    Stir-fried vegetables

    method

    The secret to good stir frying is not to put too much in the wok at the onetime, if you do, the vegetables will sweat instead of frying. This recipesfor two people but if youre cooking for four, dont dump twice as much in,do it in two batches.

    Mix the garlic, chilli and spring and red onions together. Mix all the othervegetables and water chestnuts together. Keep the two mixes separate.

    Heat your wok until its really hot. Add a splash of oil it should start tosmoke then the chilli and onion mix. !tir for "ust # second before addingthe other mix. $lip and toss the vegetables in the work if you can% if youcant, dont worry, "ust keep the vegetables moving with a wooden spoon,turning them over every few seconds so they all keep feeling the heat ofthe bottom of the work. !eason with salt and pepper.
