Toffee Brickle Cookies original recipe makes 42 cookies

2 large eggs 1/2 cup margarine, softened 1 (15.25 oz) package yellow cake mix 1 (6 oz) package toffee baking bits1/2 cup chopped pecans 1 tablespoon water Preheat oven to 350 degrees F. Beat eggs and margarine together in a bowl until smooth. Add cake mix, toffee bits, pecans, and water; stir until batter is blended. Drop tablespoonfuls of batter onto a large baking sheet. Bake in the preheated oven until golden brown, 15 to 17 minutes. Allow cookies to cool for 5 minutes before removing from baking sheet.

Pineapple ChickenTendersOriginal recipe makes 10 servings1 cup pineapple juice 1/2 cup packed brown sugar 1/3 cup light soy sauce 2 lbs chicken breast tenderloins or strips skewersIn a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Macaroni Salad original recipe makes 10 servings2 cups macaroni 2 (6 oz) cans tuna, drained 1 onion, chopped 1 green bell pepper, chopped 2 stalks celery, chopped 2 tablespoons garlic powder 1 1/2 cups mayonnaise 2 tablespoons prepared mustard salt to taste ground black pepper to taste Cook noodles in a large pot of boiling water until al dente.

Slice apples in half from top to bottom and scoop out the cores using a knife or melon baller. If you have an apple corer, core them first, then slice. Place each apple half flat side down on a small plate. Dab peanut butter on to the back of the ‘lady bug’, then stick raisins onto the dabs for spots. Use this method to make eyes too. Stick one end of each pretzel stick into a raisin, then press the other end into the apples to make antennae.

Rinse under cold water, and drain. Mix tuna, onion, bell pepper, celery, garlic powder, mayonnaise, salt and pepper, and mustard together in a large bowl. Add pasta, and mix well.

grass and Fiddlers’ Jamboree in Holla-day. On Memorial Weekend you can head on down to Big Sandy to visit with everyone at the Spring Festival. Every 4th Saturday of the month from April to October, you can join the Legend Cruisers to enjoy a Cruise In. Or the first week-end in June you can have the opportu-nity to weave bas-kets at the annual Weave-In presented by the West TN Basket Guild. The first Saturday in August will be the Waterfowl Festival in Big Sandy. On Labor Day week-end you can shop for trinkets and treasures at Bargain Highway which is a 30 mile yard sale. The third weekend

in September will be the Eva Beach Music Festival. Rounding out the year will be the Magic Valley Christmas Parade will be the 2nd Sat-urday in December. “Get Your Sham-rock On” at this year’s Irish Day Celebration in Erin, Tennessee. This year’s theme is definitely a fun one and all of Houston County will see to it that you have the best St. Pat-rick’s Day ever! The 2016 Irish Day Celebration begins Friday, March 11th and runs through Saturday, March 19th.

There is no better way to kick things off than with a big hearty breakfast. The Irish Day Celebration Kick Off Breakfast will be held at 9am, Friday, March 11th at Erin City Hall. This will be a special day for one Houston County resident - he or she will be named the Lord High Mayor - the official host of the Irish Day Cel-ebration. The Lord High Mayor is an honor bestowed on a member of the community that has made significant

contributions to Erin and Houston County.

Hopefully, Satur-day, March12th, will be a beauti-fully clear and almost warm day. The Irish Day Cel-ebration has a lot of outside activi-ties planned! The morning begins with the 10th An-nual Bass Tourna-

ment at Danville Lake. Check in for this event begins at 6am. A foul weather date has been scheduled for March 26th. Want to stay on dry land, then get a team together for the Rotary Golf Tour-nament at Paris Landing State Park. No waiting around, the shotgun start begins promptly at 8am. Not into fishing or swinging a club, no wor-ries the “Get Your Shamrock On” 5K at will begin at 9am. The proceeds from this run/walk

will benefit the Irish Firefighter’s Benevolent Asso-ciation.

The carnival comes to town on Tues-day, March 15th! You will find all of your favorite rides, games and carni-val food vendors in downtown Erin on Front Street. Wednesday and Thursday nights,

March 16th & 17th, are Family Night with special discounts for the entire family and Dollar Night is on Friday, March 18th. The carnival will remain open until Saturday, March 19th.

The Red River Breeze Celtic concert will also be held on Tuesday evening, March 15th. The concert, sponsored by the Houston County Arts Council, will feature classic Celtic hymns and anthems and will

set the perfect tone for St. Patrick’s Day. The concert will begin at 7pm at the Erin United Methodist Church on Spring Street and there is no charge for admis-sion.

Good food is always part of any Irish Day Cel-ebration. The Irish Potato Bar will be

open at 11am, on St. Patrick’s Day, Thursday, March 17th at Signature Health Care on Rocky Hollow Rd., in Erin. The cost is only $6 and includes a huge baked potato and all the delicious trimmings like cheese, bacon, sour cream, butter and more. That evening Solid Gospel 105.1 will sponsor the Homecoming Jubi-lee - Gospel Sing-ing at Yellow Creek Baptist Church. The concert is free to the public and will begin at 6:30pm.

The Irish Banquet and Auction will begin with a social hour at 5pm and dinner at 6pm, on Friday, March 18th, at the Hous-ton County High School Forum. This is a grand occasion to get dressed up and go out on the town and enjoy a delicious din-ner. You may also have the chance to take home some unique items from the silent or live auction. This event is sponsored by the Houston County Area Chamber of Commerce and tickets are avail-able in advance for $25 at the Erin City Hall. Also, on Fri-day evening there will be live music on Front Street at the Perdue Acous-tics Show Grounds,

The Irish Day Celebration will end with a ton of activities going on all around Erin on Saturday, March 19th. Start the day off with pancakes! The Erin United Methodist Church, on the corner of Spring Street and Walnut will serve from 6:30am to 10 am, $6 per plate. They will also have a donut and hot chocolate cart rolling up and down Main Street from 9am to 11am. The Erin Nazarene Church, located on Main Street, will serve pan-cakes from 7:30am to 9:30am. Each person is asked to give a $5 dona-

tion for breakfast. Beginning at noon the Methodist Church will hold an old-fashioned fish fry and serve hot, delicious Fried Catfish with all of the fixings and a cold drink for $6. The Irish Day Celebration gets revved up into high gear with their fa-mous parades. The Leprechaun Parade is just for the little Houston County boys and girls. Cute costumes and mini-floats pulled by hand line the street and have everyone cooing at the adorable-ness. The Lepre-chaun Parade will line up at the Erin Nazarene Church, judging will be-

gin promptly at 10:30am, no late entries allowed. Following the Lep-rechaun Parade will be the Irish Day Celebration Grand Parade. Line up and judging begins at 10am, the parade rolls out at 11am. Main Street will be filled with a sea of green when the Grand Parade takes over downtown Erin. The street closes at 10am so get there early to get your special spot.

The Class of 1966 will be celebrat-ing their 50th high school reunion at the Shamrocks & Shenanigans on the Court Square. All classes are welcome to join in

this festive event and reunion of old friends. The reunion and visita-tion will be from 10am to 4pm, Saturday, March 19th. The Houston County Archives will also be open to the public all day. The Archives are located on the lower floor of the Courthouse, on the square, in Erin.

The Irish Day Cel-ebration literally ends with a bang at the Demolition Derby. This even takes place at the Perdue Acoustics Show Grounds and is sponsored by the Houston County Fair Board. The gates open at 10am and the Derby starts at 3pm. The

Derby lasts as long as it takes to get to the last car still running!All throughout the day, on Saturday, March 19th, the Irish Day Celebra-tion will feature live music and entertainment on the various stages around downtown Erin. There will also be restaurants open and ready to serve you, as well as, all kinds of food vendors on the street. Recently I’ve noticed that people are buying used boats, motors and trailers and are not having them checked out by a professional or

closely inspecting the items them-selves. This can result in costing a person a whole lot of money. You should do this just like you do when

you purchase a car. You could save yourself a lot of time, effort and dollars by taking the boat, motor and trailer to a shop in your neighborhood and have it checked out.

A few things that a person can do on his own is to check out the trailer by just jacking up the wheels and

spinning the tires. Listen for noisy bearings in the wheels. Also, make sure the wench works properly. Have them hook up the lights to make sure they work and make note of any visible signs of rust.

When checking out the boat, take a piece of hard plastic or a small

hammer and tap on the transom. If it has a hollow sound to it that means the transom is bad and that is a very expensive repair. A good transom has a solid sound when tapped on. Check the floor for soft spots. A soft spot means the floor is worn out and that, also, can be a costly repair.

As far as the motor is concerned, un-less you are a pro-fessional, it really should be taken to a reputable shop in your neighborhood. A pro will know that the compres-sion and the cyl-inders need to be double checked. If the compression is uneven or you have a bad cylinder your are talking about a motor that needs to be rebuilt. That can cost you major

bucks. A good boat mechanic will also know to check the electrical system, too. It is important that the spark plugs are all firing cor-rectly and that the alternator is doing its job. Some elec-trical components for boat motors can cost hundreds of dollars.

Any boat that you purchase should be taken to the lake and test run to make sure every-thing is shifting and running prop-erly. Make sure all components like gauges, pumps and the electrical sys-tem are functioning as they should. Too many people run the motor on a hose thinking that shows that everything is OK. A motor can run on a hose

but not run on the lake because of a major problem. Always lake test the boat, things show up when you are on the water that doesn’t show up when you’re running on a hose. Not only is it bet-ter to be safe than sorry but it can also

save you a lot of money.

There is only one place in the entire world that you can find more than 10,000 pounds of delicious golden fried catfish! That is in Paris, Tennes-see at the World’s Biggest Fish Fry! It takes more than

a couple of little hushpuppies to be classified as the World’s Biggest Fish Fry, but don’t take our word for it - come find out for yourself! The Paris Henry County Jaycees want you to know that the

World’s Biggest Fish Fry is always held the last week in April. Fish Fry events this year will run from Sat-urday, April 23rd to Sunday, May 1st. Just try to imagine how many differ-

ent fun things that you would like to squeeze into a week and the Jay-cees have done it. There is a carnival, a concert, not one but two dances, a parade, a rodeo, a demolition derby, arts and crafts and,

of course, tons of food, literally!

The 5K Hushpuppy Dash starts every-thing in motion. Registration begins at 7am, Saturday, April 23rd, at Henry County High School. The race

begins at 8am and the entry fee is $20. You may pre-regis-ter at the Fish Fry Headquarters lo-cated on East Wood Street. The charge for pre-registration is only $15. The action moves

to the Henry Coun-ty Fairgrounds that evening for the Fish Fry’s Demoli-tion Derby. The smash up begins at 7pm. The Derby entry fee is $40 with various prizes awarded. Admis-sion to the Derby is

$10 for adults, $5 for children 6-10, and 5 and under are free with an adult admission. Downtown Paris has always been the home of the Kick-Off/ Street Dance. The stage is

set up on the Court Square and the music is blaring for everyone to dance to. This years featured performer is the Ray Lewis Band, everyone’s favorite local band. Admission is free and the music begins at 7pm, Monday April 25th. Bring a lawn chair or bring your dance partner, either

way you are sure to have a dancing good time. There will be more dancing at the Henry County Fairgrounds on Tuesday night. The Country Dance, sponsored by WMUF, is held indoors and the admission is $5. Enjoy the good old time country

music you remem-ber from when you were young. Sit a spell and then dance a spell, enjoy refreshments and visiting with you friends. The carnival opens on Tuesday night at the fairgrounds! Everyone loves the Tilt-A-Whirl and the Swings, along with the games and

prizes. And who doesn’t want to eat at least one foot long corn dog with a cold lemonade? Carnival hours are 5pm to 11pm Tuesday, Wednes-day and Thursday; 11am to midnight on Friday and Saturday; and 1pm to 6pm on Sunday. The carnival al-ways offers special family deals and bracelet nights, so check the Fish Fry book for those days and times. Dinner is served starting on Wednes-day night! The Fish Tent opens at 5pm with a few remarks from this year’s General Manager, Loria Plunk, the introduction of the Jaycees President and the tossing of the first hushpuppy by the Hostess Princess. Just to clear up any confu-

sion, the “fish tent” is the traditional name of where the fish is served, a throw back to the early Fish Fry days. The fish is actu-ally served in the new, clean and air conditioned com-mercial building at the Henry County Fairgrounds. Adults pay $12, and children, ages 6 to 12, pay $8 for all-you-can-eat catfish, french fries, white beans, cole slaw, hush-puppies and soft drinks! Fish tent hours are Wednes-day and Thursday, 5pm to 9pm; and Friday and Satur-day, 11am to 9pm. This year’s Fish Tent is sponsored by Holley Credit Union. There is also a Chris-tian Concert on Wednesday night. Enjoy the music and testimony of Daniel Doss at the

Henry County Fair-grounds. Admis-sion for everyone is $5. The IPRA Rodeo starts on Thursday night and, best of all, it is the AT&T Family Night! Everyone gets in for only $5. Enjoy the action of bull riding, bronc riding

and barrel racing in the Main Arena at the Henry County Fairgrounds. The rodeo runs, Thurs-day, Friday and Saturday nights, beginning at 7:30pm. Admis-sion on Friday and Saturday is $10 for Adults and $8 for children, ages 6 to 12. The Arts & Crafts Show also begins on Thursday night in the Enoch Building at the Fairgrounds. Arts & Crafts Show hours are Thursday, 5pm to 8:30pm; Friday and Satur-day, 10am to 8:30 pm. Friday of Fish Fry week is usually known as “Fish Fry Day” because of all of the big events going on. The big-gest of those being the Grand Parade.

Literally thousands of people visit Paris just to see this premier event. Pro-fessionally decorat-ed floats, marching units, high school bands, decorated cars, trucks and boats are just a few of the highlights of the Grand Parade. The parade has nearly 100 entires

and runs almost the entire length of East Wood Street in Paris. There are plenty of excel-lent places to view the Grand Parade, but you do want to come early before the streets close at 9am. The parade rolls out after float judging at 10am, Friday, April 29th. Another big day during Fish Fry week is Saturday. Some of the big events move back to Downtown Paris. The popular and most-adorable Small Fry Parade begins at 10am. The Small Fry Parade is made up of Henry County’s young people. They are in beauti-ful costumes and ride in wagons or on small floats that can be hand-pulled.

They all march around the square and are simply the cutest thing you will ever see. Immediately fol-lowing the Small Fry Parade are the world famous Catfish Races, held on the Courthouse lawn. Special water lanes are set up so catfish can swim for the gold. This is truly an event that has to be seen to be believed. Cheer on your favorite catfish and see who takes home the top prize! All of Henry Coun-ty’s young Anglers head to Williams Lake in Paris to participate in the Jr. Fishing Rodeo. This is open to children up to age 12 and free to the public. Prizes are awarded in many fun categories and age groups. The Jr. Fishing Rodeo gets started at 11am, Saturday, April 30th. How many times can you say that you visited the biggest of anything in the world? Well, it’s easy to do if you come to Paris, the home of the World’s Biggest Fish Fry. played like a Poker Run but with a few twists. It’s easy to get started. The chamber will start selling Registration Packets in June for $20. You will want to pick these up as soon as possible, Registration on the day of the Water Fun Run is $25. In-side of that packet will be everything you need to partici-pate. Like any Poker Run you will have destinations to visit. In the Cham-ber’s Water Fun Run, it is the beau-tiful resorts located around the majestic Kentucky Lake.

But here’s the first twist - you won’t get a card when you stop. Instead, you will have a sheet in your regis-tration packet that you will you use to collect stamps or stickers. The more destinations you visit, the more stamps or stickers you get. Now, here is the next twist, when you check in at the final desti-nation the “pro-fessional” poker dealers will shuffle their deck of cards with precision and deal you the num-ber of cards that match the number of resorts you vis-ited. You can draw

up to 10 cards, if you visit all of the stops, find the “party boat,” and buy an extra card, that is available at the final checkin. From those 10 cards will you will pick five to create your best hand. Sounds easy right? You just have a 649,739:1 odds of drawing a Royal Flush, the best poker hand pos-sible! ANNUAL EVENTS:Freedom Fest, an Independence Day celebration, is Murray’s oldest and most popular festival. Taking place on July 4, the event includes a parade, fireworks, free concerts, kid’s activities, the Veteran’s Remem-brance Ceremony and more. As the summer weather begins to cool, locals look forward to one of their favorite events: the Ice

Cream Festival. What could be better than free ice cream? Four different coolers on the court square serve dozens of different unique flavors of ice cream. The event has plenty for the kids to do, with inflatables, a kara-oke contest, a car show and other fun activities.

Every Saturday in May through Octo-ber, Murray’s court square is filled with local farmers and vendors for the Downtown Fam-ers Market. Warm summer mornings are the perfect time to browse the square, catch up with friends and neighbors, and buy produce for the

week. The market also offers items like fresh breads, pies, meat, flowers and handcrafted items.

KENTUCKY LAKE:Murray is only a short drive from Kentucky Lake and Land Between the Lakes, one of Ken-tucky’s top tourist destinations. Ken-tucky Lake is per-fect for an outdoor adventure such as boating, kayaking,

It may be too early to think about what you are going to do on the Fourth Of July. The folks in Murray, Kentucky, think about that big day all year long. Independence Day is on a Monday this year so cap off a nice long weekend spending the day at Murray’s Freedom Fest 2016.

Freedom Fest has a full day of ac-tivities planned. Beginning at 7am, the Primary Care 5K Run will kick off the day with a fun Run/Walk at the Primary Care Medical Center in Murray. Register early so you can wear your tee shirt for the run and be ready to go when

the race begins. Freedom Fest is all about celebrating the independence and freedom of America. That would not have happened without the sacrifice of our men and women in the military. There will be a Veteran’s Remembrance Cer-emony at 7:30am,

in Chestnut Park. Music and testimo-nies will mark this special occasion as one to never forget. Honor the work of our service men and women and remember those that have made the ultimate sacrifice at the Veteran’s Remembrance Cer-emony. Briggs and Stratton will again partner with the Murray Tourism Commis-sion and Freedom Fest to host the Main Street Mile run. The Main Street Mile will be-gin at 8:45 am and line up at Sparks Hall on the campus of Murray State

University. There will be awards giv-en in many differ-ent age categories for the best timed runs. Put on your running shoes and see how you stack up against others in your age category or come out and cheer on your fa-vorite sprinter! The Briggs and Stratton Main Street Mile is sure to get your adrenaline flowing! You just can’t celebrate Indepen-dence Day without having a Grand Parade! Murray’s Freedom Fest has one of the grandest parades you will find in any com-munity in north-

west Tennessee or southwest Ken-tucky. The FNB Bank Freedom Fest Parade makes its way down Main Street in Murray starting at 9:30am. The parade always features a patri-otic theme and is chock full of floats, decorated cars, marching units, beauty queens and local dignitaries. If you’re not in the parade you will definitely want to attend. Come early and bring a lawn chair to secure a good spot and set-tle in for viewing the big event. They close the streets early so keep that in mind when trav-

eling to the parade. The young and the young at heart all enjoy a festive pa-rade and the FNB Bank Freedom Fest Parade will never disappoint! Stewart Stadium, on the MSU cam-pus, is the home of the Top Gun Cruise-In Car Show. This is an excellent opportu-nity to see the clas-sic cars and trucks along with the new detailing features of modern vehicles. Check out the restoration projects that take years and the new paint, rims and wheels of the newer models. Big sound systems are always a hit and new car accessories are always popu-lar, too. The Top Gun Cruise-In Car Show is from 4pm to 9pm on Monday, July 4th, at Stewart Stadium in Murray. The Murray Bank Family Night is a highlight of Free-dom Fest. This year will be no exception. Central Park will be filled with all kinds of fun for everyone in the family. You will find a petting zoo with animals, big and small, for the little ones to visit. Premier Exhibi-tions, Inc. has an-nounced that Bod-ies Revealed will be on display at Discovery Park of America in Union City, TN, through May 1, 2016.

Discovery Park of America is one of this nation’s newest attractions, opening on November 1st, 2013 in this rural Northwest Tennes-see town. The park recently celebrated its 570,000th visi-tor in just over two years. CEO Jim Rippy said that

founder Robert Kirkland would be thrilled with Bodies Revealed being on display at Discovery Park. “Our mission is education, and this is one of the most fascinating exhibits I have ever seen, “Rippy said.

Bodies Revealed will provide the public with an opportunity to see inside care-fully preserved real anatomical speci-mens and learn the detailed structure and function of the

human body. The Exhibition takes visitors through galleries providing an up-close look inside the skeletal, muscular, repro-ductive, respira-tory, circulatory and other systems of the human body. Many of the whole body speci-mens are dissected in vivid athletic

poses, allowing the visitor to relate to everyday activi-ties. In addition, authentic human specimens illustrate the damage caused to organs by over-eating and lack of exercise. A healthy lung is featured next to a black lung ravaged by smoking in a vivid comparison more

powerful than any textbook image.

The human body specimens in the exhibition are preserved through a revolutionary technique called polymer preserva-tion. In this pro-cess, human tissue is permanently preserved using liquid
