aloha Mai!I’m so proud to welcome you to Royal Hawaiian Center, the centerpiece of WaikĪkĪ along world-famous Kalākaua Avenue. Our center offers the very best in shopping, dining, entertainment and Hawaiian programming.
Start in Building A at Fendi and P.F. Chang’s, and check out four levels of great shops and restaurants. Then, head towards Diamond Head to Building B, the second of three buildings in our 310,000 sq. ft., four-level center. Here, you can board the WaikĪkĪ Trolley, which stops near the ABC Store.
At Level 4 of Building B is the state-of-the-art Royal Hawaiian Theater, home to “Rock-A-Hula.” On Level 2 is the Pā‘ina Lānai Food Court offering a variety of ‘ono (delicious) food and ice-cold beverages.
Enjoy the ground level atrium lush with palapalai ferns, and the stately Akee tree where

Royal Hawaiian Center is located along a three-block stretch of Kalākaua Avenue, fronting the Sheraton Waikīkī and Royal Hawaiian Hotels, between Fendi and �e Cheesecake Factory.

three hours. After four hours, standard rates apply. To enter the ten-level Royal Hawaiian Center parking garage: From Kalākaua, turn right on Royal Hawaiian Avenue and take the next right into the garage.

unlike any other shopping center in Hawai‘i. Strolling in either direction on the makai (seaward) side of Kalākaua Avenue at the intersection of Seaside Avenue, flagstone walkways will whisk you into nearly half an acre of beauty that transcends time. Fountains of “waikĪkĪ” or spouting water welcome you into Helumoa with cooling waters reminiscent of the ancient ‘Āpuakēhau stream that prior to the 1928 Ala Wai Canal flowed freely from the verdant Ko‘olau mountain range into Māmala Bay.
The centerpiece of the Grove is an elegant bronze statue of Ke Ali‘i Bernice Pauahi Pākī Bishop, a remark-able Hawaiian woman of great vision and integrity. Today, Royal Hawaiian Center honors her legacy by generating revenues that support Kamehameha Schools, the land owner, which continues its noble mission of educating the children of Hawai‘i.
Located in the Grove, Helumoa Hale Guest Services and Heritage Room is a state-of-the-art facility where hosts greet you with warm hospitality. Enjoy short films on an array of Hawaiian topics created especially for Royal Hawaiian Center guests, and two critically acclaimed music videos produced by Kamehameha Schools Publishing. Project Kuleana showcases two mele or songs that speak to the core of Hawai‘i’s indigenous population: “Kaulana Nā Pua” composed in 1893 after the overthrow of the Hawaiian Kingdom and, a more contemporary anthem, “Hawai‘i Loa Kū Like Kākou.”

Once lined with shops, the lush Royal Grove is now an oasis that has helped transform the Royal Hawaiian Center into more of a
welcoming gathering venue where visitors and locals can shop while also learn about the area’s rich cultural and historical significance.
“When the Royal Grove opened seven years ago, it allowed kama‘āina and malahini to come together,” says Rosalind Schurgin, CEO of The Festival Companies, which manages Royal Hawaiian Center for RHC Prop-erty Holdings, LLC. “We’re committed to the holistic experience; (the center) balances retail with Hawaiian culture and hospitality.”

Holiday Hours
While most major shopping cen-ters will close during the holidays, the Royal Hawaiian Center remains open, from 10 a.m. to 10 p.m., all year around, including on Christmas Eve and Day, and New Years Eve and Day. And on Jan. 1, 2015, the Cen-ter will kick off the new year with a Fukubukuro promotion. The annual event is a Japanese tradition, and offers shoppers the chance to receive massive discounts on “lucky bags,” which are sold for half of their retail value. Kui is the lei-making style where flowers are strung using a mānai or lei needle. Flowers commonly used in this method are plumeria, pua kenikeni, pīkake, ‘ilima, pakalana, tuberose and many others.

aomi Braine remembers when her late grand-mother, “Aunty Bella,” would sew lei for Waikīkī tourists. Today, the younger Braine teaches them how to string their own tradi-
tional garland of flowers at the Royal Hawaiian Center. A third-generation lei-maker, the Honolulu native explains that there are many styles of lei and each one is special in its own right.
“I want to teach everyone in the next generation how to make lei,” says Braine, who started offering lei-making classes a year after the Royal Hawaiian Center opened in 1979. “It’s part of Hawaiian culture and an important part of my heritage.”
With 25 participants seated, Braine and fellow Japanese-speaking instructor, Miyoko Kimitsuka, begin by placing a basket of orchid, lantern ilima and tuberose petals in front of each student. Seated across from me, Aya and Momi immediately picked at the petals, bringing each one closer to their noses.
“Beautiful,” beams Aya as she inhales the fragrance of the tuberose. “I took this class because I want to learn more about Hawaiian culture.”
Indeed this seemed to be the motive for fellow students, who consisted of a mixed group of Japanese, Canadian, German and Indian nationals. We laughed and

giggled as we pierced our petals with a 12-inch needle. Demonstrating the correct method of stringing flowers, Braine and Miyoko explain that lei-making is an art form, and requires patience and a steady hand.
This is no good, Miyoko tells me after I threaded my first six petals. “I showed you where to poke the needle,” she gently chides, as Aya and Momi cover their mouths and laugh at my mistake. “The orchid can’t spin; it has to sit firmly on the needle.”
After a few more attempts, Miyoko congratulates me and quips, “Now you’re a lei-maker.”
Recognized as a “Master of Traditional Arts” by the National Endowment for the Arts and a native Hawaiian “Living Treasure” by the Smithsonian Institute, Marie McDonald is Hawai‘i’s best known practitioner of the art
of lei-making. In her 1978 seminal book, “Ka Lei —The Leis of Hawaii,” she writes that countless generations have honored life passages large and small with blossoms strung in endless ways — “not to mark just the joyous and happy moments, but also those filled with sadness and grief, nostal-gia, accomplishment and pride.”
“The lei is an expression of love, affection, honor and respect,” says McDonald during an interview with National Endowment for the Arts. “It’s the most beautiful thing I can make,
from the most beautiful material at hand. As long as the lei is at its peak when I give it to you, it shows that I care.”
Free lei-making classes are held Monday-Saturday at 1 p.m. on Level 1 of Building A. Flowers, lei needles and cotton thread are provided. Arrive early as space is limited to 25 students.

‘Ōlelo Hawai‘i is the indigenouslanguage of Hawai‘i. M eaning “brave” or “bold,” in Hawaiian, koa derives from the acacia tree,
grown naturally only in the Islands. In ancient Hawai‘i, koa wood was sculpted into images of gods or carved into canoes for ali‘i (royalty).
Because of its resiliency, this en-demic wood was also used to create weapons, paddles and surfboards. Ancient Hawaiians believed each individual tree possessed a sacred mana, energy; so selecting a tree for use, especially when preparing to build a canoe, was a great spiritual undertaking.
Today, artisans craft the rare wood into elegant works of art. From fine furniture to ‘ukuleles and guitars to bowls and pens, koa wood remains a symbol of warmth and prestige.

Chinese ingredients and you’ll only fi nd cleavers in our kitchens. Everything is absolutely Chinese … except for the peoples’ mouths eating our food.”
To be sure, diners can now experience P.F. Chang’s in such countries as Mexico, Brazil, Argentina, Canada, United Arab Emirates and in the Philippines. Locally, the restaurant has a single Waikīkī location, which marks its sixth year at the Royal Hawaiian Center. As an operating partner and one of the key fi gures to help open the Waīkikī restaurant, Ed “Eki” Locke experienced his fi rst
taste of P.F. Chang’s in Dallas, Texas. While working at another restaurant, Locke would
frequent P.F. Chang’s at least twice a week, always order-ing the same dish — Mongolian beef with white rice. “One day one of the employees said to me if you like P.F. Chang’s so much why don’t you just come work with us,” Locke recalls. “� e light bulb went on so I called a friend who worked at P.F. Chang’s and he got me an interview. I was hired and now I tell people that Mongolian beef got me here.”

… with an “i.” And when the two friends opened the fi rst P.F. Chang’s in July 1993 in Scotts-dale, Ariz., little did they know that the concept would explode with now more than 200 loca-tions worldwide.
� e idea was simple: Intro-duce Chinese cuisine with an American-style sensibility. It was a paradigm shift aimed to recon-ceptualize the mainstream image of this type of ethnic restaurant. And while critics initially questioned the “authenticity” of the food, Chiang dismissed the naysayers, defending that the menu he developed was based on his mom’s popular Mandarin restaurant in Beverly Hills, Calif., and his own Chinese-style bistro in Los Angeles, Mandarette, where he met Fleming, a frequent visitor.
“You couldn’t get more Chinese than both those res-taurants so I get a little defensive,” asserts Chiang, during a phone interview from his home in California. “Everything we do is typically Chinese; we cook with woks, we use

Romaine Lettuce Wraps (Serves 4)
Ingredients1 pound of chicken, diced into tiny pieces
3 tablespoons fresh ginger, minced
1 tablespoon garlic, minced
1/2 teaspoon dried chili flakes
3 tablespoons soy bean or vegetable oil
2 heads of romaine lettuce, cleaned
1/2 cup fresh orange juice
1 tablespoon fresh lime juice
1 tablespoon fresh lemon juice
1/4 cup soy sauce
1 tablespoon hoisin sauce
1 ounce scallions, thinly sliced
2 tablespoons soy sauce
Directions1. Place the chicken in a mixing bowl and add 2 tablespoons soy bean oil, ginger, garlic, chili flakes and 2 tablespoons of soy sauce. Mix well and marinate in refrigerator for 2-4 hours.
2. Whisk together citrus juices, soy and hoisin sauce. Reserve until needed. Clean the romaine lettuce, chopping off the stem, peeling each leaf. Refrigerate until ready to use. Chop scallions into rings and chill.
3. Lightly coat a hot sauté pan with soy bean oil. Evenly spred the chicken and sear until crispy and golden brown, about 2 ½ minutes. Once chicken is brown, toss gently in pan and sear another 2 ½ minutes to caramelize.
4. Add ½ of the citrus soy mixture to the sauté pan and coat well. Let the sauce coat the chicken until it is glazed, and thickens on the meat. Add more or less depending on how “wet” you want your mixture. Spoon chicken onto a plate. Wrap the chicken mixture in romaine lettuce and top with scallion rings. Serve and enjoy.

others are drawn to the vegetarian lettuce wraps. of-fering a little northern and Southern flair, these wraps are addictive and will even appeal to the meat-and-potatoes-type eater. chunks of wok-seared tofu are melded with red onions, water chestnuts, mint and lime then folded into a crisp, cool leaf of lettuce. They’re accompanied by a dipping station, comprised of bottles of shoyu, vinegar and chili oil, as well as little ramekins of chili sauce, a soy-based dipping sauce and, of course, the ubiquitous chinese staple of hot mustard.
a cursory review of the menu reveals a laundry list of popular chinese dishes, ranging from wonton and hot-and-sour soups, to Sichuan beef and spicy kung pao chicken, to fried rice and dan dan noodles. and if you’re gluten sensitive, P. F. chang’s is one of only a few restau-rant chains that offer a dedicated menu to diners who must adhere to a strict gluten-free diet.
“we’re an asian Bistro that offers a taste of the cuisines of the various regions in china,” locke asserts. “chiang selected the best recipes he thought represented the various regions and combined them in one menu. So we’ve got Sichuan, Singapore, Hunan and cantonese dishes. and we’ve also added some local flavors and soon we’ll intro-duce some specialty sushi rolls.”
The evolution of P.F. chang’s continues worldwide but its story began with two businessmen who started a res-taurant concept on a simple handshake. “Paul is no longer with the company and my role has certainly changed since we first opened,” chiang says. “nowadays, i’m more like the colonel Sanders or Fu Manchu promotional figure head. i’ve become P.F. chiang’s culinary, cultural and good-will ambassador.”

‘Tis the Season A mini Bubbly 101:• Champagne is only produced in the region of the same name, located in France. Spain has its Cava, while Italy is known for Prosecco—these all collectively fall under the umbrella of sparkling wines. While sparkling wines and Champagnes are far from being created equal, there are many of quality to be had that are also easy on the wallet.
• Most Champagne is branded ‘non-vintage’ versus ‘vin-tage’. Non-vintage champagnes are meticulously blended, ensuring consistency in signature taste profiles deter-mined by individual Champagne houses, while vintage Champagnes are produced during years deemed to be of exceptional quality.

While I’m a purist at heart, offering a Champagne cocktail option can add another special element while offering something a little different. With cock-tails, you needn’t go with Champagne, as a quality, less pricey sparkling wine can be used in its place. Serve before dinner along with canapés or other finger foods. It’s the ideal way to allow merriment to ensue.

ice cubes2 ozs. gin2 tbsps. lemon juice1 tbsp. simple syrup *4 ozs. chilled Champagne or sparkling wineFresh raspberries
Fill cocktail shaker with ice. Add gin, lemon juice and simple syrup; shake well to blend. Strain into champagne glass; top with champagne. Garnish with raspberries.
* To make simple syrup, in small sauce-pan, bring equal parts sugar and water to a boil, stirring until sugar is dissolved. Let cool; refrigerate for up to one week.

“it’s a big production and it definitely has that wow factor,” Brigner says. “we knew when we decided to enter the Hawai‘i market, it had to be a different show from any legends in concert. This is completely written differently and it’s the best production
we’ve ever staged.”Polynesian-themed performances are interspersed
throughout the show, including acts by world champion fire-knife dancer Hale Motu‘apuaka and 15 dancers who provide constant rhythm and movement. The show ends on a high note when the entire cast gathers on stage to sing “we are the world.”
tickets start at $65 for the “legendary cocktail” pack-age, which includes a cocktail and meet-and-greet with the show’s stars. For an additional $35, the “terrace luau” option offers premier seating, as well as an all-you-can-eat buffet. Surf and Turf from shrimp to steak
once a maintenance worker with a Japanese railway company, Makoto
Kinoshita decided to switch career tracks and move to Hawai‘i to open Champion’s Steak & Seafood at the Royal Hawaiian center’s Pā’ina lānai Food court. That was two years and four months ago exactly, recalls the 49-year-old restaurateur.
“i love Hawai‘i and i love to eat steaks,” Kinoshita smiles. “i had no restaurant experience but i hired a Japanese chef to show me how to develop the flavors.”
in the past decade, Hawai‘i’s dining scene has seen a proliferation of fast-food restaurants offering steak plates. But unlike those other places, where the beef is sliced into pieces, the new york striploin at champi-on’s is served whole. tender and lean the 8-ounce cut is well seasoned and prepared to an ideal medium-rare temperature. a side salad and two scoops of rice turn this into a hearty lunch or dinner. other menu items include shrimp, fish and chicken.
“i created the menu because i know Japanese visitors love to eat steaks,” Kinoshita says. “even myself when i used to come here on vaca-tion i would always look for places that serve steak.”

LOCATIONRoyal Hawaiian Center is located along a three-block stretch of Kalākaua Avenue, fronting the Sheraton Waikīkī and Royal Hawai-ian Hotels, between Fendi and � e Cheesecake Factory.
PARKINGA minimum purchase of $10 is required. First hour is free with valida-
tion. Second and third hours cost $2 per hour. Fourth hour and every hour thereafter is $2 for every 20 minutes. No combinations. To enter the 10-level garage: From Kalākaua, turn right on Royal Hawaiian Avenue and take the next right up the steep ramp into the garage.
HOURSEnjoy convenient shopping and din-ing, 10 a.m. to 10 p.m. or later, 365 days a year. Restaurant hours may vary.
