At the onset of a project, builders and architectsshould immediately start thinking about theventilation question. In fact, the question shouldbe addressed when the decision for an openor closed kitchen is made. The best solutionrequires advanced planning. Without it, thereare often regrets later.

If the building requirements allow it, you willprobably choose a traditional air extraction system,which directs cooking fumes outside eitherdirectly or via a ventilation duct. Extraction alsoeliminates odors effectively, but it is importantto design the exhaust air lines as straight aspossible, without any deflection.

If, for constructional reasons, air extractionis not possible, air recirculation, meaning therecirculation of clean air into the kitchen, isdefinitely an option. Today’s recirculation appli-ances offer nearly the same performance asextractors. With the innovative backsplashventilation, a highly efficient recirculation venti-lator is now on the market. Most Gaggenauventilation hoods can be used for both air ex-traction and recirculation.

In both cases, kitchen odors are conductedthrough a highly effective stainless steel greasefilter, which retains the grease particles andprevents the inside of the hood and the exhaustair ducts from deposits. In recirculation mode,an additional activated charcoal filter eliminatesodor particles. All Gaggenau grease filters canbe easily cleaned in the dishwasher. Activatedcharcoal filters need to be exchanged in just afew easy steps approximately twice a year.

Once the decision of air extraction versus recir-culation has been made, there is a variety ofattractive, highly individual and very quiet venti-lation appliances from which to choose. All areperfect in design and function, matching anykitchen style.

The large island hoods hover above the kitchenisland and make a strong architectural state-ment. They come in stainless steel, or matchingthe Gaggenau appliances from the 200 Series,in glass shot-blasted aluminum, resistant to dirtand fingerprints. Most models feature a soft,dimmable halogen light.

The wall-mounted ventilation hoods are also aneye-catcher. Like the island hoods, they comein stainless steel and aluminum with a halogenlight. They provide full power above the frontcooking zones, only if needed.

Another Gaggenau exclusive are ventilationhoods with the Coanda effect, an effect knownfrom aerodynamics. An additional fan on thefront of the hood generates a stream of air thatis directed towards the rear over a cylinder. Thiseffect causes any cooking fumes at the frontof the hood to be more effectively directed intothe filter area.

Visor hoods are an ideal solution for smallspaces. Unobtrusively beautiful and mountedinto the top cabinet, the hood is retractable andextremely quiet. This was one of Gaggenau’searly innovations.

For individual architectural design, fan unitscan be used and built into the kitchen furniture.

However, when it comes to ventilation, Gaggenau’score competence is the truly exceptional down-draft. The simplest of all solutions, but highlyefficient. Integrated into the cooktop, it removescooking fumes where they occur – even whendeeper pots are being used that have their lidsleft open slightly. Available in aluminum andstainless steel, downdrafts match the cooktopsfrom the Vario 200 and 400 Pro Series.

The Vario 200 Series also features a directventilation system with an extendable swivel armthat automatically moves to the desired height.At its highest setting, the arm can be turned90 degrees in both directions. Once the appli-ance is switched off, it automatically retractsinto the cooktop.

All downdrafts use air extraction systemsand are operated with a remote fan unit, whichcan be installed outside the kitchen.

The new, attractive and highly efficient airrecirculation solution is the Gaggenau backsplashventilation, a sculpture for the cooktop. Greasesplashes and cooking fumes are extracted rightbehind the cooktop, leaving ample headroom.The backsplash ventilation also offers an elevatedworkspace for serving dishes or preparingingredients.

Air extraction/recirculation Most Gaggenauventilation hoods can be used both for air extrac-tion and recirculation. In the extraction function,cooking vapors are conducted outside eitherdirectly or via a ventilation duct. In the recircu-lation function, kitchen steam is cleaned by abuilt-in activated charcoal filter. In both cases,the air, which is saturated with grease and odorparticles, first passes through a grease filter.This prevents the inside of the hood and theexhaust air ducts from becoming coated withdeposits. In the air recirculating version, in whichno air is conducted outside, the odor particlesare absorbed by an additional activated charcoalfilter. This filter needs replacing about twice ayear – a simple operation with all Gaggenau re-circulation ventilation appliances.

Backsplash ventilator An attractive solution,especially for a cooking island. The headroomis unrestricted because grease splashes andcooking fumes are extracted directly behind thecooktop. The hood’s housing offers additionalworkspace to place ingredients and plates withineasy reach. The glare-free light fully illuminatesthe cooktop. The efficient recirculation opera-tion with high air extraction performance andlow noise level makes installing exhaust ductsand calculating air line is unnecessary. Thecentrifugal grease filter expels grease particlesfrom the exhaust air and collects them in driptrays. The filters and trays can be easily accessedwhen taking off the front panel and are dish-washer safe. The compact blower housing isinstalled on the bottom of the lower cabinet,leaving ample storage space. The activatedcharcoal filter in the fan housing absorbs odorsbefore the cleaned air gets released throughan opening in the cabinet’s toe kick.

Centrifugal grease filter The exhaust air is heavilyrotated several times so that grease particlesare expelled efficiently. The filter elements canbe cleaned in a dishwasher.

Grease filter satuaration indication When thegrease filler is due for cleaning, a light on thecontrol panel blinks, acting as a reminder. Thiskeeps the filters from becoming too soiled,which can increase the noise level and decreasethe effectiveness of the hood.

Intensive mode Three power settings and anadditional intensive mode can be activated viaindividual control buttons or knobs. Dependingon the model, the intensive mode automaticallyswitches back to the previously selected settingafter three, five or ten minutes of operation.

Interval ventilation When this is activated, thehood automatically switches to the previouslyselected output level for five minutes everyhour. As a result, fresh air can be fed into theroom in the event of prolonged absence.

Remote blower Downdraft ventilation unitsoperate with a separate remote blower. Depend-ing on their design, the remote blower can bebuilt into kitchen furniture, or installed in anotherroom (in a pantry, cellar or loft) or outside (in awall or roof). All the functions are controlled viaa connection cable.

Sealing flaps In the 400 Pro Series cooktopventilation, the suction opening is covered whennot in use. When the ventilation is switched off,the flaps remain open for a few seconds whilethe fan is shutting down.

Soft-Light The Soft-Light illumination of thecooking zones automatically goes on and offgradually, and can be dimmed manually frombright illumination of the cooking zones toatmospheric background lighting.

Stainless steel grease filter With Gaggenauventilation hoods, the air which is saturated withgrease and odor particles first passes through agrease filter. This prevents the inside of thehood and the exhaust air ducts from deposits.The stainless steel filter can be easily removedand cleaned in the dishwasher.

Coanda effect An additional fan on the front ofthe ventilation hood generates a stream of airthat is directed towards the rear over a cylinder.This effect, known from aerodynamics, causesany cooking fumes in front of the hood to bemore effectively conducted into the filter area.The Gaggenau AH 600 ventilation hood, forexample, is as effective at level 3 as many otherappliances are in intensive mode.

Delayed shut-off This function allows you to setthe ventilation to run on for an additional tenminutes after use on any setting, before automati-cally switching itself off.

Downdraft A very interesting and effective alter-native to classic ventilation hoods. The down-draft is integrated directly into the countertopand extracts cooking vapors where they occur.Even the steam from taller pots is effectivelyremoved if the lid is left open slightly to the sidetowards the ventilation. If you want clean linesand unrestricted headroom in your kitchen, it isdefinitely the most unobtrusive option. Thedesign of Gaggenau downdraft ventilation unitsmatches the appliances from the Vario 200and 400 Pro Series. They are available with orwithout automatic arm positioning and flaps.All downdraft ventilation units operate with sepa-rate remote blower for air extraction.

Extendable swivel arm In the grilling position,the direct ventilation system VL 051 automaticallymoves to a height of 15 3/4”, and in the cookingposition to a maximum height of 15 3/4”. At itshighest setting, the extendable arm can also beturned 90 degrees in both directions. The armcan be moved to any height between these twopositions using the control knob. Once theappliance is switched off it automatically returnsto the central position and retracts into theworktop. A sensor prevents objects from beingcaught in the arm when it is returning to thisposition.
