This session also includes information about soil inoculation and resisting disease through bacterial control in sustainable and eco-friendly ways. Importance & Function of Cover Crops Mark Fulford area 9Mark discusses ways to build a more funtional farming system that produces more total food and feed per acre by planting a succession of different cover crops. With a well-planed cropping system, soil can be built up while it recovers from being farmed more intensively. Mark will explain the value of cover crops not just from a production standpoint but also from a health standpoint. What we have experienced over the last 80 years is the oiling of America. There has been a decline in the use of animal fats like butter and lard alongside a huge increase in the use of shortenings, margarine and various liquid vegetable oils. All the while, the rate of heart disease continues to increase. Sally Fallon will discuss how food lobbyists and the medical industry have gone behind the backs on Americans to make a profit, touting the benefits of low-fat and low-cholesterol diets while replacing traditional sources of healthy fats with new, processed hydrogenated fats and vegetable oils which our bodies reject. These oils along with foods devoid of proper nutrition are the true culprits of diet related illnesses.
