Executive Pastry Chef:Brendan DewarBrendan Dewar has been at the forefront of the pastry cooking industry in Australia for the past 10 years. Having led several of the city’s top pastry teams, Dewar was invited to devise the menu for the now hugely-popular Lindt and Sprungli Café in Martin Place. !ere he worked along-side world-renowned French pastry chef Pierre Herme, whom Vogue Maga-zine dubbed the Picasso of Pastry. Brendan is an incredibly passionate and intense chef who creates artfully-constructed, colourful cre-ations including pyramid-shaped folds of basil mousse with wild strawberry or lemongrass bavarois and every morning you will "nd the crowds queuing for his piled high of danishes, croissants, pain au chocolat, palmiers and brioches!

He also visits some of the most renowned bake houses, patisseries, chocolatiers, ice creameries and restaurants in Australia. What is Pastry Perfection?

In each episode, Pastry extraordinaire and one of Australia’s leading Pastry chefs, Brendan Dewar of Sydney’s renowned Bacco Pasticceria & Wine Bar, shares his passion and philosophies creating the !nest pastry products as he meets the cra"smen & women who create them.Pastry is much more than lamingtons and custard tarts… the art of pastry transforms ingredients into a world of sweet exotica; wonderful textures and #avour fusions – constructed into works of ultra-chic, edible works of art.Pastry Perfection will provide an insightful journey into the wonderful world of pastry; the series will be fresh, interesting, educational and exciting. To this end, each episode of Pastry Perfection will each feature an Aussie artisan from one of the establishments Brendan Dewar visits. We will immerse Brendan into the culture of the establishment, provide a back-story about the artisan and share the experience of pastry cooking with them.

Pastry Perfection explores the art of pastry cooking and travels across Australia to discover the talented and passionate artisans & pastry chefs from some of Australia’s most renowned bake houses, patisseries and restaurants.Lifestyle video website Wine.Food.Hotel has partnered with Sony to launch a dedicated Internet TV channel on the media giants new IPTV platform. $e Wine.Food.Hotel TV channel showcases inspiring, entertaining and informa-tive videos from leading chefs, winemakers and hoteliers while unearthing exciting and interesting new travel destinations in Australia, New Zealand and across the globe. It˙s an exciting partnership with Sony and Food.Wine.Hotel sits alongside brands such as YouTube, Billabong, SBS, ABC, Tom Ford and a host of others.

!e process

Producing the video includes initial consultation with Brendan to discuss how your product can be developed into your next signature dish – what it could be, what it would look like; including prototype sampling previews.

#e six-minute video will be planned and !lmed with high production values and !lmed on location at the beautiful Bacco Pasticceria, the Bacco Pastry School, or the featured artisan’s own kitchen; this is where your product will be cra"ed into one of the Pastry Perfection’s signature dishes.
