We still don't have a firm First Friday date and not sure that the Breakfast Club will be giving us one. Lee is still working on that one. The Installation Banquet is Thursday, September 22 nd at Banquet Masters in Pinellas Park. Price is $21.00. We continue to work at the Pizza booth. We have 2 more games, 9/24 and 9/30. We need volunteers for those as Scott and Kathy cannot work either game. The Halloween Party is 10/29. Lee will discuss this more at upcoming meetings. Next meeting 10/04 at Tick Tock. Please be there and bring a friend and/or a potential new member!

Today’s meeting at Tick TockIn attendance at the meeting were Scott, Vi, Viki, Sue Foster, CJ and Laura Morris, Lee and Judy, David and Linda Dawley, Jean Rutan, and Jim and Jane Ridings.

We still don't have a firm First Friday date and not sure that the Breakfast Club will be giving us one. Lee is still working on that one.

Spanish-Style Tortilla with Salami and Potatoes

Total time: 34 min / Serves 4

Per serving: 551 CAL, 38 G FAT (14G SAT FAT), 431 MG CHOL, 1,358 MG SOD, 30 G PRO, 24 G CAR, 4 G FIBER

¼ lb thinly sliced salami, halved1 large onion, chopped¾ lb medium, red potatoes (about 2) cut in ½ inch pieces3 Tbsp olive oilKosher salt and pepper¼ cup fresh flat-leaf parsley, roughly chopped, plus 1 cup leaves8 large eggs4 oz sharp white Cheddar, grated (about 1 cup)1 Tbsp red wine vinegar2 tsp Dijon mustard1 cup grape tomatoes, halved

1 - Heat over to 400ºF. Cook the salami in a large over-safe nonstick skillet over medium heat until beginning to brown, about 1 minute per side; transfer to plate.

2 - Add the onion, potatoes, 1 Tbsp of the oil, ½ tsp salt and ¼ tsp

pepper to the skillet and cook, stirring occasionally, until the potatoes are golden brown and just tender, 10 to 12 minutes; stir in the chopped parsley and salami.

3 - Whisk together the eggs and cheese, pour into the skillet and stir to distribute the ingredients. Transfer the skillet to the oven and bake until the tortilla in puffed, brown around the edges and a knife inserted in the center comes out clean, 10 to 12 minutes.

4 - Meantime in a medium bowl, whisk together the vinegar, mustard,remaining 2 Tbsp oil, and ¼ tsp each salt and pepper. Add the tomatoes and toss to coat; fold in the parsley leaves. Serve with the

tortilla.
