Dear Teachers,Marlborough is a unique place in which aquaculture, viticulture, tourism and aviation all play a major role in the economy. This education kit has been put together by The New Zealand King Salmon Company, in consultation with Marlborough teachers, to help you, your students and their parents find out more about:

• New Zealand’s unique King salmon.

• The role the salmon farming industry plays in Marlborough.

• The benefits of salmon as a high value health food.

• The career opportunities that exist within aquaculture.

This resource is for students in Levels 1-5 (Years 1-10)

A variety of easy-to-use activities have been developed for you to use in the classroom with your students. Information, support material and answers are also provided. Some activities are suitable at more than one level so have been included in more than one section.

Activities can also be used from other sections based on the ability and knowledge of your students. The activities at the front of the resource start at Level 1 and move through to Level 5 towards the back. Note that most activities span more than one level.

There is no set order in which activities need to be completed. Simply choose the activities suitable to your class. Activities can be done as a whole class, in groups or individually. Each task has links with The New Zealand Curriculum, with the major focus on Science (specifically the Nature of Science learning area) and Social Studies. Each activity is also linked to one or more of the Key Competencies.

The New Zealand King Salmon CompanyThe New Zealand King Salmon Company has its head office in Nelson and aquaculture office in Picton. The company grows salmon at farms in the Marlborough Sounds. Salmon is sold by The New Zealand Salmon Company in New Zealand and around the world under the Regal, Southern Ocean and Ora King brands.

King salmon farming in MarlboroughKing salmon is a native of the northern Pacific Ocean and the largest of the Pacific King salmon family. Also called Chinook, it is the only salmon species farmed in New Zealand.

Heralded as the very best salmon in terms of taste, texture and nutritional profile, Marlborough’s King salmon is found in premium retail outlets and on the menus of fine-dining establishments around the world.

The New Zealand King Salmon Company is the world’s major supplier of King salmon, producing 50% of the world’s supply from just a few surface hectares in the Marlborough Sounds – at the top of New Zealand’s South Island.

Why King salmon is importantThe New Zealand Government has identified aquaculture, or fish and seafood farming, as a prime candidate to help New Zealand prosper through innovation and the sustainable production of great quality food.

The Government has set a target for New Zealand aquaculture, including King salmon farming, to be a billion dollar industry by 2025.

Not only is King salmon a healthy, high quality and high value export product, but King salmon farming in Marlborough also has an ‘economic multiplier’ effect. This means it creates work and income for employees, as well as suppliers; including engineering firms, scientists, water taxis, transport companies, professional services and retail outlets.

Sustainable and efficient seafoodAquaculture is one of the most sustainable and efficient ways possible to produce animal protein.

Salmon are highly efficient to farm because they are cold-blooded and virtually weightless in the water. They convert feed to weight extremely well.

King salmon farming in the Marlborough SoundsKing salmon farming in the Marlborough Sounds commenced in the early 1980s and has evolved over the years due to increased market demand; this in turn has driven the development of industry knowledge.

King salmon require cool, deep, clean water with strong currents. Working in harmony with the environment is not only essential to ensure we maintain our pristine environment, but also necessary to grow premium King salmon.

The farming process starts with eggs being collected and fertilised from adult broodstock, grown to smolt in freshwater and then transferred to sea pens at the time and stage when they would normally migrate out to sea in the wild. They are fed on a specially formulated, balanced diet for up to 18 months and are then harvested at around 4kg.

We have a unique environment in New Zealand where we can aim to farm salmon in the most natural way possible.

Important facts:• The New Zealand Salmon Company has achieved the world-leading Best Aquaculture

Practices (BAP) certification from the Global Aquaculture Alliance. This independent certification recognises the company’s high environmental standards and efforts to maintain environmental integrity.

• New Zealand marine-farmed King salmon has been rated “Green”, meaning it is a “Best Choice” for consumers by Monterey Bay Aquarium’s globally respected consumer guide Seafood Watch®. King salmon from New Zealand is the first and only ocean-farmed salmon to have achieved this rating.

• Salmon feed contains all of the essential nutrients required for a healthy diet. The feed carries Certificates of Analysis from registered laboratories, it is certified GMO and BSE-free, and all ingredients fully traceable. The feed consists of fish meal (sourced from sustainable fisheries), fish oil, animal protein and oil, vegetable protein meals, wheat/starch, and vitamins and minerals including the natural antioxidant Astaxanthin.

• 2% of the sea farm volume is occupied by King salmon and the other 98% is water.

• Both the water quality and the seabed are monitored by independent science providers to ensure quality water standards are fully maintained at all times.

• Left fallow, a King salmon farm can regenerate in as little as two years for a high-flow site up to 10 years for a low-flow site.

Life cycle gameUsing the King salmon life cycle poster and game cards, work together in groups to arrange the cards into the life cycle of a farmed King salmon using one of the activities below.

1. In order Using one set of cards for each of five groups:

• Hand a card out to each member of the group.

• Ask them to read their cards to themselves and be ready to tell their group what it is about.

HATCHERY• The life of King salmon farmed

by The New Zealand King Salmon Company starts in a fresh water hatchery.

• Eggs are collected and fertilised by adult King salmon. When the eggs hatch they are called alevin. They still have their yolk sac attached which they use as food.

• Once they have absorbed the yolk sac, they are called fry.

• When they are ready to move to net pens in the sea farms, they are called smolt. At this point they can live in either fresh water or salt

water.

NET PENS• The King salmon smolt is transferred

to the net pens on the sea farms in the Marlborough Sounds when they are large enough at around 100 grams. This is when they would naturally migrate down rivers and out to sea if they were wild King salmon.

• The Marlborough Sounds is ideal for growing high quality King salmon. King salmon need cool, deep, clear water with a good current and calm conditions.

• At the King salmon farms, King salmon are fed on a specially formulated, balanced diet until they reach the ideal weight of 4kg. This is usually when the

King salmon is 12-18 months of age.

HARVEST• Once the King salmon reach full size

of 4kg they are harvested. A barge is

specially set up to harvest the King

salmon in a low stress way. The King

salmon is then transported by tanker

to the factory for processing.

Make a stuffed King salmonThe King salmon is also known as the Chinook and the Pacific King Salmon. Its full scientific name is Oncorhynchus tshawytscha. Can you say that? Try on-core-hin-cuss ta-we-shore.

Using the posters in the kit and the photo sheet, look at the colours of the Pacific King Salmon. Describe what it looks like. What colours will you need to colour in your King salmon?

Take your 2 fish sheets and:

1. Colour in each King salmon.

2. Cut each King salmon out along the dotted line.

3. Staple inside the dotted line, leaving a small gap to stuff the King salmon.

4. Using screwed-up paper or other recycled filling like scrunched up material, stuff the King salmon, then staple the gap to close up.

RAISING HEALTHY SALMONSalmon ova (eggs) are hatched and raised in fresh water until ‘smoltification’, when the salmon are physically ready for the sea.

At sea, the salmon are fed on a specially formulated, balanced diet for about 16 months until they are ready for harvest at 4 kilograms.

The salmon must get all the necessary proteins, fats and carbohydrates as well essential vitamins and minerals to thrive and grow.

Feed contains fish meal, fish oil, chicken meal and oil, vegetable protein meal, wheat/starch,vitamins and minerals; this is a well-balanced specialised diet to achieve optimal health and growth.

IDEAL CONDITIONSSalmon need cool, deep, clear water with a good current and no major stressors.

2% of the sea pen volume is salmon and 98% is sea water which flows freely through the structures.

We can produce healthy salmon in a natural way with minimal handling.

ENVIRONMENTAL CAREDaily monitoring of oxygen levels, water temperature and salinity ensures conditions are right for the salmon.

Under-water cameras monitor feeding. When the salmon are full the feeder is switched off to avoid waste and to protect the sea floor.

Worms and micro-organisms that live under the pens eat and break down the waste.

The water column and the seabed is monitored by an independent science provider. Environmental standards must be met to comply with resource consents.

Creamy Pasta Bows with Regal Smoked Salmon, Honey and Baby Peas

Pasta bows or “farfalle” are pretty and easy for little hands to skewer with a fork, but any pasta shape will work for this dish, including spaghetti.

IngredientsApprox 500gms dried pasta bows (enough for 4- 6 people)

1 cup frozen baby peas1 tbsp runny honey1 tsp wholegrain mustardSqueeze of lemon juiceHandful of chopped parsley1/2 cup starchy water from cooking pasta1/3 cup “ lite” crème fraiche

MethodCook the pasta according to the packet directions then drain reserving½ cup of the starchy cooking water. Return the cooked pasta to the pan. Toss in the peas and the ¼ cup of the reserved pasta water and place over a gentle heat and stir, so the peas begin to cook.

Add the smoked salmon, honey, wholegrain mustard, parsley and lemon juice and mix. When the peas are piping hot fold in the crème fraiche and mix lightly so the pasta is dressed in the sauce, adding a splash more pasta water if necessary. Ensure the salmon is distributed throughout the dish and serve.

ProtectionSea-based net pens in New Zealand require a fence around the top to protect the King salmon from predators such as seals and birds.

ShelterShelter is important. Wind and waves can affect feeding even with the protection of net pen structures. Net movement during rough weather may also cause stress, as does the presence of predators like seals, sharks and dolphins.

Pens for NZKing salmon is the main fin fish farmed in New Zealand. The net pens used by The New Zealand King Salmon Company sea farms are chosen because they work for New Zealand conditions and are up to 40m wide. The net depth is around 18-20m deep and a re suspended from floatation pontoons.

Physical features of King salmonKing salmon are anadromous – they are born in fresh water, spend most of their life in sea water then migrate to fresh water again to spawn.

ColourThe colour of wild King salmon changes depending on whether they are in salt water or fresh water. At smolt stage they have a silvery coating which protects them from predators and also helps in the transition between fresh water and sea water.

Two special external features of King salmon are its scales and the lateral line.

ScalesUnlike many other fish, King salmon scales are very soft and almost part of the skin. Believe it or not scales can show growth rings just like trees, so we can tell how old a fish is by the number of rings.

Lateral lineThe lateral line on a King salmon is a line of cells which can detect pressure and also sense movement and objects in water.

King salmon have a streamlined body so they can move through water with ease and also up rivers.

NostrilsNostrils are used by King salmon just like ours to smell scent, to smell danger and recognise the scents from their birth place. This can help them work out their way home. We smell scent in the air but fish smell scents in the water.

GillsKing salmon need gills to absorb dissolved oxygen from the water. This enables them to breathe (instead of using lungs). They do this by opening their mouth and taking in water. This water then flows over the gills.

FinsThe caudal fin (tail) pushes from side to side is used for balance and helps to push through water. Female King salmon use the tail to dig a redd (nest) to lay their eggs.

Just along from the tail on top is the adipose fin, with no known purpose.

The dorsal fin is on the very top and acts like a keel on a ship to keep the King salmon upright. It also controls the direction the fish moves in.

Two pectoral fins are situated at the front on the bottom. The pelvic fins are underneath the dorsal fin. Both pectoral and pelvic fins are used for steering and balance, as well as helping the King salmon move up and down in the water.

The anal fin sits on the bottom near the tail and helps keep the fish stable and upright.

INTRODUCTION:The New Zealand King Salmon Company farms King salmon to produce a variety of products. This just doesn’t happen overnight, there is a long process involving the hatchery, sea farms, harvesting, and processing and packaging before it arrives on supermarket shelves.

Hatchery to plateIt is believed that the current global population of 7 billion people will be 9 billion by 2050. So there will be an increase in demand for protein.

Fish farming (aquaculture) is one of the most sustainable and efficient ways to produce animal protein on the planet. It offers a way to increase fish production and feed the world’s growing population without affecting wild stocks.

Globally, aquaculture now produces more food (protein/meat) for human consumption than wild-caught seafood or beef.

With its high Omega-3 content, farmed King salmon is an excellent source of protein.

A small space is needed for King salmon farming, compared to other types of farming ie dairy. In 2015, the New Zealand King Salmon Company produced around 6,000 metric tonnes of King salmon from about 5 surface hectares of sea space.

Sustainable King salmon farming

We need to ensure that our King salmon farming is sustainable and will be able to carry on for a long time.

We need to be mindful of protecting our wild fish populations and not upsetting the environment in which they grow.

70% of the King salmon gets eaten compared with approximately 50% of pork and chicken, and lamb at 38%.
