Lithuanian cold beetrot soup is a paradox of cuisine. Logically, it had to originate in hot countries, because it is made of fresh vegetables and sour drink which relieves thirst and reduces sweating, and it also refreshes. However, cold beetroot soup is traditional Eastern European cold soup.
