Get set, slow down!

Good things come to those who wait; from the photographer who waits hours on end to get a perfect shot of Aurora borealis to the people who lineup outside the barbeque joint in Texas at 4 a.m. The same is true for those who go on vacations.

That’s why we bring you A Week With RCI—a 7-day travel itinerary to some of the best destinations in India. Admit it, it’s impossible to do Goa in two days or uncover the wonders of Leh in three. Give yourself ample time and you may discover more than what you actually came for.

A week into Goa (pg. 17) and you will realise that beaches are not the only thing famous there. Stay longer in Puri (pg. 36) and you may want to take up the art of applique work in Pipli. Pondy’s (pg. 20) French culture and aura convinced some folks to move there permanently. Truly, wonders await those who slow down.

Moving on to Europe, Lisbon reveals its hidden charms, again only to the serious seeker, on Pg. 06. Check out the fascinating city of Istanbul in pictures, on Pg. 12. Also, read about a member who travelled across the world and published a book chronicling her journerys.

No matter where you wish to travel, I hope you will find this edition of Endless Vacation inspiring.

Finally, don’t forget to follow us on Facebook to get your dose of travel inspiration and other exciting updates.

Slow down and savour the good times with your loved ones.

Happy holidays!

Lisbon The stars are aligning for the Portuguese capital. Here’s what we discovered about Europe’s best-kept secret.

The HiddenCharms of

Lisbon is an unpretentious beauty, a place where you can sit at a café sipping a two-euro glass of wine from a vineyard in the Douro Valley while marveling at centuries-old buildings clad in patterned tiles, or azulejos. Many travelers pass through the city on their way to the beaches and villages of southern Portugal’s Algarve coast, but it is well worth a stay of two or three days. The city is small (about 6,00,000 people) compared with other Western European capitals but no less rich in history: Romans and Moors first laid claim to Lisbon, and it later rose to prominence thanks to explorers such as Vasco da Gama, who blazed trade routes to Africa and India during the Age of Discovery.

Today, Lisbon is undergoing a revitalization but remains mostly free of global chains. Another delightful surprise: Almost no one walks around with a smartphone in hand. Even then it’s presumably to snap a photo of the light that filters through one of the city’s older districts, such as the maze-like Alfama, which extends to the Tagus River. Lisbon grew up along its banks, and then in the 19th century the city grew inland, and neighborhoods, such as Príncipe Real and Chiado, emerged. Get to know them and you may find that you too want to keep this once-sleepy city all to yourself.

One of Europe’s more affordable capitals, Lisbon

Alfama & MourariaAlfama was once a bustling sailors’ quarter. One of its highest points affords a panoramic view over the city and the Tagus River and is a great way to get oriented. To get there, catch a Tram at 8:30 in the morning—you’ll sit alongside locals as it rumbles uphill—to arrive at St. George’s Castle (Rua de Santa Cruz; 011-351-218-800-620) when it opens at nine (crowds usually don’t start swarming the entrance until about 10). Here, 11 towers and the ruins of a royal palace sprawl over the city’s tallest hill, and a natural terrace looks out on the city’s red rooftops and 25th of April Bridge.

In the heart of Alfama below, you’ll encounter a labyrinthine street plan once meant to confuse invaders. Wander aimlessly through its tight becos (alleys), where laundry sways

in the breeze, and largos (small squares), where clusters of tables invite you to sit down for coffee or wine.

In the neighboring Mouraria (or “Moorish quarter”), you can pop into A Vida Portuguesa (23 Largo do Intendente Pina Manique; 011-351-211-974-512) to browse made-in-Portugal products, from notebooks by Emílio Braga, a family company that’s been making them by hand since 1918, to wall-mounted swallows made from ceramist Bordalo Pinheiro’s original molds.

ChiadoLisbon’s most cosmopolitan neighborhood lies west of Alfama and is lined with restored 18th-century buildings. There are international brands here, but you’re better off sticking to the more unique shops. Tiny Luvaria Ulisses (87 Rua do Carmo; 011-351-213-420-295) has been selling nothing but buttery leather gloves in neutrals and jewel tones, like emerald and cherry red, since 1925. When you’re ready for a fitting, the soft-spoken shopkeeper

uses a wooden clip to expand the glove’s fingers, mists baby powder inside and then instructs you to prop your elbow on a small pillow so she can pull the glove over your hand.

For a pick-me-up of a different sort, stop into one—or both—of the city’s sweetest spots: Manteigaria (2 Rua do Loreto; 011-351-213-471-492), where you can savor a tiny warm-from-the-oven pastéis de nata (a traditional Portuguese egg-custard tart) while you watch dozens more get made through a glass partition, or Landeau (103 Rua Rodrigues Faria; 011-351-917-278-939), where slices of dense chocolate cake are precise, thin and decadent.

Príncipe RealLeafy gardens, colorful 19th-century mansions and lots of shops make this neighborhood set back from the river pleasant for a stroll. Wonderfully cluttered with chandeliers and floral-patterned teacups, Cafe Tease (15 Rua Nova da Piedade; 011-351-914-447-383) serves tea and “Nutella coffee” as well as cupcakes. Nearby, Solar (70 Rua Dom Pedro V; 011-351-213-465-522) stocks antique tiles from the 15th to the 20th centuries from houses and churches around Portugal; they cost anywhere from a few dollars to a few hundred.

At 21 PR Concept Store (21 Praça do Príncipe Real; 011-351-213-469-421), you’ll find brightly colored women’s clothing from the Portuguese women’s fashion label Meam, plus leather shoes, quirky jewelry and silk scarves.

Work up an appetite wandering through the surprisingly hidden 17-acre Botanical Garden (58 Rua da Escola Politecnica; 011-351-213-921-800), lush with ancient palms. You can’t go wrong at the intimate Taberna da Rua das Flores (103 Rua das Flores; 011-351-213-479-418), where the door stays propped open on warm days. Salted cod is fundamental to Portuguese cooking—or, in the words of Maria da Encarnacao Mello of the Portugal National Tourist Office, “In Portugal, we like to say there are 365 ways to cook salt cod.” You can usually find a preparation here, but if not, order whatever fish is on the menu.

BelémSeven miles west of downtown, the Belém district deserves a half day on its own. This is where history’s most famous explorers, such as Vasco da Gama, set off on voyages to India, Africa, Brazil and other places in search of gold, spices and various riches. Today a wide waterfront boulevard connects many monuments and museums dedicated to this maritime tradition.

The Manueline-style Belém Tower once protected this harbor and is now a UNESCO World Heritage site. You can climb its 93-step spiral staircase to gaze down at the white terrace that juts over the Tagus.

It’s impossible to miss the impressive Padrão dos Descobrimentos (Av. Brasilia; 011-351-213-031-950), a monument carved with the likenesses of Prince Henry the Navigator, Vasco da Gama, Ferdinand Magellan and 29 other greats. Inside, you can ride the elevator to the skinny viewing platform at the top to look out over the river.

If you plan to be in Belém come dinnertime, consider making a reservation for a table at Feitoria (Doca do Bom Sucesso; 011-351-210-400-200), a one-Michelin-star restaurant with flawless service set back from—but still in sight of—the water. Chef João Rodrigues might start you off with two cubes of melon infused with hibiscus, followed by sautéed Algarve scarlet shrimp or sausage in the shape

of Portugal in a broth. One of the meal’s many lovely details: olive oil from the Douro Valley served in a gleaming seashell.

Top off the evening with yet another custard tart (or two) dusted with cinnamon from the café Pastéis de Belém (Rua de Belém; 011-351-213-637-423), which started as a factory in 1837 and is still run by the same family. The blue-and-white dining room echoes with happy chatter—appealingly unpretentious, much like Lisbon itself.

Getting AroundLisbon is built on seven hills, so remember to pack a pair of comfy walking shoes. From the airport, you can take a taxi or the subway downtown. You can walk between neighborhoods (most are 30 minutes apart or less) or hail one of many taxis. Taxis don’t accept credit cards, nor do a lot of restaurants, so consider taking out euros from a bank at home with a good exchange rate before you go.

Hagia Sophia: Hands down, this is Istanbul’s most spectacular building. Built nearly 1,500 years ago, Hagia Sophia was once a church, then converted to a mosque and now declared a museum. Check

out the exquisite mosaics that reveal the mysteries of this historic masterpiece.

Topkapi Palace: Walk into history of the mighty Ottoman Empire, by visiting this 15th century palace. Built by the Sultan Mehmed II, Topkapi is the world’s largest and oldest palace. Wander through various courtyards and harem and check out the exquisite collection at the palace museum.

Bosphorous Ferry Trip: If you are thinking of a quick way to soak in the beauty of Istanbul, then opt for a cruise. Bosphorous is the lifeblood of Istanbul, connecting Asia and Europe. View the city’s historic monuments from the upper deck of your ferry. Choose for full trip or a short one depending on the time you have.

Grand Bazaar: Colorful, chaotic and almost endless alleys lend a carnival look to this centuries-old Bazaar. With more than four thousand shops, including jewellery shops, eateries, rugs merchants

and many more, the Grand Bazaar is a visual treat for tourists.

Dondurma Delight: Don’t forget to treat yourself to Dondurma in Istanbul. This Turkish ice cream does not melt or drip easily but tastes delightful. The magical-show sort of trick put up by the vendors, by flipping and teasing customers before finally handing over the cone is worth a watch.

How to get around: Walk around the city to experience the sights and discover the city’s hidden gems. Short on time? Then trams, buses and even Uber are available. The best way to travel between the city and the suburbs is by a ferry.

S witzerland is truly blessed, with spectacular landscapes, wonderful people, great food, mind boggling infrastructure (that makes travelling so easy) and much

more. I would say (besides Kashmir) if there is a heaven on earth, it is here, it is here, it is here.

There are even more spectacular sights, if you go off the beaten track. A road trip by car enables you to go wherever yourt heart desires. This year, I got lucky in recording an event that happens every seven years—super-pollination. Humongous volumes of pollen are released by nature, eventually resulting in a vast yellow carpet of wild flowers across the meadows. I’ve taken panoramas which are stitched from multiple pictures. What the human eye sees the panorama recreates. One of my favorite road trips starts at Chur, going through Thusis-Savognin-Julier Pass-Silvaplana–St. Moritz–Zuoz–Zernez–Davos. This route offers amongst the most spectacular of Swiss landscapes.

SWITZERLANDEthereal

A final panoramic look at this dense yellow carpet of wild flowers and the quaint town of Savognin, before we move further.

OFF THE BEATEN TRACK

Wish you were here | Switzerland

—Dr. Suleman Merchant RCI Member

Chur onwards, there is lovely Alpine scenery. However, as soon as Albula/Alvra nears, the landscape metamorphoses into something extraordinary. From here till Salouf is a mesmerizing journey. This year we saw vast Swiss meadows completely taken over by wild flowers (predominantly yellow dandelions, buttercups and the like); which seemed to lay a grand yellow carpet at the feet of the mighty Swiss Alps.

Leaving the heavenly Albula Valley and its phenomenal carpet of yellow wildflowers, we climbed up the steep mountain road towards the Julier Pass (elevation 7500 ft). It's an old Roman road, which since 1840, has been used as an important connection between the Albula Valley (Salouf,

Savognin etc.) and the Engadine Valley which has the beautiful town of Silva Plana and St. Moritz. You can recover your breath over a cup of hot coffee or a yummy pizza at the only restaurant at this height; and get a much-needed break after the exhilarating climb before you start the steep descent. Head downwards to enter the Engadine Valley, passing by many a quiet Swiss-hamlet, located in wonderfully tranquil surroundings and await the magnificent view of the beautiful town and lake, Silva Plana.

Next stop Silversee (Silver Lake): Imbibe the beauty of pristine waters that have a silvery sheen. Next, keep off the beaten track (St. Moritz) and go straight through it towards Zernez, driving along the beautiful River

'Inn’. Along the left-hand side of the valley there are a number of picturesque villages to admire, typical of the Grisons region. Special ones worth mentioning are S-chanf and Zuoz. The crisp mountain air along with the beautiful sight of these riverside towns, is exhilarating. If you are feeling more adventurous, you could go back via the Albula Pass (a pretty treacherous terrain). The more regular route would be via Zernez.

Stunning super-wide aerial panorama of the enchanting town of Silva Plana, its beautiful twin lakes, with the magnificent snow-covered Swiss Alps in the background. This is the view in Summer. During fall season, this becomes an even more spectacular sight, due to the wonderful fall colours of the dense Alpine forest foliage.

Wish you were here | Switzerland

A panorama from within an Albula-Salouf area meadow clearly reveals the humongous numbers of wild flowers, extending from one's feet, to as far as the eyes can see—a result of this year's super-pollination. This natural phenomenon happens every seventh year; 2025 should be the next time we'll get as lucky.

KITCHEN SECRETS

Chef Debraj Bhaumik

What led you to become a chef?

I was born into a traditional Bengali family and grew up with my granny, mom and aunts. Food was the central part for any family event, big or small. When I started lending hands to the ladies in the kitchen, I never realised that I was being groomed for future. Also, being a foodie ran in the bloodline of the family. Looking back, I believe it all happened naturally.

Where do you get your inspiration?

I look for expressions on the face of people who taste the food

I prepare. The looks of pleasure, satisfaction and happiness on the faces inspires me every time.

Your philosophy on food

Great food is one that sets in nostalgia.

Your personal favourite dish

Prawn malai curry.

First thing you learnt to cook

My mom’s signature 'coconut paratha'.

Your signature dish

Pandi curry is what Coorg is known for; pork chops and ribs are my other specialties.

Best dish you have ever tasted on a holiday

Karimeen Pollichathu, the pearl spot fish cooked in a banana leaf wrap, the Kerala way. Each time I look forward to one.

What do you look forward to when you are on a vacation?

Try local food and try as much as I can. This is the best way to learn the diversity in cuisines.

Tell us about Coorg and Kodava cuisine

The cuisine in Coorg is different from any other part of Karnataka, yet based on only local produces. Most part of Coorg is rainforest and has ample supply of wild boar, which became the favoured meat, and Pandi (pork) curry is the most popular dish. Bamboo shoot is another local favourite and is one of the rare locations in southern India where it is eaten.

Lower areas in the region grew rice, and all staple naturally was made with rice, including Akki Otti (rice roti), Kadambuttu (rice steamed dumplings) and Nulputtu (rice noodles).

The rest, you can try and experience on your next trip to Coorg.

A quick cooking tip

Never serve a food unless you are mesmerized with the creation yourself – you must believe in your own instincts.

Catch up with Club Mahindra Madikeri’s Executive Chef Debraj Bhaumik on food, travel, inspirations and his take on Kodava cuisine.

The Atacama Desert is surrounded by the Andes Mountains and Chilean Coastal Range. It is one of the few places in the world with over 300 days of clear skies a year and no light pollution, making it the perfect place for stargazing!

Travel makes you feel refreshed. Being an entreprenuer, I rely on vacations as my way of recharging. I have often found new and innovative ideas coming to me after a good break. That’s because, when your mind is clear, you tend to think clearer I suppose. A relaxed mind draws inspiration from all that’s around. In other words, we learn to live better by taking quality breaks.

From the time we became RCI members in 1993, we have had the opportunity to take such quality vacations across the world. Every year we plan our vacation to some place new. And all this happened because of our RCI membership. We covered Europe—from Denmark to Austria to Budapest to Paris and many more countries. Tahiti Islands (it’s truly a paradise) and Alaska are some of the offbeat destinations we travelled. Japan, Turkey and South Africa are some of the vacations we cherish the most. Truly, this space won’t be enough to mention the countries I have visited—that’s about 140 of them so far.

The journeys I have been on inspired me so much that I have even written a book on it. I ’m grateful to RCI for encouraging me to travel and discover this beautiful world.
