At Russo’s, we strive to recreate this phenomenon and foster the bonds between family and friends at each and every meal. Russo’s is about so much more than the food – it is the experience that keeps customers coming back. They come for warmth, conversation, and a sense of belonging. They feel a part of a tradition that is much bigger than any of us.

GenerATions in The mAkinG Traditions are passed down for a reason. They provide a means to honor and maintain bonds with our ancestors. In Chef Russo’s case, his family traditions play a role in every aspect of the business – the preparation of each authentic recipe, the welcoming warmth shown to each customer, the respect with which each employee is treated. It has all been passed down through generations so as never to be forgotten.

The son of first-generation Italian immigrants, Chef Anthony Russo grew up in a New Jersey home where the kitchen was the center of family life – the homemade food, the celebrations and the many fond memories.

One such memory found Anthony and his siblings helping his Grandma Carmagna with her fresh cream cannoli. To make the cannoli shells, the kids would roll the dough around a four-inch wooden broomstick and fry the shells. There was always cooking and baking at home. And many of the ingredients came from the family garden – Anthony’s parents grew everything from tomatoes, beans, squash, grapes and eggplant to fresh basil and romaine lettuce – just as his Grandpa and Nona Russo had done back in Avellino, Italy, in the 1930s.

These experiences would stick with young Anthony as he moved with his family to Galveston, Texas, in 1978. His father opened Russo’s Italian Restaurant, which quickly became a local favorite. It also quickly became apparent that Anthony had found a second home in the restaurant kitchen. By the age of 12, he was learning family recipes straight from relatives who would fly in from Naples and Sicily each summer. Making pizza and squachatta (calzones) turned from a pastime to a passion, and few things would bring as much joy as receiving shipments from Italy containing olive oil, spices, cheeses and meats.

our fAsT cAsuAl frAnchise concePTIn the 19th and 20th centuries, New York was the port of entry for hundreds of thousands of Italian immigrants. Some moved on to other cities, but many stayed and settled in New York City. One of the culinary capitals of the world, New York is known for Italian food and, particularly, pizza.

Our NY Pizzeria restaurant is reminiscent of some of the first authentic pizzerias that emerged from budding Italian neighborhoods in the 1800s. Everything was made from scratch with hand-picked ingredients, in traditional Italian style.

In 1992, the level of cuisine found at Anthony Russo’s first NY Pizzeria in Houston, Texas, was a quality that was alien to the Texas market.

Transplanted New Yorkers were thrilled to finally have a traditional pie right in their backyard. It didn’t take long until Russo’s was the rave of Houston – with stories about the Russo family, their traditions and the incredible fresh taste that differed from everyone else.

With a single bite, customers were hooked. We’re confident that you will be, too.

our uPscAle dininG frAnchise concePTThe warmth, the flavors, the wine, the family…it’s all part of the memories and traditions that began in Nona Russo’s kitchen in the quaint city of Avellino, Italy. You were welcomed with open arms and the aroma of fresh-baked bread. Farm-fresh cheese and home-cured prosciutto was abundant. Garden-fresh vegetables and herbs graced the homemade sauce and just-rolled pasta. The wine flowed freely as did the conversation. You couldn’t leave without two things: a happy belly and a satisfied soul.

This is the atmosphere and experience recreated inside every Russo’s Coal-Fired Italian Kitchen across the globe. We call it, “Sitting at Chef Russo’s Table.” It’s the ability to provide for your guests the opportunity to experience the joy, warmth, and magic created around the Italian table. 1 Prospective franchisee receives and reviews Russo’s franchise information packet and returns the completed confidential application to the Russo’s corporate office.

2 Pre-qualified prospective franchisee is invited to visit Russo’s corporate office.

3 Franchise Review Committee notifies candidate that they are approved or denied. If approved, they are invited to Discovery Day to take a tour of our concept.

4 A Franchise Agreement and UFOC are sent to the approved candidate to be reviewed, at which time, the prospective franchisee has 14 days in which to review all documents. After 14 days, the candidate then pays the franchise fee.

5 At this time, Russo’s will provide site guidelines and assist the approved franchisee in site selection.

6 Russo’s will work with an assigned architect in order to provide the franchisee with an initial store layout.

7 While the store is being constructed, franchisee will attend training and orientation at our corporate headquarters in Houston, Texas.

8 One week prior to opening, we will conduct a final inspection and ensure that the NEW FRANCHISEE AND TEAM ARE READY FOR SUCCESS!
