1 Riverside City College Spring 2014 Editor: Rebecca Faircloth EOPS is Student Success Happy Spring Everyone! It is amazing how time flies and that we are already in March. For EOPS, this semester is going to be about student success. This spring is very exciting for EOPS. Why you might ask? Because the last time RCC EOPS accepted spring applications was in Fall 2011. We stopped accepting spring applications because of budget cuts, but EOPS received some new funding so we opened up the application process in November and now we have a larger EOPS family. Welcome new students! Now on to more EOPS updates. EOPS is probably one of the most comprehensive programs on campus and in the state. The program offers book assistance, counseling, workshops, priority registration, orientations, paid face-to-face and on-line tutoring, educational supplies, and, most importantly, a supportive EOPS family. Our goal is to make you successful and reach your academic goal. To do that we ask you to meet with a counselor three times each semester, turn in progress reports, attend a workshop, and avoid progress and academic probation. If for some reason you are on academic or progress probation, then you have additional mandated requirements. Those are: one additional counseling appointment, attendance at two EOPS student success workshops, and attend at least six sessions of tutoring by the end of the semester. Students who do not meet their mandated requirements run the risk of losing EOPS privileges/services. Currently EOPS offers you the unique privilege to register early. However, the state has enacted regulations that will hold all EOPS students accountable to academic success to receive the EOPS priority privilege. Academic success means that you are not on any kind of college probation/dismissal. Beginning Fall 2014 to receive priority you must: be in good standing with the College by the end of Spring 2014 not be on academic or progress probation/dismissal not have completed over 100 units. EOPS must adhere to the new mandate and will be reviewing every student file before priority dates are assigned. EOPS is Student SuccessHappy Spring Everyone! It is amazing how time flies and that we are already in March.

For EOPS, this semester is going to be about student success. This spring is very exciting for EOPS. Why you might ask? Because the last time RCC

Our goal is to make you successful and reach your academic goal. Student SpotlightCongratulations to Sara Warren!

Ms. Sarah Warren proudly wore her RCC EOPS Alumni sash as she walked in the commencement ceremony this past June receiving her associate degree. Sarah managed to overcome the difficult challenges of being in foster care and we are thrilled to announce she has been accepted and will be attending the University of California, Berkeley.

Her reasons to attend college are deeply personal. While she was in the foster system she was moved from one family to another. A close relationship was never fostered with her assigned families and she could only talk to her relatives over the phone for 20 minutes a few nights a week. She doesn’t want her family, whether it be her younger siblings or her own children, to ever go through that—the loneliness and having no sense of a real home. She knew that if she got a college education she could be a better provider for her family.

She thanked EOPS for supplying her with the extra support and services that she needed to get through the rigors of college: priority registration, workshops, and a caring counselor and staff that guided her and believed in her ability to succeed.

We are so proud of Sarah and we know that Oski, Berkeley’s mascot, will welcome her with open arms!

Celebrating Success! 2013 EOPS Graduation and Transfer Recognition Ceremony

On May 30th, the EOPS program hosted its annual Recognition Luncheon to honor students who met their educational goal. The EOPS students who were honored received the following awards: 31 associate degrees, 5 certificates, and 22 students were transferring to four-year universities.

The special guest speaker for the event was Lupe Delgadillo, alumna to the RCC EOPS program, matriculation specialist at RCC, and a current student at CSU, San Bernardino. Lupe spoke of her experiences at Riverside City College and shared with us her challenges of being the first of nine children to attend and graduate from college. Lupe is now attending CSUSB to obtain her master’s degree in Educational Counseling and Guidance and thanks EOPS for the support and services that helped get her through her early years of college. What an inspiration to all of our students.

Welcome Dr. Casey OrrThis semester we were fortunate enough to have been able to hire a full-time counselor to

assist our students with academic, personal, and career counseling. Many of our students may have already met Dr. Orr at our orientations or may have already had a counseling appointment with her. We are delighted to have her join our team for the Spring 2014 semester. Dr. Casey Orr has been working as a faculty member (counselor/instructor) and administrator within community colleges since 2006. She joined the Riverside Community College District in early 2009 and has counseled at both Moreno Valley College and Riverside City College. She has worked in General, EOPS/CARE, Jump Start, and SSS/TRiO Counseling in addition to teaching Guidance and Sociology courses at Mt. San Jacinto College. Dr. Orr is extremely passionate about the immense opportunities community colleges offer and is a first-generation college student and proud community college alumnus herself.

Top Ten Ways to be the Best Single Parent by Shellee Moore, M.F.T. (www.DivorceWizards.com) 1. ATTITUDE ADJUSTMENT Start with a positive attitude and focus on the benefits

of single parenting, such as less conflict and tension in the home.

2. YOU ARE THE BOSS Establish firm, clear boundaries that leave no doubt that

you are the boss in the home. Single parents (and two parent households) often make the mistake of allowing children to become equal partners or peers, and too many children are running the show. This leads to serious individual and family problems. Children need limits. Use consistent discipline that provides clear expectations and guidelines for behavior and rely on natural and logical consequences.

3. DEAL WITH OVERLOAD The single parent frequently feels overwhelmed by the

responsibility, tasks, and emotional overload associated with raising children alone. Assign children appropriate chores and tasks. Arrange carpools when possible, and ask other parents for help when needed.

4. RECOGNIZE THAT YOU ARE ONE PERSON AND YOU ARE DOING THE BEST YOU CAN.

No matter how loving and competent you are, you are still only one person and you are doing a job most agree is meant for two people. Give yourself credit for a job well done.

5. CREATE A STABLE, NURTURING HOME Nurturing is a high priority, but children also crave stability and security. While this is important for all children, it is especially crucial for children

who have suffered a loss of stability due to divorce or death of a parent. Children need to feel secure and protected, and it is our job as parents to create a nurturing environment where they can thrive. Your children need to hear how much you love them and how proud you are. Some children may require more affection and attention than others, so know your child, and take your cue from him/her.

6. ESTABLISH SCHEDULES AND PREDICTABLE ROUTINES

Part of creating stability and security in the home involves establishing predictable schedules and routines for your children.

7. TAKE CARE OF YOURSELF It is critical for your children’s wellbeing for you to take

care of yourself. There are times when you feel like you need a break. Pay special attention to diet, exercise, stress management, and getting a good night’s sleep. A stressed out parent results in stressed out kids.

8. DEVELOP A RELIABLE SUPPORT SYSTEM Develop a wide network of people who can provide

you with emotional support, companionship, help in emergencies, childcare, reality checks, etc. Be selective and choose caring, reliable, trustworthy people who will be there for you in times of need.

9. DO NOT TREAT YOUR CHILD AS A PEER Do not confide in your child as though he/she is your

peer, regardless of how mature the child appears to be. Allow children to be children, and find other adults for companionship and support.

10. HAVE REALISTIC EXPECTATIONS Focus on success and not on failure. Decide what is

important and prioritize accordingly. Have family meetings on a regular basis and allow children to have input. Give your kids credit and give yourself credit.

2013 CARE Recognition Ceremony

On a beautiful spring day in May, CARE students from the Moreno Valley, Norco, and Riverside City colleges were celebrated for their perseverance and academic achievements. The EOPS/CARE Programs from each college joined together to host an afternoon that included an elegant lunch, awards, an inspiring speaker, and some wonderful giveaways. The springtime event was held in the beautiful courtyard of the RCCD Alumni House.

The keynote speaker for the ceremony was Dr. Keyisha Holmes, mother, mentor, assistant principal, educational leader, and teaching faculty at the University of Redlands. Dr. Holmes shared her stories of personal challenges both past and present and emphasized the importance of perseverance. She encouraged everyone to strive for resiliency and hard work while always valuing humanity over personal aggrandizement.

Awards were given to those CARE students who were receiving an associate degree or certificate. Riverside City College students Sharon Davis and Erika Shelton were recognized for graduating with associate degrees, and

Salwa Ghaddar and Courtney Miller were recognized for graduating with certificates. A most celebrated presentation at the event was the recognition of the Students of Distinction from each college. Riverside City College was proud to present Jill Flores with this honorable award. Jill was celebrated for her ability to persist through the rigors of college while facing a most personal challenge. Jill was not sure if she would be able to remain in school while her daughter fought leukemia for 2+ years but her daughter has been her constant strength and motivating factor. After her daughter’s battle for life, Jill knew she wanted to pursue a career in cancer research. She looks forward to graduate school and dedicating her life to help the fight against cancer.

Donated prizes were also given away during the event making this a fun filled day. Many students left with prizes and Veronica Lara from Riverside City College was the lucky recipient of two tickets to Disneyland. We look forward to having another memorable event next year!

Easy Pineapple Angel Food CakeIngredients:1 package Angel Food Cake Mix1 20 ounce can of crushed pineappleCool Whip

Directions:Combine Angel Food Cake Mix and crushed pineapple in a mixing bowl by hand. Mix thoroughly so everything is combined. Pour into a 13” x 9” baking pan. Bake for 30 minutes at 350 degrees. Keep an eye out for cake mix and pineapple coupons to help save on the cost of this recipe.

Something to EatQuinoa Chicken “Fried Rice” 4 cups cooked quinoa*4-5 small mushrooms1 small onion1 medium carrot1 cup frozen peas2-3 cloves garlic1 cooked chicken breast2 TBS low sodium soy sauce, divided1 TBS teriyaki sauce2 large eggsOlive oil

* I cooked my quinoa in chicken broth. It absorbs the flavor and makes your dish that much tastier. Also, make sure you don’t overcook the quinoa; if it is too soft, it will be hard to incorporate into the dish without liberal use of oil and you’ll end up with a sticky glob for dinner.

Dice all the vegetables and chicken to pea-size. Heat a skillet or wok over medium heat and add a drizzle of olive oil (enough to coat the bottom of the skillet). Sauté the onions, carrots, garlic and mushrooms until tender, but not mushy (2-3 minutes).Add the chicken, peas, and half of the soy sauce, stir to coat and cook 1-2 more minutes. Add the quinoa to the pan, one cup at a time. Once the quinoa is completely incorporated, push the mixture to the sides of the pan to create a little hole in the middle of the wok or skillet.Add more olive oil into the hole, and crack eggs directly into the center. Immediately start to scramble the eggs. When the eggs are still runny, but already have some cooked pieces, start to mix the eggs into the quinoa.Add the remaining TBS of soy sauce and mix completely. Enjoy!

How to Make No-Cook Overnight Oats Without a Recipe

Here at Food52, we love recipes — but do we always use them? Of course not. Because once you realize you don’t always need a recipe, you’ll make your favorite dishes a lot more often.

Multi-tasking always seems like a better idea than it is. It’s just an innocent, time-saving technique until one day, as you’re texting, listening to music, and writing an essay at the same time, you end up texting your mom about how annoying your mom is. Whoops!

And when it comes to cooking and baking, some of the most egregious offenses occur when you don’t give a recipe the attention it deserves (in my house: sugarless rice pudding is, unfortunately, a true story).

Luckily, there is a way to cook and sleep at the same time. That might be a bit of an exaggeration, but it is true that you can cook your oatmeal overnight in the refrigerator with no actual cooking — and no actual recipe — required. This hands-off oatmeal is an endlessly customizable grab-and-go breakfast that will be waiting for you when you wake up.

1. The only ratio you need to remember is 1:1. You’ll soak 1 part rolled oats with 1 part liquid overnight. Use less liquid if you want thicker oatmeal, more if you like it runny. You can use water or any type of milk — almond milk, soy milk, coconut milk — and feel free to add a splash of cream, half and half, or even orange juice.

2. Sweeten and flavor the oatmeal with whatever appeals to you: honey, agave, jam, maple syrup, cinnamon, vanilla extract, citrus zest … the list goes on. Then get creative: Add nuts, dried fruit, shredded coconut, seeds (chia, flax, sunflower, pumpkin), fruit, jam, or even nut butter.

3. Give it a stir, pack it into a jar, then let the jar sit overnight in the refrigerator.

4. In the morning, top with fresh ingredients — fruits, granola, honey, a dollop of peanut butter — or simply take the whole jar for the road.

HIT!Leadership Conference is a HIT! On March 29th over 200 local students came out to Riverside City College to develop their leadership skills and

participate in a wide array of forums, workshops and more. The 2014 Southern Regional Student Leadership Conference & Regional Mental Health Strategizing Forum was hosted by ASRCC and all who attended got lunch from In-N-Out, a T-shirt, and some swag. The cost was $15 for RCC students but our EOPS students went for FREE!

Workshop topics included leadership development, student advocacy, parliamentary procedures, mental health initiatives, student resources, and transferring to universities. If all that wasn’t enough the participants were treated to an amazing award winning national speaker and author, Jon Vrooman. His presentation inspired and motivated students to reach, connect, and empower. Here’s what some of our EOPS students had to say about the conference:

Every spring EOPS celebrates the achievements of those who have completed their educational goal. If you have graduated or transferred in Fall 2013 or will be graduating or transferring this semester, then we would like to invite you to this year’s celebration and commend you on a job well done. At the ceremony you will receive a “Certificate of Accomplishment” and those students graduating will receive an “EOPS sash/stole” to wear over their graduation gown to distinguish them at graduation. Also, if you are transferring, bring a copy of the “letter of acceptance” from your new transferring college or university to show proof of transferring.
