ needs. WCAA provides its dedicated Tribe coaches with continuing education and recruits former college players to coach. Corri Smeak, a former defensive player for a DI college is the Assistant Tribe Coach and brings experience and fun to the program.

Tampa Tribe also hosts instructional clinics conducted by college coaches to help players increase their field knowledge and learn what college coaches look for in players. Tampa Tribe players compete in quality tournaments with an elevated level of play, which is a great way to take their game to the next level.

Tribe members and their parents also benefit from informational seminars that explain the college recruiting process and are put in touch with college recruiting professionals. For more information about Tampa Tribe

Seven Oaks Elementary kindergarten teacher, Lizette Geisler, has published a children’s book called “My Gift to the World”. She wrote it to inspire children to discover their true interests and natural abilities.  “I wanted to write a book in which I could talk to students about the importance of discovering their own unique gifts,” says Ms. Geisler.  “My Gift to the World will hopefully inspire all children to grow in self-confidence and self-worth, by recognizing we are each blessed with special gifts that expand joy when they are shared with the world!”

The story is about a little girl named Valentina, who, upon asking her mother why she became a piano teacher, finds out that this was her mother’s “gift to the world.” The mother gives Valentina numerous examples of unique gifts and talents various people have, and how they share them with the world. Ultimately, Valentina is told that finding and doing what she loves will be her gift to the world.

HaRvaRD BOUnD!Nikita Shah dreamed of going to Harvard University since she was afreshman. Now that dream is a reality. The all-state performer in track and cross country was heavily recruited by Harvard, Columbia, MIT, FSU, and UF, among many other schools. Her combination of academics (4.64 GPA tied for first in the senior class) and athletics (3rd place in 3200 meter run in track and 4th place in cross country in each State Finals) opened the doors of arguably the best university in the nation. Congratulations Nikita!

CROSS COUnTRyFor the fifth year in a row, the Wiregrass Ranch girls cross countryteam dominated the Sunshine Athletic Conference meet, gaining an easy 35 point victory over second place Gulf at the SAC championship meet on Wesley Chapel’s campus October 20th. Nikita Shah led the girls to victory, winning the individual title for the first time in her career. Berlin Waters, Elise Cedre, and Maddie Conway also earned 1st team all-conference honors at the meet.

The Bulls’ girls will be heavily favored to win their District and Regional championships, also, and are currently ranked in the top 5 in Florida’s Class 3A.

8th annual david reutimann charity cook-out & golf tournament

David Reutimann, driver in the NASCAR Sprint Cup Series, will host his 8th Annual Charity Golf Tournament, Cook Out and Auc-tion at Silverado Golf and Country Club December 7th and 8th in Zephyrhills.

An event filled with food, fun and live music, the festivities consists of a cook out, sports memorabilia auction and concert on Friday night, followed by a golf tourna-ment on Saturday. Last year’s event raised over $62,000 for the David Reutimann Foundation and will benefit numerous charities.

“I want to thank everyone who attended last year and those who volunteered throughout the week-end. A majority of people have to conserve these days, yet so many came out to contribute and that just says a lot about our commu-nity. otis competed in a total of seventeen events from October 1st thru October

12th. Otis won five Gold Medals (Corn Hole Toss, Running Long Jump, Shot Put, Discus, Bench Press and Dead Lift). He also won three Second Place Ribbons

(Standing Long Jump, J-Mile Walk and Electronic Darts). Two Third place Ribbons (Table Tennis and Basketball Free Throws) and he finished fourth in Billards, Softball Throw-Accuracy, Football Throw-Accuracy and Bowling!

This was the fourth consecutive year that Otis has won the Most Outstanding Athlete Award in his age division. Otis works out daily at Sport+Field and Seven Oaks Athletic Field. In order to prepare and condition himself for theSenior Games, Otis does a combination of exercises for each of his events including riding his bike for twenty miles twice a week.

Otis enjoys the age groups competition because it gives him a chance to meet and greet athletes from across the state in his age division. Otis is already practicing for the 2013 Senior Games. Otis says that the older he gets, the

tougher the competition. “There is always the element of surprise. You never know who is going to show up that is better than you are.”

Otis has qualified for the 2012 Florida Senior Games State Championships held in Polk County on December 1st thru the 9th He will enter the Discus and Powerlifting events.

On Thursday, November 8th, Pasco County Com-missioner Pat Mulieri

visited the Pasco County Animal Services Adoption Center in Land O’ Lakes, along with As-sistant County Administrator Dr. Suzanne Salichs, Animal Behavior Consultant Marilyn Wolf, Animal Advocates and Pet Rescuers Kimberly Kernon and Sharon Smith, and Photographer Jim Weber. The visit allowed all present to tour the adoption center, visit with the animals, ob-serve the renovations to Building C that are currently underway, and discuss the Save 90% Plan. The Pasco County Board of County Commissioners approved the Save 90% Plan at their Board of County Commission meeting on Wednesday, November 7th. The Community Services De-partment/Pasco County Animal Services (PCAS) Division has set the goal to save as many adopt-able animals as possible. PCAS staff is implementing several innovative measures and are in

the process of creating a revised business plan in an effort to strive towards the goal of the SAVE 90% Program. With an emphasis on giving shelter pets a second chance to find forever homes, PCAS is currently implementing eight of the eleven crucial pro-gram areas by partnering with pet rescue adopters and organizations, community residents, volunteers, government entities, and other community based organizations. “A new day has dawned for Pasco County Animal Services as we move to the Save 90% Plan. We are working more closely with volunteers and pet rescue groups to find more animals forever homes. We are so grateful to all who donate their time and labor to the animals.
