We sat down over a coffee with local denizen, Louise Reeves, owner of the newly launched Posy Supply Co, and asked her exactly what it is that she thinks makes Freshwater the pick of the bunch.

When asked to describe the Northern Beaches in one word Louise’s eyes light up. “Energetic”. As the walking embodiment of her sentiment it’s not hard to see why. Citing summer as her most anticipated time of the year, and an avid fan of being outdoors “whenever possible”, Louise also acknowledges the easy accessibility to the city which is handy for her early starts on her daily pilgrimage to the Sydney Flower Markets.

Despite the somewhat ungodly hour she commences perusing the flower markets before dawn this is her favourite part of her day. Every morning is unique, and she enjoys drawing creative inspiration from the colourful surrounds, diverse customer base and eclectic buzz of patrons from all over Sydney converging upon this vibrant space.

When she’s not working on her posies Louise can be found eating out at Manly’s popular Mexican hotspot Chica Bonita (great owners, great margaritas, and fast becoming a Manly institution); or enjoying a quick break at the edgy local café Cruise Espresso, known for their great coffee and cool tunes. *

A life dedicated to exploring the intricacies and wonder of the artistic world, while constantly developing his own unique and wildly creative style, has led Matt Dampney to the position he finds himself in today. It’s a journey that began in the rural, dusty setting of Tamworth, NSW, where he was born in 1977. But it was a move to Sydney in his formative years that really helped shape the artist he has become.

Attending prestigious Barker College on Sydney’s upper North Shore, Dampney developed a love for painting, drawing and design. His graphic art background helped in developing his own style. Simplistic line work and bold graphic colours bring out the personalities of his subjects. From murals to live skateboard art, book Illustrations to bespoke branding and textiles to paintings, Matt has complete control over these widely diverse disciplines.

In 2014, with his young family in tow, Dampney relocated to Manly Beach to pursue painting fulltime.

Young, focused and undeniably gifted 25 year old Queenscliff local Chris Eyre-Walker is the owner of local surf photography business, SurfLove. After moving to the Northern Beaches in 2012 Chris hit his stride, combining his love for the surf with his passion for photography, and he hasn’t looked back since.

Drawing inspiration from surf photography greats including Jon Frank, Ray Collins and Chris Burkard, Chris constantly challenges himself with assignments ranging from remote hidden beaches to international pro surf comps; but credits the Northern Beaches as one of his favourite shooting locations in the world.

His talent is unquestionable, and his connection with people and the ocean evident, however behind the beauty and effortlessness of each image is a physically gruelling and dangerous process - one that finds him constantly pushing boundaries of what’s possible in order to capture the perfect shot.

Surf photography is a fascinating and treacherous medium where calculated risk meets inspired creativity. A successful picture requires a combination of finely attuned skills operating in unison- physical demands, technical precision, choice of location, composition, and simply staying out the way when you need to! The challenges are constant and the art lies in creating the perfect tension between all the elements, but when the balance is right these components combine to create a powerful synergy.

Chris explains: “Shooting surf doesn’t come without risk and for many of my shots it means that I need to position myself right on the edge of the impact zone ... The bigger the wave, the greater the danger but at the same time the more rewarding the results.” *

THE NOOK Wholefoods

Pop into The Nook on any given day and you’re likely to find bright-eyed barista, Alasdair, creating one of his caffeinated masterpieces. Recently opened in the burgeoning suburb of Elanora Heights The Nook is a joint venture between local Carla Haining and her partner Adam Cummings, born of their desire to nourish their patrons with beautiful raw foods, ethically sourced coffee and local, organic produce.

With its overstuffed armchairs, recycled timber surfaces (Adam’s handiwork), and polished concrete floors the space- like the food- is simple, earthy and stylish. The staff are approachable and friendly (although they take their coffee seriously), and the environment relaxed. This venue is fast becoming a local favourite and the result is edgy, playful

When they’re not behind the counter you’ll find Carla and Adam perusing the nearby Warriewood farmers market or heading down to Manly to their slightly hidden local, Donny’s, with the occasional guilty splurge at Freshwater’s renowned hatted restaurant, Pilu (“It’s well worth it” she assures me).

From the Coop to

the KitchenIn a peaceful home in Forestville reside two friendly chickens, Bianca and Margery. These 11-month old Sussex hens hail from the delightful secret haven known as New Leaf Nursery, over at Ingleside. Chooks are wonderful pets with quirky, individual personalities. If handled regularly from a young age, they enjoy cuddles and are very responsive to their owners, yet they don’t require the more intensive care of other companion animals. Chickens keep each other company and are happy whether you have lots of time to interact, or whether you only spend time with them occasionally. Ideal for busy families, only a little time is needed each day for food and fresh water, and a simple clean-up of the coop on the weekend. There is something curiously relaxing about digging about in the veggie patch with a couple of chickens milling around and scratching alongside. Social yet unperturbed, hens are remarkably giving pets. As well as the tranquility they encourage, they are a wonderful learning experience for children who, from a young age, can help with food, water and collecting eggs each day.

Speaking of eggs – yum! There is nothing like a fresh egg straight from the garden. Soft-boiled, gently baked, lightly scrambled, fried or poached – they are incomparable to standard supermarket eggs. And because they’re a gift from your pets, they have that extra-special ingredient – love. Soft boiled eggs in a colourful egg cup with buttery toast soldiers is our Sunday morning ritual. What bliss!

But it’s not just about the eggs, chickens are the ultimate “eco-pet”, eating up kitchen scraps and providing manure which will have your herbs and vegetables growing like crazy. We’ve been keeping chooks for around 7 years and haven’t looked back. Bianca and Margery have a lot to give and we love having them around.

What to do: Line the bottom of a baking dish with baby spinach and scatter over chopped tomatoes, diced red onion and spoonful’s of Persian fetta.

In a small bowl crack four eggs and add chopped parsley, salt & pepper, dukkah (roughly a tablespoon) and whisk lightly to combine. If just serving to adults I like to add a few shakes of cayenne pepper also to give it a little kick.

Pour egg mixture evenly over already prepared baking dish. Once this has settled crack four eggs, without breaking the yoke, in to areas of the baking dish that need filling. Add a few heaped teaspoons of relish to the top, sprinkle with dukkah and pop in the oven for roughly 35 mins. Just keep checking to see if the eggs whites have set- similar to cooking a quiche.

Remove from oven and serve with cos lettuce and avocado. And a strong coffee of course! Enjoy. *

Preparation time: 45 minutes

Serves: 4 people

This is a great go-to recipe if you have a house full of visitors (whether it be planned or unplanned!) and need to fill hungry tummies quickly at breakfast time. There are no tricky techniques involved and you can vary the recipe to your liking.

The Spice of Life

In my humble opinion the most underrated tool in achieving a healthy lifestyle is home cooking. Sourcing our own food, like from local farmers markets and understanding what really goes into what we’re eating helps us to really get connected to our food. When we cook our own meals we consume far less sugar, salt and calories not to mention other nasties that sneak their way into highly processed foods.

Beyond the actual ingredients themselves is something just as important. When you make your own food you infuse it with love. You might be thinking that sounds all a bit too ‘hippy-dippy’ for you, but think about this: Food is something that brings everyone together. We can cook together; we can share it with our loved ones. The energy you bring to your food preparation is what eventually ends up in your body. It’s the vitality that feeds us - it brings us good health and energy and - yes, that’s right - love.

With that being said one of my top tips for making home cooking both super simple and delicious is to use herbs and spices. As the weather cools down and we start to crave more comforting foods herbs and spices are a great way to add flavour, plus they also have their own health benefits like cinnamon has anti-inflammatory properties and fennel can help aid digestion. Using different herbs and spices in our cooking is also the subtle difference between making food with Indian or Thai or Chinese influence. So it also makes your cooking extremely versatile. Make sure your cupboard is fully stocked with a great selection!

This recipe is our take on Tandoori Chicken - using our own spice mix! By marinating the chicken in the spices it’s both tender and flavoursome. This recipe is dairy free, grain free. It would also be great as a centrepiece to an Asian inspired sharing dinner platter amongst friends or to share with family.

What to do: Put all the spices for the marinade mix into a bowl and work into a fine texture. Transfer into a small pan and gently toast the spices on a low heat for about 1-2 minutes. This allows the flavor and aroma of the spices to intensify. Remove from the heat and place into a mixing bowl. Add the garlic and chili to form a rough paste. Add the lemon juice and coconut cream and mix well.

Add the chicken and coat with the marinade, then cover with cling film and place in the fridge to marinate for at least 6 hours. (Tip: You can prepare the marinade the night before and leave it to work it’s magic in the fridge the following day).

Preheat the grill in your oven as hot as it will go. Place the chicken on tin foil in an oven tray keeping as much of the marinade on as possible. Pop under the grill for 15-20 minutes turning occasionally until colour changes to golden brown, don’t worry if you get some charring, it all adds to the tandoori effect!

Meanwhile, gently blanch the broccoli in some water for a few minutes and cut the green capsicum into medium sized pieces. Once ready take the broccoli and coat with the capsicum in the leftover marinade. Then spread out on a large baking tray in a single layer. Add the ghee to the baking tray. Place in the oven for 10 minutes, they should be tender when done.

Put everything onto a plate and scatter fresh coriander and spring onion on top. *

Tandoori Coconut Chicken

Preparation time: 1 hour (plus marinating time)

Serves: 2-3 people

What You Need:- 2 x chicken breasts

(feel free to use drumsticks or thighs and always make sure your chicken is free range and organic – be non negotiable about this)

- Long stemmed broccoli- 1x green capsicum- 1 TBSP Ghee (for cooking the vegetables)

For the marinade:- 160ml organic coconut cream- 2 garlic cloves, freshly pressed- 1 lemon, freshly squeezed- 1tsp cinnamon- 1tsp ground coriander seed- 1tsp fennel- 2tsp paprika- 2tsp turmeric

For the garnish:- 2 Spring onion- Bunch of fresh coriander

- 1tsp ground cardamom- 1tsp cumin- 2 red chilies

(if you prefer more heat add the seeds too)

- 1tsp whole cloves- Generous pinch of good quality

The Beaches Market

As the glow of white tents draws closer the anticipation builds; it’s market day, the day I’ve worked all week for. The day you can completely zone out, wonder around perusing handcrafted treasures, coffee and flowers in hand, feeling like a whimsical character from Amelie…. But perhaps that’s just me.

As I turn to my partner with the excitement of a five year old and intentions of asking him to come with me, I notice that he is clearly holding his breath and hoping that I change the topic fairly quickly. I guess it’s not for everyone.

Attending markets has been a life long obsession for me and it’s filled with fond memories. Bartering grandpas for additions to my stamp collection at a young age, filling my apartment with retro furniture finds and buying those ‘vintage’ boots that turned out to be just old and a little smelly.

My standout discoveries at The Beaches Market would have to be the Pasta Gallery prawn & garlic ravioli (albeit $20 but worth it), cold pressed juice from the lovely ladies at Projuice and the passionfruit tapioca pudding made by Arlingtons – I can not explain how delicious this actually is and not ashamed to say that I ate the whole tub in one sitting. *
