Most of you will know of the Icehotel but where is it and what exactly does the experience entail?

Take a leap from your comfort zone with our four night winter adventure itinerary.

A popular misconception is that the Icehotel is a permanent structure found in Iceland. On the contrary, with its base 200km north of the Arctic circle in Swedish Lapland, the Icehotel is ceremoniously carved and rebuilt every winter. Since its inception, in 1989 by Yngve Bergqvist, it has inspired similar projects around the globe.

Heathrow airport provides the closest direct route from the UK. Fly with SAS to Kiruna. Flight time is a mere 3½ hours so in no time you'll have arrived.

Make sure you pack for the cold as the average temperature during the winter months is a staggering -10c but can drop as low as -30c. The Icehotel will provide you with all the necessary clothing during your stay however remember to bring winter clothes for travelling and transfers. Arrive at the Icehotel in style and tradition with a husky-sled airport transfer. This short ride through the snow-covered forest and ice plains gives a certain majesty to your first glimpse of the Icehotel. Winter is the darkest time of year and the sun barely rises above the horizon, nevertheless the open landscape remains illuminated by a glistening blanket of snow.

On arrival at Icehotel we recommend that you take in the guided check-in tour where you will receive a proper briefing and hints and tips on how to a get a good night's sleep in sub-zero conditions. The tour also covers a brief but fascinating history of the hotel.

The House of Burberry was founded in 1856 by a 21 year old draper's assistant called Thomas Burberry. His shop in Basingstoke Hampshire was a Gentleman's Outfitters specialising in outdoor wear, and because of the commitment to quality, fabric and design Burberry earned a loyal followingand the business grew. In 1880 Thomas Burberry invented Gabardine, which was a tightly woven wool fabric tough, breathable and water resistant. By now the company had grown and moved it's premises to Haymarket, London where it traded as Thomas Burberry & Sons.

Burberry's first affiliation with the British Army was in 1895, when the Tielocken coat was developed and was worn by Officers in the Boer War. Then, in 1914, Burberry was commissioned by the War Office to adapt the standard Officer's coat to make it suitable for all weather conditions in the trenches during WW1. This he achieved by the addition of a thick, wool, detachable lining for winter warmth (and impromptu sleeping bag!), a gun flap to prevent rain seeping inside, shoulder straps for the attachment of rank insignia and D rings on the belt which enable map cases and swords to be carried securely. These "trench coats" were an optional item of dress for British Army Officers only. They were not supplied as standard kit, but had to be purchased privately. Other ranks were not permitted to wear the trench coat. As a

result it quickly became a coveted item of clothing. The distinctive Burberry Check lining was added in 1920.

During WW11, British Officers continued to wear their Trench Coats in bad weather. Civilians began to notice this useful and stylish coat and it became a popular choice for many people including film stars. which brought the brand further into the public eye. Humphrey Bogart wore one in 'Casablanca', and Audrey Hepburn in 'Breakfast At Tiffany's' to name but two. Furthermore, two Royal Warrants were awarded to the company in 1955 and 1989 by HM The Queen Mother and HRH The Prince of Wales respectively.

The Classic Burberry Trench has changed little in design over its 100 year history making it a sound investment as an item of clothing that will never date, and will probably outlast the wearer!

Samsung Galaxy Skin Anticipated release late 2012

Over the last year there has been a gathering media storm regarding the potential release of the Samsung Galaxy Skin. Although the concept design is confirmed to have been created by students using the Samsung trade mark for a greater commercial feel, some still project the release in the second quarter of this year. To date Samsung have made no official statement regarding the product's existence.

The reason why the Galaxy Skin is such a hot topic is the speculation as to what this new technology might introduce.

In early 2010 Samsung demonstrated flexible AMOLED screens which were not only 0.3mm thick but also bendable, rollable and astonishingly could withstand the extreme force of a hammer blow.

AMOLED screens are constructed with durable sheets of carbon atoms which together encase a micro-thin liquid crystal screen.

The exhibition of this technology and the subsequent Galaxy Skin concepts prompted a flourish of speculation with two notable articles in the Telegraph newspaper and the International Business Times suggesting Samsung had the manufacturing capabilities and hinted at an early 2012 release.

There is no doubt the existence of AMOLED technology is very real, however the integration of it with smartphone functionality is generally considered to still be some time away. Due to this, any release prior to the end of 2012 is extremely unlikely. nevertheless, when the first AMOLED screen 'Flexi-phone' is finally produced it will revolutionise the mobile phone and tablet market. A cracked screen will then be a thing of the past.

The most famous of four satellite villages, the resort Courchevel 1850 resides high in the French Alps.

Getting there

There are two international airports nearby, Åre/Östersund airport and Trondheim Værnes international airport Norway, both of which offer flights from Heathrow via Copenhagen or Amsterdam.

Helicopter transfers from either airport directly to the hotel helipad takes approximately 15 minutes. road transfer (bus, taxi, rental car) takes approximately 1 hour.

Method Season the chicken pieces and dust in flour. Pan fry until golden on each side. Remove from the pan.

Add the vegetables to the pan and colour. Deglaze the pan with the red wine and stock. Add the herbs and the chicken.

Add the water and cook in the oven at 180°c for 30 minutes.

Remove the chicken, pass the sauce through a sieve and reduce by a third. Sweat off pancetta lardons in a pan, then the mushrooms and silver skins. Add the chicken pieces to the pan, then the sauce and reheat, finish with chopped tarragon, parsley and serve with spätzle fried in a little oil and butter till it puffs up like popcron.

Coq au Vin is a real winter warmer, slowly braised chicken in a rich red wine sauce, it's perfect for those cold winter evenings. I source my chickens from a small farm in Strathaven called St Brides located in the heart of the Lanarkshire countryside. I have known the farmer there for years and I know that I always get the best quality as he only breeds slow growing full flavoured breeds which means they live happier lives resulting in a far superior product. I believe it is important to ensure you get a full flavoured dish, whether roasting or braising. I would recommend a nice glass of Château Les Tonnelles to complimentthis dish.

Burgundy: the taste of the land

The heart of Burgundy, the Côte d’Or, is a broadly east facing escarpment where some of the

world’s greatest wines are made from Pinot Noir and Chardonnay grape varieties.

This is a region dominated by small, family owned domaines, with the winery and cellars commonly a part of the house. Total vineyard holdings are typically 5-20 hectares in size. This contrasts with Bordeaux where the great châteaux have estates 80-100ha in size. In Burgundy, it is the land itself which have a quality classification and hierarchy (Bourgogne, Village, Premier Cru, Grand Cru). A wine map reveals a mosaic of hundreds of small plots, all named and assigned a quality designation.

Although there are only two grape varieties, a vigneron may make many different wines, all from different named vineyards, and all vinified, bottled and sold separately. Domaine Michel Gros has a total of 6.48 hectares divided amongst eight vineyards: 0.20ha in Clos de Vougeot Grand Cru, 0.63ha in Vosne-Romanée 1er Cru ‘Aux Brûlées’ and so on. Vineyard holdings are so fragmented that the decimal places are quite significant!

The Lay & Wheeler buying & sales team travelled to Burgundy in November to taste the 2010 vintage from the barrel. The days are filled with individual appointments with growers and domaines. A pipette is used to draw each wine directly from barrel before a small amount is released into each glass for tasting and assessment. We move around the cellar from barrel to barrel, tasting a different wine from each tiny plot of vineyard. The wines are subtle and nuanced in their differences, yet certainly discernable; the influence and

taste of the land. Tasting eighty to one-hundred wines per day dictates that the wines are spat out, although it’s just wrong not to enjoy the very finest wines.

Domaine Humbert Frères produced just 600 bottles (two 225 litre barrels) of his 2010 vintage Estournelles St-Jacques 1er Cru in Gevrey-Chambertin, a small volume to divide amongst his customers – wine merchants and restaurants both in France and for export. Allocations of Burgundy’s finest wines are precious, highly sought-after and jealously guarded. This is about relationships as much as about the wine itself.

Conversation naturally turns to the quality of the vintage. 2010 is an excellent year. The reds have a concentration, precision, silky texture and tremendous clarity of fruit. The whites combine weight and richness alongside bright, fresh and pure fruit. When we’re asked about the state of the UK fine wine market our response is always “so-so” in order not to encourage them to raise their prices!

L&W, along with the British wine trade, traditionally offers Burgundy for sale in January each year, en-primeur. The wines are sold by the case whilst the wine is still in the barrel in Burgundy, before being shipped the following autumn. This is the one opportunity to buy these vinous gems, for the finest wines from Burgundy are rarely seen again.

New Zealand. I absolutely adore New Zealand. First and foremost my wife’s a Kiwi, which may

explain some of my enthusiasm for the place but what else draws to this strange land, tucked away on the far side of the world?

Well, it’s one of the most spectacular, diverse places on earth, boasting majestic mountain ranges, long sandy beaches and ancient forests, positively crammed full of gnarly old trees. New Zealand has this and more (including, I should add, many fine towns & cities). Even flying to the South Island from Australia is a treat, especially as you cross the snowy peaks of the Southern Alps (and I challenge anyone who sees this not to adopt their deepest, Christopher Lee-style voice, and utter the dreaded name “Mordor...”).

So as a landscape photographer, the occasional extended visit to the Land of the Long White Cloud isn’t a particular hardship. As a contributor to iStockphoto, one of the world’s largest photographic libraries, these trips present me with that most valuable thing, the opportunity to shoot something spectacular!

On the most recent trip, after a few days on the family farm outside Christchurch, I’m a man on a mission. I have four or five days to myself in this astonishing land, I have two fine cameras (a Canon EOS 5D MkII and a Fujifilm X100) and good lenses (including my two favourites, a Zeiss Distagon 21mm wide-angle and a Canon 28-70mm f/2.8 L). I have sufficient memory cards and a solid, though somewhat unexciting, twenty year old Nissan Bluebird at my disposal. I have christened her 'The Wheels of Steel' and over the next few days (and thousand-plus kilometers) she performs faultlessly. All I need now is a destination, something to focus on.

On this occasion I’ve chosen Milford Sound, a spectacular fjord on the south-western side of the South Island. My first visit was over ten years ago and I was captivated by its towering peaks (including the famous Mitre Peak) and cascading waterfalls, all bathed, as they were at the time, in glorious sunshine. From the farm, it’s a long drive to the Fiordland National Park. Taking into account my rather sedate driving style and the car's equally sedate performance it's a good day and a half.

Despite all this, golden memories of my previous visit spur me on and, more importantly, the weather forecast is quite encouraging.

However, as I approach the National Park, the peaks are shrouded in dark, leaden clouds. I sweep along wide glacial valleys and ancient memories of past geography lessons flood back (is that a fine example of Roche moutonnee perchance?). Soon enough the road starts to climb up into the clouds, up into the peaks and the rain. Peering through the rain-streaked windscreen I realise that the weatherman was lying and I’m unlikely to get the shot I’d imagined. Time to adapt.

Eventually I make it down to the Sound itself and through swirling cloud I catch glimpses of the scenery beyond. Both elated and frustrated, I leave the warmth of the car and follow a trail to the water’s edge, eager to find the perfect vantage point for my shot. After an hour or two I decide upon a spot that ticks many compositional boxes, the waiting game commences! Is the weather going to play nice? Is the rain ever going to stop and will the sand flies ever tire of biting me?

No would be the answer to all that.

The next day, I'm up before dawn for more of the same. Blithely ignoring recent inaccuracies, the weather forecast suggests it’s going to continue with the cloud/rain combo for the next few days and today I believe them. However, I’m here to take photos so I press on.

If anything, today’s weather is worse, though perversely that may be to my benefit. For a landscape photographer there is nothing worse than flat grey skies. All you’re going to get, in my mind at least, are the equivalent of bad holiday snaps and that’s not what I’m here for. Today there are some dramatic clouds overhead, some light, some dark and the hint of a sunbeam breaking through... we might be in business!

So, months later, am I happy with the shot we have here? The shot I wanted had blues skies, green mountains and a sense of serenity. I realised pretty quickly this wasn't going to happen, so you have to adapt and shoot with what you’ve got. So, am I happy? Yes. Will I go back for the image I wanted? Of that you can be certain.

Where were you last? Cuba.

Describe a memorable experience from a childhood trip? Norway, skiing on glistening slopes amongst the pine trees near Lillehammer.

If you could turn back time where would you visit again, and why? Kerala, India. Our hotel was idyllic and peaceful by the the sea and most importantly, there were no arguments with the missus.

What are your top three travel essentials? During Travel - Comfort, nearby loo and no turbulence. When I get there - Warmth, scenery and a nice bathroom!

Where on earth is your favourite city? Sienna.

If you had to move abroad where would you live? It would have to be Tuscany in Italy. Beautiful and relaxing, bursting with culture and the right climate.

What is the best view you have ever experienced? Dawn at Yosemite in California.

Where is the harshest environment you've visited? Mexico City.

Who is the most interesting person you have met abroad? My wife!

Which is the most prestigious and luxurious hotel or resort you have stayed in? Coconut Lagoon Kerala, India

What was your longest delay, what happened? 8 hour plane delay in Mexico... not pleasant.

What are your three pet hates when traveling? Petty mindedness, screaming kids, distant loos!

Come clean, name one thing you've liberated from a hotel room? Haven't.. wasn't enticed and couldn't be bothered.

Where on earth is neuquen?Do you mean Newquay?

Division Bell is a pair of large head sculptures like Easter Island heads loosely based on an illusion more normally rendered in black and white line and called the candlestick illusion, but in our case brought more vividly to life by 22 ft high profile heads standing like sentinels in a field in Streatham near Ely. It was suggested by the band to incorporate Ely Cathedral, an imposing landmark in the fens of East Anglia near Cambridge where the band are from. The photograph is taken in winter when conditions are very variable so we took loads of pictures most of which looked pretty good to us. Do you see one face front on or two in profile? The subject was communication or the lack of it....according to the Floyd.
