TOPPING:1/4 cup packed brown sugar2 Tbsp. flour1 Tbsp. butter, softened1/8 tsp. cinnamon

In small bowl, rub together topping ingredients until crumbly. Set aside.

MUFFINS:1 1/2 cups flour1/2 cup white sugar1 Tbsp. baking powder1/2 tsp. salt1 egg2/3 cup milk1/4 cup canola oil (or to reduce the fat, use 1/8 cup unsweetened applesauce & 1/8 cup canola oil)3/4 cup finely chopped or shredded apple

Make ItMix dry ingredients. Set aside. Mix wet ingredients. Combine both until just moistened. Do not over mix. Fill greased muffin cups 3/4 full. Sprinkle with topping. Bake in 400º F oven for 15-20 minutes.

Taco Stuffed Sweet PotatoesThese Taco Stuffed Sweet Potatoes are the perfect, filling, healthy dinner recipe! They start with my delicious homemade taco seasoning, some lean turkey, and black beans. Top them the same way you would top your favorite tacos!

Prep Time: 5 mins | Cook Time: 50 mins | Total Time: 55 minsServings: 6 servings

What You Need

3 large sweet potatoes washed and scrubbed3 tablespoons homemade taco seasoning plus 1 teaspoonolive oilsalt and pepper1 pound lean ground turkey or chicken1 15 ounce can of black beans drained and rinsedyour favorite taco toppings

Make ItPreheat your oven to 400 degrees. Line a baking sheet with parchment paper and set aside.Cut your sweet potatoes in half. Rub them with olive oil. Season with 1 teaspoon taco seasoning, salt and pepper. Bake for 50 minutes or until the potatoes are tender. Smaller sweet potatoes will take less time.

When the potatoes are almost done, heat a medium skillet over medium heat. Add a little olive oil or cooking spray. Add the ground meat, breaking it up as it cooks. Add in the taco seasoning. When the meat is almost cooked through, stir in the beans to warm.When the potatoes are done, gently mash the center of the potatoes to separate them. Then spoon the taco filling into them. Top with all of your favorite taco toppings!
