Beat 3 or 4 free-ranges eggs and mix with the sliced Jersey Royal potatoes 3. Add a pinch of sea salt, a pinch of cracked black pepper and finely sliced spring onions 4. Fry in a small frying pan on both sides until cooked 5. Serve in your funkiest frying pan (or just a plate...) and garnish with a small bunch of watercress
