    Ripon Select Foods Ltd is an independent family business founded in 1974 by Mr & Mrs Thomas & Kathleen Wood at Ripon, North Yorkshire.

    Son, Martin and daughter Sarah became Joint Managing Directors in 2006, combining forty years of experience in the industry. They are the 6th generation of Flour Millers & Rusk manufacturers, their great-great-grandfather being the originator of Rusk manufacture circa 1902.

    The company has an 8 acre site at Ripon encompassing a Flour Mill, Rusk, Breadcrumb, Dry Mixing and Batter Factories as well as an Administration Block, Laboratories & Warehousing.

  • Products

    Rusk

    Rusk is a dried cereal ingredient that is microbiologically very clean, used primarily as a

    filler and binder in meat products. Circa the turn of the century it was first manufactured as a replacement for bread in sausages because the use of a raising agent rather than yeast provided a more stable finished product with a longer shelf life.

    Rusk is manufactured from wheat flour, salt and a raising agent by a traditionally slow process of baking, drying, gristing and blending to produce a consistently high quality product capable of absorbing twice its own weight of water without being soft and pasty.

    Breadcrumb

    Breadcrumb is manufactured from wheat flour, salt, yeast & either natural food dyes or spices (if required) to colour the crumb. Typical colourings used are Paprika, Turmeric & Annatto used either singularly or in combination as per the EC Colours Directive. Wholewheat & Organic flour is also used to

    manufacture a Wholewheat Crumb and an Organic crumb. Breadcrumb is manufactured in a variety of grists to suit individual customer requirements.

    Batter Mixes

    A full range of Adhesive & Tempura Batter Mixes are manufactured by Ripon Select Foods

    Ltd either as individual products, or as a system to suit the customers own requirements. A wide variety of ingredients are held on stock to produce the Batter Mix to suit each and every application.

  • Breaders

    Breaders are manufactured with, primarily, Breadcrumb as a base. Herbs, spices or flavourings and colourings are then added and mixed together to provide new exciting textures and flavours to suit any product capable of being coated.

    Predusts & Intercoaters

    A comprehensive range of Predusts and Intercoaters are available with a wide variety of base materials and in an even wider variety of flavours and textures from around the world.

    Stuffing Mixes

    Ripon Select Foods Ltd manufacture a comprehensive range of Stuffing Mixes for the

    manufacturer or for catering establishments. As well as a standard range, Stuffing Mixes can be tailored to suit the customers individual requirements.

    Rusk

    Uses for Rusk

    Rusk is manufactured in a variety of grist sizes.

    Extrafine Rusk is an ideal product for the manufacture of seasonings and flavours as its bland aroma, taste and high absorbency properties means it is an ideal carrier and unlike flour or starches it is slightly gritty providing easier mixing and blending.

  • Superfine Rusk is widely used as a carrier for flavours ,colours and seasonings but because of its larger particle size than Extrafine it is also highly suitable for use in beefburgers to help bind and absorb free water.

    Pinhead and Medium Rusk are the most popular grist size, widely used in the production of sausages, pies, other compound meat products and as an ingredient for dried stuffing mixes. The grade or blend used

    is dependent upon the speed of absorption required, the appearance and texture required of the finished product.

    Coarse Rusk is the largest grist size manufactured and is used primarily in speciality products for example Haggis as well as being a major constituent of dried stuffing mixes.

    Wholewheat Rusk is available in the following grist size: Medium Approximately 2 to 2.25 mm size pieces a pale brown colour with typical baked whole-wheat aroma.

    Extrafine 75% passes through a 0.250mm sieve.

    Superfine 95% passes through a 0.472mm sieve.

    Pinhead 95% passes through a 1.75mm sieve.

    Medium 95% passes through a 2.00mm sieve.

    Coarse 95% passes through a 3.50mm sieve.

    Rusk can be packed in either paper or plastic 25 kg sacks or in 500 kg, 750 kg, 1000 kg, IBC's.

    Palletisation is as per customer preference with the quantity per pallet to suit the customer stacked on either GKN Blue, Wood or Plastic Pallets.

    Breadcrumb

    Ripon Select Foods Limited manufacture breadcrumb using the finest ingredients.

    Breadcrumb is manufactured from wheat flour ,salt, yeast & either natural food dyes or spices (if required) to colour the crumb.   • Wholewheat Crumb and an Organic crumb. Breadcrumb is manufactured in a variety of grists to suit individual customer requirements. Currently the Company produces over 200 different combinations of grist, colour & packaging. Breadcrumb can also be lightly oiled to help prevent dusting.

    Breadcrumb is available in a variety of pack sizes from 5kg to 1000kg on either wood, plastic or GKN pallets.

    Litebite

    Recommended Cooking Method: Fry, grill or oven Texture: Light, crisp Typical Applications: Any coated product which is required to be ovenable.

    Samurai

    Recommended Cooking Method: Fry, grill or oven Texture: Very light, short, long lasting crispness

    Typical Applications: Luxury coated products which require superior ovenability. Cold finger food. Products requiring long fry time.

    Artois

    Recommended Cooking Method: Fry, grill or oven Texture: Ultra light, very short, long lasting crispness Typical Applications: Premium products requiring optimum ovenability.

    Batter Mixes

    A full range of Batter Mixes are manufactured by Ripon Select Foods Ltd either as individual products or as part of a complete system tailored to suit our customers requirements. We hold on stock a wide variety of specialist ingredients that allows us produce the Batter Mix to suit each and every application.

    Adhesive Batters have been carefully developed for coating Fish, Poultry, Meat and Vegetables and are suitable for Chilled and/or frozen applications. They have been developed for deep and

  • shallow Pan fry. They can also be Oven-baked or Grilled and are suitable for the BBQ. All adhesive batters are highly suitable for the QSR, Food Service and Retail sectors.

    Tempura Batters are specifically formulated for chilled and frozen application. Like adhesive batters they have been developed for deep and shallow Pan fry. They can also be Oven-baked or Grilled and

    are suitable for the BBQ. All adhesive batters are highly suitable for the QSR, Food Service and Retail sectors.

    A wide variety is available dependent upon the product to be coated, the type of line used and the texture required.

    Fish Frying Batters are dedicated to the Fish industry. Ripon Select Foods manufacture a variety from traditional 'fish and chip shop' batters for the smaller user to specialist coatings on an industrial scale.

  • Breaders

    Breaders are manufactured with primarily Breadcrumb as a base. Herbs, spices or flavourings and colourings are then added and mixed together to provide new exciting textures and flavours to suit any product capable of being coated.

    A wide range is available with herbs, spices and flavours from around the world. Ingredient blends are available that enhance the appearance and taste of a wide variety of meat products. Popular ranges include:

    Pre-dust

    Predusts are the base component of a coating system. They help prepare the substrate for building the coating system, helping adhesion by 'lock-and-key'.

    We have a wide variety of Predusts either off-the-shelf or tailored towards your taste, functionally or manufacturing needs.

    At Ripon Select Foods we have a pilot plant equipped with a Stein MB3 Mini-Batter and Breading Line, an FA3 continuous Fryer and a blast freezer and chillier. This small-scale setup permits very rapid changeovers between different products and allows for recipe modifications to be made on the spot.

    Rusk Plant

    Rusk is manufactured from wheat flour, salt and a raising agent by a traditionally slow process of baking,

    drying, gristing and blending to produce a consistently high quality product capable of absorbing twice its own weight of water without being soft and pasty.

    Although processing is traditional, manufacturing techniques have changed with much of the plant being automated and PLC controlled.

    Rusk is manufactured in a variety of grist sizes.

    Breadcrumb Plant

    Breadcrumb is manufactured from wheat flour, salt, yeast & food dye or spices if required to add colour. Typical colourings used are Paprika, Turmeric & Annatto used either singularly or in combination Wholewheat flour is also used to manufacture a Wholewheat Breadcrumb.

    Breadcrumb is manufactured in a variety of grists to suit individual customer requirements. Currently the Company produces over 200 different combinations of grist, colour & packaging. Breadcrumb can also be lightly oiled to help prevent dusting.

    Breadcrumb is manufactured by a process of mixing the ingredients into a dough, dividing the dough into manageable pieces, then moulding & proofing prior to baking. Once baked the loaves are then dried & shredded prior to being sieved & ground to the correct size before being packed.

    Blending & Mixing Plant

    All blending and mixing is by computerised batch control of ingredients and blending recipes. Our unique bar-code system provides full traceability from goods being received, through the Blending process and into the finished product.

    Products manufactured on our Blending plant include the following:

  • Batters

    A full range of Adhesive & Tempura batters are manufactured for a wide variety of applications. These are all tailor made on a dedicated Blending plant to individual customer requirements. They range from simple Adhesive Batters to complex Tempuras that may be seasoned if required.

    Breaders and Predusts

    Breaders and Predusts can be manufactured and supplied individually or as a system to work in combination. They can also be combined in a system with a unique Batter.

    Breaders are usually based on Breadcrumb and contain a mixture of spices and herbs or flavours to add visual excitement and enhanced eating experience to meat products. Production is by a careful blending process of quality approved raw materials.

    Predusts are the ideal intermediate coating to provide unique flavouring to meat products before being coated with Breadcrumb or a Breader.

    Stuffing Mixes

    A comprehensive range of stuffing mixes are made on site. These are primarily based on the Breadcrumb and Rusk. Manufacture is by careful blending and mixing of a variety of carefully sourced ingredients to produce a consistent finished product.

    Warehouse

    Ripon Select Foods Ltd distribution operates from its own 90,000 sq.ft. warehouse.

    Stock control is fully computerised with each pallet having its own unique bar-code and number, allowing for full traceability of all product manufactured or purchased. With the use of hand held scanners and touch screens stock is completely 'real-time'. This allows for fast responses to customer orders and queries.

    Stock levels can be tailor-made to suit customers 'Just -in-Time' systems; over 800 different products are held in stock at any one time.

    Ripon Select Foods Ltd and its staff take pride in its 'can do' attitude to customers and always strive to ensure that the customer is fully satisfied.

  • Packaging

    All products are packed in plastic sacks from 5 kilos to 25 kilos and in polypropylene IBCs for semi bulk applications up to 1000 kilos. Palletisation is as per customer preference with the quantity per pallet to suit the customer stacked on either GKN Blue, Wood or Plastic Pallets. All pallets are protected by a Stretched Plastic Hood or by Stretch Wrap and a loose cover.

    Distribution

    Ripon Select Foods Ltd distribution operates from its own 90,000 sq.ft. warehouse with its own fleet of lorries across the UK, delivering either full loads or on a 'multi-drop' basis.

    A range of heavy goods vehicles are operated from six wheel rigids with close-coupled trailers to six axle tractor units and semi-trailers.

    The service offered is second to none and much pride is taken in our ability to react promptly to customers requirements. Deliveries outside the UK are made by approved hauliers only, or, by container.

  • Raw Materials

    The quality of our products starts prior to production with the purchase of quality ingredients to an agreed specification from approved suppliers. All ingredients are covered by certification of conformance or analysis and are subject to random testing.

    Wheat is sourced from FABBL assured farms and is supplied with a "passport" that includes a Post-Harvest Pesticides Declaration and a Vehicle Inspection Certificate. All ingredients are issued a unique bar-code to enable full traceability from receipt through manufacturing to despatch.

    Finished Product Testing

    Products are subjected to quality checks during manufacture but the majority of testing is carried out on the finished product, each having its own specification to which it must comply. Product

    safety & quality is monitored by carrying out analysis on randomly selected samples; including microbiological & pesticide analysis.

    Quality Assurance is provided through the implementation of strict processes and procedures ensuring the highest levels of food safety and quality are achieved.
