Hon Piper - Mr Carl Wilkinson

It is with much regret that the President and Council must advise members that Mr Carl Wilkinson has resigned from both the Post of Hon Piper and the Leicester Caledonian Society.

He felt that it was in his best interests to stand down from the Society due to ongoing health problems.

Carl will be greatly missed by all the members of the Council, for his humour, friendship, encouragement and his wholehearted support of the Society.

We will all certainly miss his Superb Piping. We hope his circumstances improve very quickly and that at some point he may feel

well enough to re-join to his friends in the Society Gina Ferrier

DUNDEE CAKEIngredients

1½Ib. mixed fruit 8 oz. sugar6 oz. mixed peel 4 eggs8 oz. self-raising flour 1 dsp. lemon juicea pinch of salt 3 oz. blanched almonds8 oz. butter

MethodGrease and line an 8-inch cake tin. Prepare fruit and chop peel. Sieve the

flour and salt. Cream butter and sugar and beat in one egg at a time. Mix in the flour, fruit, peel, lemon juice, and 1 ounce of chopped, blanched almonds. Put mixture into cake tin. Arrange remaining almonds on top and bake in a moderate oven for 2 hours or until firm to the touch.

HAMILTON GINGERBREAD

Ingredients 6 oz. butter 1 tsp. baking soda6 oz. brown sugar dissolved in a little6 oz. treacle water1 Ib. self-raising flour milk2 tsps. powdered ginger

MethodCream together butter, sugar, and treacle. Sieve together the flour and

ginger. Stir into treacle mixture, together with baking soda and enough milk to make a soft, dropping consistency. Pour into a 10-inch square, well-greased and lined shallow cake tin. Bake at 350° for l½ hours or until firm to the touch. When cold, cut into squares.

Coach Trip to the National Memorial ArboretumOn Wednesday 5th June a coach load of society members and friends set

off from Glenfield for a day trip to the National Memorial Arboretum, near Alrewas in Staffordshire. It was only an hour later that we alighted at the beautiful wooded venue where over 30,000 trees can be found, many already maturing well and looking beautiful in the early summer sunshine.

Those who had ordered tea/coffee on arrival were escorted through to a private dining room for refreshments, which others strolled off to get a head start on viewing the delights of this lovely setting. It was the day before the 75th Anniversary of the D-Day landings and an enormous screen had been erected with seating like a theatre, on the paved area next to the cafe. This allowed visitors to sit and watch the Queen, and many of the leaders, on the live broadcast from Portsmouth that morning in tribute to those who were involved in D-Day.

Following a lovely wander around some of the gardens and their associated memorials we returned to the private room off the main restaurant in the Remembrance Centre for our lunch. The food was delicious, with very generous portions which were served with some lovely freshly cooked vegetables. This was followed by tea or coffee so we were all fuelled up for our explorations.

During the day, some of the members took guided walking tours and others took the special land train which toured parts of the venue and reported that these had been very informative. Others wandered around the extensive paths and mowed trails leading to the groves and gardens planted around the various memorials and statues. A huge range of societies, military and charitable organisations, emergency services, fraternity groups and individuals were represented and there were details on some of the military campaigns and diverse conflicts in which they had been involved.

We were very fortunate that the weather stayed bright, warm and dry for our explorations and the only problem was that we had to leave for the coach at 3.45pm before we felt we had seen very much of the extensive 150 acre site. I am sure that many other members, like myself felt the National Memorial Arboretum was definitely worth a future visit to give us the chance to see some of the areas we had not had time to explore in this beautiful venue.
