The correct temperature

86

It is very important to set the correcttemperature for storing food in theappliance. Bacteria will cause foodwhich is not stored at the correcttemperature to deteriorate rapidly.Temperature influences the growth rateof these microorganisms. Reducing thetemperature reduces their growth rate.

The temperature in the appliance willrise:

– The more often the door is openedand the longer it is kept open.

– The more food is stored in it.

– The warmer the food is which isbeing put into it.

– The higher the ambient temperatureof the refrigeration appliance. Theappliance is designed for use withinspecific ambient temperatures(climate range). Do not use it inambient temperatures for which it isnot designed.

... in the fridge zone and in theMasterFresh zoneWe recommend a temperature of 4 °Cin the fridge zone.

The temperature in the drycompartment of the MasterFresh zoneis regulated automatically and ismaintained at approx. 2 °C at a fridgezone temperature of 4 °C.

Please note that if the temperature inthe fridge zone is any warmer, thetemperature in the dry compartment ofthe MasterFresh zone will rise as well.

This is also the case if you switch onthe Eco mode and Holiday modefunctions, for example.

Automatic temperature distribution(DynaCool)

The fan switches on automatically whenthe cooling system for the refrigeratorswitches on. It distributes thetemperature in the appliance to all areasmore evenly so that all the food ischilled to about the same degree.

The correct temperature

87

... in the freezer zoneTo freeze fresh food and to store frozenfood for long periods, a temperature of-18 °C is required. At this temperaturethe growth of micro-organisms isgenerally halted. As soon as thetemperature rises above -10 °C, thebacteria become active in the foodagain so it cannot be kept as long. Forthis reason, partially defrosted ordefrosted food must not be refrozen.Food may be refrozen once it has beencooked, as the high temperaturesachieved when cooking destroy mostbacteria.

Setting the temperature Touch the  sensor for setting the

temperature.

The previously set temperatures of thefridge and freezer zones are displayed.

Use the and sensors to selectthe temperature zone for which youwant to adjust the temperature andtouch OK to confirm your selection.

Use the and  sensors to set thetemperature. Keeping your finger onthe sensor changes the temperaturecontinuously.

Useful tip: The newly set temperaturecan also be confirmed and adopted byclosing the appliance door.

The temperature display always showsthe required temperature.

If you have adjusted the temperature, wait for approx. 6 hours if theappliance is not very full and forapprox. 24 hours if the appliance isfull before checking the temperaturedisplay. It will take this long for therequired temperature to be reached.

If, after this time, the temperature isstill too high or too low, adjust itagain.

Adjusting the temperature in the drycompartment of the MasterFreshzone

The temperature in the drycompartment of the MasterFresh zoneis maintained at approx. 2 °C.

However, if you would like it to becolder, e.g. when storing fish, you canadjust the temperature in the drycompartment to make it slightly lower:

Open the upper appliance door.

Fully remove the dry compartment(see “Adjusting the interior fittings -Removing compartments in the fridgezone”) or pull it out as far it will go.

There is a temperature regulator on therear wall of the fridge zone. You can usethis to adjust the temperature in the drycompartment slightly.

The temperature regulator is set to the“cold” position at the factory.

Using the refrigerator efficiently

98

Different storage zonesDue to the natural air circulation thereare different temperature zones in therefrigerator.

Cold, heavy air sinks to the lowestsection of the appliance. Make use ofthe different zones when placing food inthe appliance.

Useful tip: To allow air to circulateefficiently, do not pack food too closelytogether in the refrigerator.

If there is insufficient air circulation, the cooling performance willdecrease and energy consumptionwill increase.Do not cover the fan in the rear wallof the appliance.

Useful tip: Do not store food in such away that it touches the rear wall of therefrigerator. It may freeze to the backwall.

This appliance has DynaCool, whichhelps to keep an even temperaturewhen the fan is running. WhenDynaCool is operating, the differencebetween the various zones is lesspronounced.

Warmest area

The warmest area is located in the topsection of the main storage area andthe door. Use this for storing butter sothat it remains spreadable and forcheese so that it retains its flavour.

Coldest area

The coldest area in the fridge zone isdirectly above the MasterFresh zoneand at the back of the appliance. Thetemperature in the dry compartment ofthe MasterFresh zone is even colder.

Use this area in the fridge zone and thedry compartment of the MasterFreshzone for all delicate and highlyperishable food, e.g.:

– fish, meat, poultry

– sausage products, ready meals

– dishes or baked goods containingeggs or cream

– fresh dough, cake mixtures, pizza orquiche dough

– soft cheese and other dairy products

– pre-packed vegetables and otherfresh food with a label stating itshould be kept at a temperature of nohigher than 4 °C.

Useful tip: This compartment is idealespecially for homemade meals, as thegrowth of existing microorganisms isgreatly reduced.

Food which is not suitable forstorage in the refrigeratorNot all food is suitable for refrigerationat temperatures below 5 °C because itis sensitive to cold. Depending on the

type of food, the appearance, consistency, flavour and/or vitamincontent may be altered if stored at toocold a temperature.

Foods which are sensitive to coldinclude:

– Pineapples, avocados, bananas, pomegranates, mangoes, melons, papayas, passionfruit, citrus fruitssuch as lemons, oranges, mandarines, grapefruits

– Fruit which is not yet ripe

– Eggplants, cucumbers, potatoes, capsicums, tomatoes, zucchini

– Hard cheeses, e.g. Parmesan,mountain cheese

Notes on buying foodThe freshness of the food when it is firstplaced in the appliance is the mostimportant factor for how long it staysfresh. Freshness is essential for a longshelf life.Take into account the use-by date andthe correct storage temperature.Time out of the refrigerator, e.g.transporting food in a warm car, shouldbe kept to a minimum.

Useful tip: Take a cooling bag whenshopping, and load food in theappliance as soon as possible.

Storing food correctlyEnsure that food stored in therefrigerator section is in packaging orcovered properly (some exceptionsapply in the MasterFresh zone). This willprevent food smells from affecting otherfoods, food from drying out, and alsocross-contamination of bacteria. This isespecially important when storing meatproducts. Make sure that foods such asraw meat and fish in particular do notcome into contact with other foods.By ensuring that the temperaturesettings are correct and by takingappropriate hygiene measures, you canprolong the storage life of your foodconsiderably.

MasterFresh zoneThe MasterFresh zone provides idealstorage conditions for fruit, vegetables, fish, meat, and dairy products. Foodstays fresh considerably longer whileretaining both flavour and vitamins.

The MasterFresh zone comprises ahumidity-controlled and a drycompartment.

– Depending on the moisture regulatorsetting, the humidity-controlledcompartment is particularly suitablefor storing fruit and vegetables.

– The dry compartment is suitable forstoring perishable foods such asfish, meat, and dairy products. Any type of food can in fact be storedin this compartment, as long as it ispackaged.

Humidity-controlled compartmentwith moisture regulator

The humidity level in the humidity-controlled compartment can beregulated to approximately suit the foodbeing stored. Food retains its ownmoisture if stored at a higher humidityand does not dry out as quickly. Thisallows it to stay crisp and fresh forlonger.

The moisture released by food instorage is kept within the humidity-controlled compartment. The more thehumidity in the humidity-controlledcompartment corresponds to the food'sown humidity content, the crisper andfresher the food will remain over alonger period of time, as the watercontent of the food is largely retained.

The moisture level greatly depends onthe type and quantity of the foodbeing stored, if stored unwrapped.

The temperature in the humidity-controlled compartment isapproximately equivalent to thetemperature in a conventionalrefrigerator.

Remember that the freshness of thefood when first placed in theappliance is the most important factorin determining how long it will stayfresh.

The moisture regulator is used toregulate the amount of moisture in thehumidity-controlled compartment withthe settings  to .

Position of the moisture regulator  = slightly increased humidity

Select the  setting if you store verylarge quantities of fruits andvegetables in the humidity-controlledcompartment. The moisture regulatorpartially closes the vents in thecompartment so that some of themoisture present is retained.

Position of the moisture regulator  = increased humidity

Select the  setting if you store smallto large quantities of fruits andvegetables in the humidity-controlledcompartment. The moisture regulatorcloses the vents in the compartmentcompletely so that all of the moisturepresent is retained.

Useful tip: If the humidity level is toohigh and a lot of moisture collects in thecompartment, select the  setting. If the quantity of food being stored inthis compartment is small, the moisturelevel may be too low. If you are onlystoring a small amount of food, wrap itin airtight packaging.

Increased moisture in the humidity-controlled compartment can, insome circumstances, cause a build-up of condensate.Wipe off any condensate with acloth.

Regulating the humidity level in thehumidity controlled compartment

Slide the moisture regulator to theleft  or right  depending on thesetting required.

Dry compartment with lowtemperature

The temperature in the drycompartment is maintained at -1 to3 °C. While lower than the temperaturein a conventional refrigerator, this is theoptimum temperature range for storingfresh food which is not sensitive tocold.

As the shelf life of the food isextended at this temperature, foodcan be stored considerably longerwithout loss of freshness.

The humidity level is similar to that in aconventional refrigerator.

Useful tip: This compartment is idealespecially for homemade meals, as thegrowth of existing microorganisms isgreatly reduced.

The dry compartment is ideal for storingperishable foods such as:

– Dairy products such as yoghurt, cheese, cream, quark etc.

– Deli salads

– Meat, poultry, sausages

– Fresh fish, shellfish and crustaceans

– Any type of food can in fact be storedin this compartment, as long as it ispackaged.

Please note that foods rich in proteindeteriorate faster than others.Shellfish, for example, deterioratesfaster than fish, and fish deterioratesfaster than meat.

For hygiene reasons, always keep thesefoods covered or wrapped in thiscompartment.

In addition, wrapped or covered food isprotected against drying out.

Storing food in the MasterFresh zone

103

If you are not satisfied with your stored food (for example the food wilts orbecomes limp after only a short storage time), ensure the following:

Only place fresh food in the appliance. The initial condition of the food is crucialto maintaining freshness.

Clean the MasterFresh zone before storing food in it.

The surface of very moist food should be dried before storing it in the humidity-controlled compartment.

Do not store food which is sensitive to cold in the dry compartment (see “Usingthe refrigerator efficiently - Food which is not suitable for storing in therefrigerator”).

Allocate the appropriate setting to the food you wish to store (e.g. humid or drystorage).

Store food loose in the humidity-controlled compartment.A high humidity level in the humidity-controlled compartment is achieved by themoisture present in the food being stored. If the humidity level is not high enough (e.g. too little food is being stored), it canbe increased by placing a damp sponge in the drawer.

If you think that the temperature in the dry compartment is too high or too low, adjust the temperature in the fridge zone (see “The correct temperature - Settingthe temperature”). If ice crystals start to form on the floor of the drycompartment, increase the temperature as otherwise the cold temperature willdamage the food.

If too much water collects at the bottom of the humidity-controlledcompartment, dry it with a cloth. If necessary, dry food before placing it in theappliance or place a rack at the bottom of the humidity-controlled compartmentto allow water to drain off.

Freezing and storing food

104

Freezing fresh foodFresh food should be frozen as quicklyas possible so that the nutritional valueof the food, its vitamin content, appearance and flavour are maintained.

Food which takes a long time to freezewill lose more water from its cells, which then shrink. During the defrostingprocess, only some of this water isreabsorbed by the cells. In practice thismeans that the food loses moremoisture. You can see this in the largeamount of water that collects aroundthe food when it defrosts.

If food is frozen quickly, the cells haveless time to lose moisture, so theyshrink less. As there is much lessmoisture loss, it is easier for the food toreabsorb it during defrosting, and verylittle water collects around the defrostedfood.

Storing frozen food

Never refreeze partially or fullydefrosted food. Defrosted food mayonly be refrozen after it has beencooked.

When buying frozen food to store inyour freezer, make sure to check:

– that the packaging is not damaged

– the use-by date and

– the temperature at which the frozenfood is being stored at the store.

The length of time food can be keptis reduced if it has been stored at atemperature warmer than -18 °C.

Buy frozen food once you havefinished the rest of your shopping, and wrap it in newspaper or use acooler bag or cool box to transport it.

Home freezing

Only freeze food which is fresh andin good condition.

Tips on home freezing

– The following types of food aresuitable for freezing:Fresh meat, poultry, game, fish, vegetables, herbs, fresh fruit, dairyproducts, pastry, leftovers, egg yolks, egg whites and a range of pre-cooked meals.

– The following types of food are notsuitable for freezing:Grapes, lettuce, radishes, sourcream, mayonnaise, eggs in theirshells, onions, whole raw apples andpears.

– To retain colour, taste and vitamin C,vegetables should be blanchedbefore freezing. To blanch, immersethe trimmed and washed vegetablesin boiling water for 2-3 minutes.Remove and plunge into ice-coldwater to cool quickly. Drain and packready for freezing.

– Lean meat freezes better than fattymeat and can be stored forconsiderably longer.

– Separate chops, steaks, cutlets, schnitzel or rolled meat with a sheetof plastic freezer film. This preventsthem from freezing together in ablock.

– Do not season fresh foods orblanched vegetables before freezing.Only season cooked food lightlybefore freezing. The taste or intensityof some spices alters when frozen.

– Allow hot foods and drinks to cooldown before placing them in thefreezer. Placing hot foods or drinks inthe freezer causes food that isalready frozen to partially thaw andincreases energy consumption.

Packaging food for freezing

Freeze food in portions.

Suitable packing material

– Plastic cling wrap

– Tubular polyethylene film

– Aluminum foil

– Freezer containers and bags

Unsuitable packing material

– Wrapping paper

– Grease-proof paper

– Cellophane

– Bin bags

– Plastic shopping bags

Expel as much air as possible frombags etc. before sealing them toprevent freezer burn on food.

Close the packaging tightly with

– Rubber bands

– Plastic clips

– String or bag ties

– Freezer tape

Useful tip: Freezer bags and tubularpolyethylene film may also be sealedusing home heat sealing kits.

Label the packaging with thecontents and the date of freezing.

Before placing food in theappliance When freezing more than 2 kg of

fresh food, switch on the SuperFreezefunction at least 4-6 hours beforeplacing the food in the freezer (see“Using SuperCool and SuperFreeze”).

This helps food which is already storedin the freezer to stay frozen.

Placing food in the freezerFood to be frozen can be placedanywhere in the freezer zone.Place large quantities of food in thelarge freezer basket.

Place the food to be frozen flat in thebottom of the basket so that itfreezes through to the core as quicklyas possible.

Fill the upper freezer basket first asthe food will freeze quickest here.

Make sure that the packaging andcontainers are dry to prevent themsticking together when frozen.

Please follow the guidelines in the ta-ble below regarding recommendedweights for the baskets:

Unfrozen food should not touchfrozen food as this will cause thefrozen food to begin to thaw.

Storage time for frozen foodThe storage life of food varies greatly, even when a constant temperature of-18 °C is maintained. Even in frozenproducts, degradation processes takeplace, only at a much slower rate. Forexample, fat can become rancid fromcontact with oxygen in the air. Leanmeat can therefore be storedapproximately twice as long as fattymeat.

The storage times quoted are guidevalues for the storage life of differentfood groups in the freezer.

Food group Storagetime(months)

Ice cream 2 to 6

Bread, baked goods 2 to 6

Cheese 2 to 4

Fish, oily 1 to 2

Fish, lean 1 to 5

Sausage, ham 1 to 3

Game, pork 1 to 12

Poultry, beef 2 to 10

Vegetables, fruit 6 to 18

Herbs 6 to 10

Where the storage time given on thepackaging differs, follow the advice onthe packaging.

Defrosting frozen food

Never refreeze partially or fullydefrosted food. Defrosted food mayonly be refrozen after it has beencooked.

Frozen food can be defrosted indifferent ways:

– in a microwave oven

– in an oven using “Fan Heat” or the“Defrost” setting

– at room temperature

– in the refrigerator section (the coldgiven off by the frozen food helps tokeep the other food cold)

– in a steam oven

Flat pieces of partially defrosted fish ormeat can be placed directly into a hotfrying pan.

Thicker pieces of meat and fish (e.g.minced beef, chicken, fish fillet) shouldnot come into contact with other foodwhen defrosting. Collect the defrostingliquid and then pour it away, makingsure you wash the container it was in,the sink and your hands.

Fruit should be defrosted at roomtemperature in its packaging or in acovered bowl.

Most vegetables can be cooked whilestill frozen. Just put straight into boilingwater or hot fat. The cooking time isslightly less than that of freshvegetables due to changes in the cellstructure.

Cooling drinks quicklyWhen cooling drinks quickly in thefreezer, make sure bottles are not left infor more than one hour, otherwisethey could burst, causing injury anddamage.
