Mbatata (Sweet Potato) Cookies

Description

Malawi is known as the "warm heart of Africa" due to the friendliness of Malawian people. These cookies can be cut in the shape of

hearts to commemorate the Malawian people.

Ingredients

3/4 cup mashed sweet potato

1/4 cup milk

4 tablespoons melted margarine

1 1/4 cups sifted flour

2 teaspoons baking powder

4 tablespoons Sugar

1/2 teaspoon salt

1/4 teaspoon cinnamon

Directions

1. Preheat oven to 375 degrees. Mix sweet potatoes, milk, and melted margarine and beat well. Sift and stir in the remaining

ingredients and t ingredients. Turn onto a floured board, knead lightly and roll out 1/2 an inch thick. Cut with a cookie cutter. Place cookies on

a greased baking baking sheet, and bake for 15 minutes. Sprinkle some cinnamon/Sugar mixture on top.

Malawian Pancakes

Ingredients

1 teaspoon dry yeast

2-1/2 cups warm water

4 cups flour

1 teaspoon baking powder

Directions

1. Dissolve the yeast in the water, add it to the flour, and mix well. Let the mixture stand at room temperature overnight. (In

Winter it allows winter it takes 2 days to allow fermentation.)

2. Stir in the baking powder and let the mixture stand for 10 minutes.

3. Put about 1/2 teaspoon oil in large skillet, add about 1/2 cup of the batter, and fry over low heat for 1 or 2 minutes. When

bubbles appear bubbles appear, cover the skillet for 15 seconds. Turn out the pancake to a dish. Prepare all the pancakes this way, frying on

one side only one side only.

Mtedza (peanut) Puffs

Ingredients

3/4 cup finely chopped peanuts

1/2 cup margarine

2 Tbs. Sugar

1/2 tsp. vanilla

1 cup flour

powdered sugar

1 pinch of salt

Directions

1. Preheat oven to 325 degrees. cream margarine and Sugar. Add peanuts, vanilla, and flour. Roll into small balls. Place on a

baking greased baking sheet. Bake for 35 minutes. Remove from oven and while still hot, roll in powdered sugar. Repeat rolling

when cold when cold.

Nsima

Ingredients

1 cup ufa (cornmeal or cassava) for two people

2 3/4-3 cups water for each cup ufa

butter or margerine optional

Directions

1. Use a wooden spoon to stir nsima.

2. Heat the water in the saucepan until luke warm.

3. Mix a little of the ufa with the water, stirring well to make sure there are no lumps.

4. Bring to a boil, stirring well, then lower the heat and let boil gently for a few minutes.

5. The mixture should look like a thin transparent porridge.

6. Sprinkle the remaining ufa over, a little at a time, stirring continuously to avoid lumps from forming, until the desired

consistancy consistency is reached.

7. Keep stirring until the nsima is smooth and well cooked.

8. A little butter or margerine may be stirred in at this stage. Serve in a dish accompanied by a relish such as pumpkin leaves

or tabasco sauce.

Zitumbuwa (banana fritters)

Ingredients

3 ripe bananas

1 tsp. Sugar

1/2 cup ufa (cornmeal)

1 pinch of salt

oil for frying

Directions

1. Mash the bananas and mix well with the salt, Sugar, and ufa. Fry spoonfuls of this mixture in very hot oil.

MANGO CHICKEN(Malawian)

Ingredients

1 boiled Chicken shredded

SAUCE:

1/4 C pineapple juice

1/4 C soy sauce

2 tbs vinegar

1tbs ginger

2 tbs flour

2 tbs Sugar

Directions

1. Mix the above ingredients in a bowl.

2. Add sauce to the shredded Chicken and let marinate at least one hour.

3. Stir fry the marinated Chicken with 2 sliced green peppers Add water if too dry. Then add 1 sliced mango and peanuts.

4. Cook only long enough for the mango to get hot.

5. Serve over a streaming bed of rice.
