Always light each burner prior toplacing a pan on the burner grate.Also, turn the control knob to theposition before removing a pan fromthe burner grate.

Keep any ventilation filters clean toavoid grease fires.

Do not clean the rangetop while it isstill hot. If using a damp sponge orcloth, wait until the rangetop hascooled sufficiently to prevent steamburns. Also, some cleaners canproduce harmful or unpleasantfumes if applied to hot surfaces.Refer to Care Recommendations on pages 24–25.

Always set pans gently onto thegrates and center them so that theyare well balanced.

Always check the positions of thecontrol knobs to make certain therangetop and top surface burnersare off when you are finishedcooking.

When deep fat frying, be certain thatthe pan is large enough to accom-modate the desired volume of foodwithout overflow caused bybubbling of the fat. Never leave adeep fat fryer unattended. Avoiddeep fat frying of moist or frost-covered foods, as foods with highwater content may cause spatteringor spilling of the hot fat. Heat fatslowly, and stir together any combi-nations of oils and fats prior toapplying heat. Utilize a deep fatfrying thermometer to avoid heatingthe fat to temperatures above theflash point.

When using the rangetop, do nottouch the grates, burner caps,burner bases or any other parts inproximity to the flame. Thesecomponents may be hot enough tocause burns.

If the rangetop is near a window, donot use long curtains as a windowtreatment, as they could blow overthe rangetop and create a firehazard.

smoke or ignite.

Do not store or use gasoline orother flammable vapors and liquidsin the vicinity of this or any otherappliance.

Choose pans with easily graspedhandles that will stay cool whilecooking. Refer to Cookware Selec-tion on page 23.

Do not allow aluminum foil, plastic,paper or cloth to come in contactwith a hot burner or grate. Do notallow pans to boil dry.

Start the ventilation hood approxi-mately five minutes before cookingon the rangetop or top surfaceburners; this establishes an aircurtain and improves the capture ofvapor and moisture.

Do not cover the burners and grateswith anything except properlyselected utensils. Decorative coversshould not be used.

Wear proper apparel. Never let looseclothing or other flammable materi-als come in contact with the burnerswhile in operation. Fabric may igniteand cause personal injury.

The unique dual stacked burner designcombines all of the burner parts in oneassembly.

After cleaning or removing burner parts forany reason, it is extremely important that youreassemble burners correctly.

The burner cap should sit flat on the burneror you will not get a blue flame. Refer to theillustration below.

SURFACE B U R N E R S

A spark electrode ignites each surface burner.This control eliminates the need for continuousopen flame pilots. For added safety andconvenience, each burner is designed with anelectronic reignition system. This featureenables any burner to relight automatically inthe event it is accidentally extinguished.

Large burners provide a rating of 4.6 kW (286 g/h) on , with .9 kW (57 g/h) deliveredat simmer. The small burner provides a ratingof 2.8 kW (179 g/h) on , with .55 kW (43 g/h)delivered at simmer. All burners have simmersettings.

A distinguishing feature of Wolf’s low kWcontrol is its constant, low heat output withoutcontinuous ignitions. The flame diameterremains full size; only the heat output islowered. This patented dual stacked burnerdesign makes it possible to enjoy cooking atfull flame as well as maintain control whilesimmering at the lowest flame setting.

CON T R O L K N O B S

The control knobs are positioned to corre-spond to the burners they regulate. The knobson the far left regulate the burners on the leftside. Conversely, the knobs on the far rightregulate the burners on the right side.

The precision fit of the control knobs requiresthe use of a nyliner insertion between the knoband bezel. When removing knobs for cleaning,place the nyliner back inside the bezel for easyreinstallation of the knobs. Refer to the illustra-tion on page 12.

To light a burner: push in and turn the corre-sponding control knob counterclockwise to setting. You will hear a clicking sound and seethe burner ignite. Once the burner is lit,continue turning the knob counterclockwise toany one of the settings— through .

To select a SIMMER setting: turn the burnerknob to the setting; you will feel a stopdetent in the knob rotation. Push in on theknob, continuing to turn it counterclockwise.This moves the flame to the second tier. Now,select any variation within the flamesettings— through .

Each knob is designed to be a ”push-to-turn”knob. Although this is a child-safe design,children should never be left unattended in the kitchen when the rangetop is in use.

Before using for the first time, you shouldclean your rangetop thoroughly with hot waterand a mild detergent. Rinse and dry with a softcloth. This removes any residual oil and greaseleft on the surface from the manufacturingprocess. Refer to Care Recommendations onpages 24–25.

IMPORTANT NOTE: Before using your Wolfsealed burner rangetop, check that the surfaceburner caps are positioned correctly.

Griddles and French Tops need to go througha ”burn in” period to clean oils from thebottom of these assemblies. To prevent foodfrom sticking and to protect the surface frommoisture, it is necessary to season the griddleand French Top prior to use. Refer to thefollowing pages for specific instructions onusing the optional charbroiler, griddle andFrench Top.

The use of proper cookware is very important.Refer to Cookware Selection on page 23 forcookware recommendations.

F LA M E H E I G H T A N D A P P E A R A N C E

Select a flame that is just high enough tomaintain the desired cooking speed and issized to fit the base diameter of the pan. Neverextend the flame beyond the base of the pan.Smaller diameter pans should be used on theleft rear burner.

The flame on natural gas should be blue with adeeper blue core. There should be minimaltrace of a yellow flame. A yellow flame indi-cates an improper mixture of air and gas orimpurities in the gas supply to the range. Ifthis occurs consistently, call a Wolf authorizedservice center to adjust the mixture. With LPgas, some yellow tipping to the flame isacceptable and may not require an adjustment.

A ”popping” sound may be noticed with LPgas when the surface burner is turned off. Thisis normal.

GRATE P L A C E M E N T

The low profile, cast iron grates are designedfor a close fit. This enables you to move panseasily from one burner to another withouthaving to lift the pan or have it tip overbetween the grates. Each grate sets securelyon dimples on each corner of the burner pan.

Continuous grates are interchangeable, exclud-ing the charbroiler grate with the burner grate.

Position the porcelain-coated, cast iron gratesover two burners. Rubber pads located underthe grate support legs will match up with thedimples on the burner pans.

The drip pan holds as much as .6 L of liquidspillover per two-burner pan.

To minimize flare-ups when grilling chickenbreasts and thighs, remove the skin. Brushpieces with peanut or vegetable oil toreduce sticking to the grate.

If flare-ups occur, quickly move the food toanother place on the grate with long tongs.

Apply basting sauce halfway throughcooking time.

Use a minute timer as a reminder to turnthe food over halfway through cookingtime.

I N F R A R E D GRILL

This optional feature is designed with aninfrared burner to give the highest quality andmost efficient method of gas grilling. A radiantplate with numerous holes distributes the heatevenly over the grate. The burner becomes anorange-red color at the surface of the ceramictile, and when it glows, it transfers an intenseheat to the food. This sears the outside of thefood, leaving the inside tender and juicy.

The infrared burner is designed to operate at5.8 kW (378 g/h) at 100% full heat output.

Before using the charbroiler for the first time,place the radiant plate slots over the frontdeflector of the charbroiler frame. The edgesof the charbroiler grate should line up on topof the assembly.

Follow these steps to disassemble theinfrared grill for cleaning:

1) Remove the infrared grill grate. Refer to theillustration below.

2) Remove the radiant plate. Refer to theillustration below.

3) Remove the infrared grill frame.

4) After cleaning, put the infrared grill frameback in place.

5) Line up the slots in the front of the radiantplate with the front angle. The slots shouldfit over the front angle and sit flat on theinfrared grill frame.

6) Reinstall the infrared grill grate.

To keep the infrared grill looking its best, it isrecommended that you clean it after every use.

Infrared Grill Grate (porcelain-coated castiron): When cool, lift off and set in the sink.Use a soft bristle brush to remove foodparticles from the grate. Pour very hotwater over the cooked-on residue. Coverwith wet dish towels and pour more hotwater over it. Allow the hot, moist condi-tions to help loosen the residue. Removeremaining soil with a soap-filled scouringpad. Rinse and dry.

Infrared Grill Radiant Plate (stainless steel)remove from the range by lifting up the radiant plate from the grill frame. Soak in hot water and dish detergent. Wash thoroughly, scrubbing withscouring pad if needed. When placing the radiant plate back on the grill frame, the slots in the front edge of the radiant plate must go over the angled plate on the grill frame, the slots should fit over the front angle and sit flat.

Igniter (ceramic): Avoid contact with theigniter; it is fragile and can chip or break.

IMPORTANT NOTE: Do not use any commer-cial cleaners on any part of the charbroilerassembly.

Infrared Grill Frame (stainless steel) toremove from the range lift directly vertical,take care of trim between the grill frameand the burner tray. Wash thoroughly. Whenfitting the grill frame take care not to damage the ignitor and ensure that the trim is placed back between the grill frame and burner tray.

Turn on the ventilation hood five minutesprior to using the griddle.

To heat the griddle, push in the controlknob and turn counterclockwise to thedesired temperature. It is normal to hear aclicking sound. This is the electronicignition lighting the burner. When theburner is lit, the thermostat will control thetemperature.

Preheat for approximately 10 minutes.When the griddle is preheated, the griddleindicator light will go out. The light willcycle on and off as the thermostat requiresmore heat to maintain the set temperature.This will allow heat to be evenly distributedand the griddle to maintain the settemperature.

The double griddle has two burners withseparate control knobs that act indepen-dently of each other. If only one griddle isbeing used, there will be some heat transferto the inactive griddle.

To turn the griddle off, turn the control knobclockwise to the position.

The steel griddle plate operates at 5.5 kW (336 g/h). It is thermostatically controlled,which means once the set temperature isreached, the heat cycles to hold that tempera-ture. To prevent food from sticking and toprotect the surface from moisture, it is neces-sary to season the griddle prior to use. Thisseasoning process as well as general use willchange the appearance of the griddle.

Clean the surface with hot water and a milddetergent. Rinse and dry.

The griddle needs to go through a ”burnin” period. Turn the griddle on at 175˚C for30 minutes to clean oils from the bottom ofthe griddle. After 30 minutes, turn thegriddle off and allow it to cool.

To season, pour 5 ml of peanut or vegetableoil per 279 mm griddle in the center; spreadevenly with a paper towel, avoiding thecorners. Be careful not to apply too muchoil. Excess oil will leave a gummy residuethat will have to be removed.

Push and turn the control knob to 175˚C.Heat until you see the first signs of smoke.Turn the griddle . When the griddle hascooled and is only slightly warm, wipe offany excess oil. Let the griddle coolcompletely.

Repeat with another teaspoon of oil. Thebrown appearance will darken with use.

Be particularly cautious when cooking

food high in fat. It can become hot

enough to ignite.

Using a metal spatula, scrape grease intothe grease collection tray.

When the surface has cooled, wipe it with apaper towel to remove excess grease or oil.

Scrape the griddle clean. Pour .1 L warmwater and 5 ml griddle cleaner onto thegriddle and scrape the grease into thegrease collection tray. Empty the greasecollection tray. Rinse the griddle with .1 Lwarm water and dry with paper towels.

Reapply a small amount of peanut orvegetable oil to the griddle with a cleancloth after each cleaning.

Clean the grease collection tray after eachuse. Do not allow grease to accumulate inthe tray and become a fire hazard.

To remove the grease collection tray, gentlypull the tray toward you to lift it out. Cleanthe tray with soapy water and a clean cloth.To replace, slide the short edge of thegrease collection tray under the edge of thegriddle and lower into the opening.

Occasionally remove the seasoning, cleanthe griddle thoroughly and reapply. Toremove, add either white vinegar and wateror club soda to a slightly warm surface.Scrub with a fine wire brush or a fine-gritgriddle brick. Repeat application if neces-sary. Be certain to apply a light coat of oilafter cleaning for seasoning.

FRENCH TOP

The 4.6 kW (286 g/h) French Top is an optionalfeature that provides a 559 mm cookingsurface with the hottest temperature under thecenter plate and the lowest temperature nearthe edges. This design makes it possible to useseveral pans at once for a variety of cookingtasks. For example, fry chicken toward thecenter, while simmering a sauce in one cornerand keeping vegetables warm in a differentcorner. Place the pan or pans toward the edgeaccording to their contents and quantity. Referto the illustrations below.

The cooking surface is made of polished castiron that is an excellent heat conductor. Theseveral rings allow for the solid surface toexpand with the heat while remaining flat. Therings also provide thermal breaks in the castiron that distribute the heat in a graduatedintensity, hottest in the center and coolestaround the edges.

To protect the cast iron surface from moisture,it is necessary to season the French Top priorto use. This seasoning process as well asgeneral use will change the appearance of theFrench Top.

Avoid using olive oil; it leaves a gummy residue.

It is normal for the cast iron to darken withuse to a bluish-black color.

When this seasoning technique is appliedcorrectly, the surface will be protected frommoisture. Its appearance darkens with use, a sign that the French Top has been fullytempered and is properly seasoned. Regularmaintenance will become easier.

To use the French Top, push and turn thecontrol knob counterclockwise until youhear the clicking sound of the igniterlighting the burner. When you hear theburner ignite, turn the knob clockwise to the

setting.

Preheat for 25 to 30 minutes before cookingon the French Top. This allows the solidcast iron plate to heat thoroughly.

To raise or lower the cooking heat, slide thepan either toward (higher heat) or awayfrom (lower heat) the center plate. Thisgives you total control over the mostdelicate sauces. It is not necessary to adjustthe flame height.

To turn the French Top off, turn the controlknob clockwise to the position.

It is best to maintain a seasoned surface toprotect the cast iron from moisture.

Clean entire surface after each use while itis slightly warm. Wipe the surface with amild detergent and water. Rinse and dry.

Maintain the French Top as you would acast iron skillet; keep it free from moisture.

Reapply a light coating of peanut orvegetable oil to the French Top after eachuse until a sheen develops.

Periodically, it may be necessary to strip theoil and stains from the plate. Apply a smallamount of white vinegar and water to thesurface while it is slightly warm. Repeatuntil excess oil has been removed.

The French Top burner is located below thecenter plate. The plate remains in placeduring cooking, but it can be lifted off tocheck or service the burner. Use the centerplate hook provided with your rangetop, asshown in the illustration below.

For best results, we recommend medium- toheavy-weight pans that have a flat base, metalhandle and a good-fitting cover.

Look for pans that are made of materials withgood heat conductivity, such as aluminum andcopper. These metals are sometimes found”sandwiched” between the inner and outerlayers of the pan. If present, whether visiblefrom the outside or not, they aid in evenlyconducting heat.

Use the following guidelines when selectingcookware for the rangetop:

Griddles or open roasters that span twoburners are suitable, providing they are notwarped.

When a large pan is centered over a burner,the diameter should not exceed 254 mm.

When using pans made of cast iron,enameled steel or glass ceramic, or coatedwith a nonstick finish, select lower flamesettings. High heat applied to such materi-als will cause ”hot spots,” scorching andburning.

Cover pans while cooking; covers improvecooking efficiency. Water boils faster, usingless fuel, and the kitchen stays cooler.

Select high-sided (deep) pans rather thanones with very wide bases and low sides.High sides will minimize liquids boilingover the pan.

Pans with oversized bases that extendbeyond the rangetop frame should not beused. On settings, heat may be trappedbeneath the pan, causing permanentdamage to the surface finish.

Use the front burners for larger pans. Thepans are easier to handle, especially whenhot.

Use a wok with a flat bottom.

General care: Cool first. Remove grate. Wash caps in warm water and liquiddetergent or mild abrasive cleaners. Foods high in acid or sugar content,such as milk, tomatoes, sauerkraut, fruit juices or pie filling, may pit or crazethe surface. Remove as soon as possible before heating again.

Remove from the rangetop and place on a flat surface near the sink to clean.

Nonabrasive cleaners: Hot water and liquid detergent, paste of baking sodaand water, plastic pad or sponge.

Mild abrasive and abrasive cleaners: Use sparingly.

To remove the knobs, pull the knobs forward off the valve stem (see page 13on nylon bearing).

General care: Wipe each knob with a damp cloth and mild soap and water;rinse and dry. Never soak in water or use abrasive cleaners; they will scratchthe finish and may remove the markings. Do not place in dishwasher.

Hand wash all decorative components of your rangetop. This includes theknobs, bezels, grates and burner caps. Do not clean any of these componentsin the dishwasher.

Keep dry; never spray water or cleaner directly on the igniter. When cleaningaround the surface burner, be careful that the cloth does not catch on theigniter and damage it.

Cleaning the classic stainless steel exterior

Wait until surfaces are cool before cleaning.

For best results, wipe up spills and spattersas they occur and immediately after therangetop has cooled. If splatters areallowed to cook on, they may permanentlydamage or stain the finish.

If in doubt about using one of yourcleaners, check the label. To check if it issafe to use on your range, try a smallamount on an inconspicuous area usingvery light pressure.

Use caution when spraying cleaners. Somecontain caustic ingredients that can damageadjacent parts and finishes. Protect theadjacent parts by masking them off so thatthe overspray is contained to the finishbeing cleaned.

Do not spray cleaners on electrical controls,igniters, wires or knob valve stems.
