milling process converts brown rice white rice i.e removes Bran
destroys 67% of the vitamin B3, 80% of the vitamin B1, 90% of the vitamin B6, 50% of the manganese, 50% of the phosphorus, 60% of the iron, and
almost 100% of the dietary fiber essential fatty acids antioxidants Oryzanol, Vitamin E
“Tocopherols & Tocotrienols”* i.e white rice is required to be "enriched" with at least
vitamins B1, B3 and iron
Brown rice ≠ White rice
is one of the most nutritive ingredients of the rice crop, where about 60% of the total nutritive value of rice itself resides

Rice Bran Stabilization (Lab &Industrial Scale)
• Applicant: Faculty of Agriculture ., Mansoura Univ.
• Duration : 9 and 12 months respectively
• Budget : LE 70 000 and 700 000 respectively
• Project PI : Prof. Dr. Ahmed Mohmoud Matouk
• Industrial Beneficiary: International trade and Marketing
• The main objective of the project is to develop Different and Novel Rice Bran Stabilizers both on the lab scale in the first project and at the industrial scale in the second project.
• Pilot units will be fabricated to suit different rice varieties and different mills designs. The whole stabilization factors; temperature, time, feeding rate...Etc will be recorded and controlled from a remote station.
Phytochemical &
Nutritional study of the Stabilized Rice Bran.
• Applicant : National research Centre
• Budget : LE 200 000 Duration : 24 months
• Project PI : Prof. Dr. Sahar Youssef Al-Okbi
• Industrial Beneficiary : International Trade and
Marketing
• The phytochemical constituents of rice bran are explored.
• Assessment of proximate composition of de-oiled rice bran (meal) including proteins, residual fat, carbohydrate, ash, moisture, crude fibres and calories will be carried out.
• Amino acid profile, minerals, dietary fibres (soluble & insoluble), total phenolic and flavonoids were determined in the meal.
• Shelf stability of the different extracts were assessed. The best extraction technique will be established on industrial scale. Estimation of the cost on both the laboratory and industrial scale will be carried out.
Implementations of Stabilized Rice Bran
in Different Fields
• Applicant: National research Centre
• Budget : LE 100 000 Duration : 12 months
• Project PI : Prof. Dr. Sahar Youssef Al-Okbi
• Industrial Benificary : International trade and
Marketing
• Preparation of different stabilized rice bran products (rice bran, rice bran oil, extracts and de-oiled rice bran).
• Preparation of food, cosmetic and pharma-ceutical products fortified with rice bran products.
• Physical and sensory evaluation with flavor determination.
• Proximate analysis of food products. • Design of nutritional information in relation to daily
requirements that may be written on labels (of food products).
