The launch this year of the new Borders Distillery is a game changer for the region – the first local whisky distillery in almost 180 years. And other local drink producers, from the breweries to newcomers such as Leftfield Kombucha, are expanding rapidly too.

• Preheat the oven 200C/ gas 6.• Place the cumin, coriander, fennel,

mustard seeds in a dry pan and toast until they start to pop, and allow to cool.

• Meanwhile peel the garlic and ginger.• Once the spices are cool, place in a

blender and pulse until smooth. (I find having a small coffee grinder helpful for this job).

• Heat 3tbsp of the oil, add the turmeric and cook for a few minutes then add the ground spices.

• Grate the garlic and ginger, chop the coriander and the chilli, salt and place into the oil with the spices and continue to cook for a few minutes.

• Add the lemon juice and the remaining tbsp of oil.

• Remove the leaves from the cauliflower and the bulb at the bottom and cut it into four steaks about 15mm thick.

• Place a piece of greaseproof paper on a tray.

• Brush the steaks with the marinade and cover with foil and bake for 20min, remove from the oven and take off the foil, return to the oven to brown, stick a knife in to make sure they are cooked.

Enjoy with a roast chicken and a dollop of mint yogurt.

4tbsp rapeseed oil

1 packet fresh coriander

1 thumb fresh ginger

4 cloves crushed garlic

1 fresh chopped chilli

½ tsp cumin seeds

½ tsp coriander seeds

1 tsp mustard seeds

½ tsp fennel seeds

1 tsp ground turmeric

1 tsp onion seeds

1 juice lemon

1 tsp salt

LOCAL FOOD MOVEMENTS such as Tweedale Food community here in the Tweed Valley aim to connect food producers and food consumers, in order to develop more self-reliant and resilient food networks; improve local economies; and have a positive impact on the local environment. Here at Windlestraw we are proud locavores and every season we make a concerted effort to support local and reduce the distance from earth to plate. This season we intend not just to buy local but to grow local. We will put fork and back into readying the new kitchen garden for a season’s growth. Pending the garden harvest we will source our local organic vegetables this season from our friends at Whitmuir farm. Another new partner is the Thornielee cottage small holding less than ten minutes from our door which will supply our rare breed pork.

METHOD

• Sear Venison in a very hot pot

• Add Bacon. Onions and Herbs and continue on a high heat to caramelise

• Reduce heat to low, then add flour, stir until well combined

• De-glaze pot with Dark Horse

• Add stock, vegetables and juniper berries

• Cook on lowest heat for 3 or 4 hours, stirring occasionally

• Serve with toasted Sourdough

The Borders Distillery on Commercial Road in Hawick will open to visitors from the 1st May 2018 and details can be found on www.thebordersdistillery.com or enquiries can be made by calling 01450 374 330.

Visitors will be offered a tour of the Distillery and an opportunity to visit our shop. We have no parking on site but the town has an abundance of free parking within a short walk of our front door.

The site on Commercial Road was formerly the Urban Electric Company of Hawick which up until 1936 provided the town with recycled and generated electricity. In the latter half of the 20th Century the buildings were occupied by an engineering firm.

Today the buildings are listed and have been completely renovated using local firms and trades. The installation of the Distillery has revitalised the building and has been a big part of the Founders’ vision of what the return of whisky distilling can mean for the community.

3 chicken breasts

1 packet of filo pastry

1 leek, 10 chunks if frozen leeks

½ cup frozen sliced carrots

¾ cup or 200ml chicken stock, or a stock cube made up to 200ml

125ml or ½ cup double cream (can use milk for a healthier alternative)

3 tbsp plain flour

1 tbsp or ½oz butter

½ a tsp dried tarragon

Substitute a batch lady roux cube for the flour and butter if you have these in your freezer.

MEMBER RECIPE Chicken

METHODCook 4 chicken breasts wrapped in sliver foil in the oven until the chicken is cooked through. While the chicken is cooking, cook the carrots and leeks in a pan with a small amount of the butter, once all soft add the flour, stock, cream and the tarragon and stir. Next chop the chicken and add it to the pan.

READY FOR THE FREEZERPut the mixture in a large labelled freezer bag, flatten and seal so that it is airtight. Freeze your filo pastry beside the bag so you are ready to grab both when needed. (I buy already frozen pastry so it is always in the freezer, ready for a pie top to be created).

READY TO EATDefrost, pie filling and pastry, add pie filling to dish.

Next brush filo pasty sheets with warm butter or milk then crumple filo pastry on the top of the pie as if it was crumpled balls of paper.

Bake at 180 for around 25 minutes, checking that the top does not burn.

The Fillin Station is the next Phase for J M Co (Scotland) Ltd, already well established as The Juicy Meat Co, an outside caterer for hog roasts, weddings, corporate events etc. We continue the company’s ethos of providing local produce at reasonable prices.

Open daily from Monday to Saturday 7am to 2.30pm we offer take away breakfasts, hot & cold food, freshly made soups, pastries and handmade cakes/traybakes (there is limited seating).

We also do an evening take away every Friday, promoting our own farm produced meats, from 5pm to 8.30pm.
