Spring Facts

Spring is in the air! Here are

some interesting and little known

facts about our amazing plant friends.

The giant water lily Victoria Regia has leaves so large and buoyant that one can support the weight of a small child, like a raft. The leaves grow as large as eight

feet across.

By being as much as 25 degrees warmer than its surroundings, the feverish skunk cabbage melts its way to the surface of

snow.

The yellow evening primrose opens only at dusk, and so quickly that it can be seen and heard. The buds sound like

popping soap bubbles.

Peace Corps Week

Peace Corps Week starts March 1st. More than 50 years ago, John F. Kennedy, then a Senator, asked Americans to willingly serve their

country by giving two years of their life to the service of others. Since 1961, over 180,000 have served as volunteers promoting peace and friendship throughout the world.

Time for March Madness! See if you can match these basketball teams with their cities.

Canola oil cooking spray

1-3/4 cups oats

2 tablespoons brown sugar

1 cup all-purpose flour

1/2 cup sugar

1 tablespoon baking powder

1 cup skim or 1% milk

1 egg, lightly beaten

3 tablespoons canola oil

1 teaspoon vanilla extract

3/4 cups fresh raspberries

Preparation:

Preheat the oven to 400ºF. Combine 1/4 cup

of the oats and the brown sugar; set aside. In a

large bowl, combine 1-1/2 cups oats with flour,

sugar, and baking powder until well mixed. In

a small bowl, mix milk, egg, oil, and vanilla;

add to the dry ingredients in the large bowl.

Stir until moistened, but don’t over mix. Then

stir in the raspberries. Spray the muffin tin

with canola oil, and divide the batter among

the muffin cups; sprinkle with the oats-brown

sugar mixture. Bake 20 minutes, or until

golden brown. Enjoy!

Have you heard the expression, “It’s in the air”? Some people hypothesize that ideas are somehow floating around “in the air” and that’s why more than one person thinks of an idea at the same

time. The telephone is a good example. Did you know that another man invented a telephone at the exact same time as Alexander Graham Bell? The other inventor’s name was Elisha Gray and he applied for a patent for his invention that could transmit speech electronically within hours of Alexander Graham Bell’s request.

Spotlight Resident

from Allenbrooke Health Care Mrs. Margaret Crawford is the Allenbrooke Spotlight Resident for this month. Before coming here she worked for years as a cake decorator at Kroger. Mrs. Crawford’s favorite thing now is visits from her son and beautiful 10 year old grandson. Next to that she enjoys reading the Bible and watching old movies. Her favorite activities here are Bingo, Cooking Class, and Arts and Crafts. She has taken part in the Senior Olympics every year and said that it is her favorite community event because she gets to dress up and compete with the other facilities in the area.

Before moving here 8 years ago, she lived alone and it was hard, especially if she fell or was not feeling well as she had no phone to get help and was in pain all the time. Since coming here, she is no longer in pain, gets to do things with other people, and gets help when she needs it. “All of the nurses and aides have made my life so much better and happier.” We would like to thank Mrs. Crawford for always being positive and having nice things to say about everyone.
