Pop’s Pound Cake Did you know that pound cake got its name because it contains one pound butter, one pound flour, one pound sugar and one pound eggs. It’s a marvelous combination of ingredients and the taste will thrill you. It’s easy to make just be sure to beat the ingredients enough. Enjoy! 1 lb sweet unsalted butter 4 cup flour 3 cup sugar 10 eggs 1 tbsp vanilla All ingredients at room temp. Preheat the oven to 305 o F. In a small bowl, beat the eggs, sugar and vanilla until creamy. In a large bowl, cream the butter and flour until it is the consistency of whipped cream. Be patient, it takes a while. It's best to use an electric mixer (a heavy duty type like a Kitchenaid works best). If yours isn't so heavy duty, cream the butter first and then add the flour a cup at a time and beat it to a light consistency. Add the egg mixture and beat until stiff. Pour into a greased and floured 10 inch tube pan. For marble pound, melt a bakers chocolate square and blend it into a small amount of the dough. Swirl it through the middle of the pan of dough. Disperse it with a knife. Be creative! Also works well with chocolate chips or, better yet, both of the above. Half the recipe fits a 9"x5" baking pan.
