It was a fantastic celebration of chili. Jeff, Trent and Darin, along with Julie and Tonya, put on an incredible chili weekend. The weather was a little iffy but there was no whining. All the cooks dealt with the rain and had a great time. The cooks’ attitude was also a big help to the Indiana folks trying to give us a good time. We had a widespread group of cooks. In addition to cooks from the Three Is (Illinois, Indiana and Iowa) we had cooks from Michigan (Tom Pardikes), South Carolina (Bill Thomas) and Georgia (the Cobb family). It was a great group. The Indiana Pepper Pod Cookoff on Friday led off the weekend. We had 19 cooks and several lanterns. The rain held off and we had a nice evening to cook chili. However, it wasn’t all that dark at the 9 pm turn-in, so we didn’t lose anyone. Because this was an official Pod cookoff, the winner – Julie Netser – automatically qualified for TICC #50. Jim Weller also qualified on points. On Saturday, the rain started about 6 am and went on all day. But this was the Three-I Regional Championship, so 26 cooks kept dry as best we could and made the most of it. Unfortunately, the rain kept the crowds away so there was very little tasting. The silver lining was that Tonya was able to collect a lot of chili for the Under the Bridge Ministry (Sunday’s charity) to feed the homeless. Saturday’s charity was Miracle Ride, which raises funds for a local children’s hospital. Georgia’s Donna Cobb walked away with an automatic qualification, a Wendell Rankin stove, and the Centers Cup – hope the Cup likes the South. Trent Atwood of Shelbyville, Indiana qualified for chili at TICC, and Jerry Cobb of Woodstock, Georgia, quali- fied for showmanship. And we’re not done yet. Sunday dawned cloudy but turned sunny in time for the Chad Jester Memorial Cookoff. Kim Spencer won first for the first time, over 21 cooks. A perfect end for a great weekend. Plainfield, IN – The Three-I Regional Open Championship and associ-ated cookoffs were held on the weekend of April 29-May 1 at the Indy-West Harley-Davidson dealership. It was a fantastic celebration of chili. Jeff, Trent and Darin, along with Julie and Tonya, put on an incredible chili weekend. The weather was a little iffy but there was no whining. All the cooks dealt with the rain and had a great time. The cooks’ attitude was also a big help to the Indiana folks trying to give us a good time. We had a widespread group of cooks. In addition to cooks from the Three Is (Illinois, Indiana and Iowa) we had cooks from Michigan (Tom Pardikes), South Carolina (Bill Thomas) and Georgia (the Cobb family). It was a great group.

The Indiana Pepper Pod Cookoff on Friday led off the weekend. We had 19 cooks and several lanterns. The rain held off and we had a nice evening to cook chili. Jim Weller also qualified on points.

The Rules Committee is frequently called upon to review conduct of cookoffs that is not covered in the CASI Rules Book. They discuss these situations and ren-der an opinion based on experience and the overall intent of the rules as a whole. Here are the results of a couple of these discussions.

When a CCO includes homestyle chili, green chili, beans, salsa, etc: Some cookoffs have secondary competitions in homestyle chili, green chili, beans, salsa, etc. CASI has no rules governing these cookoffs, other than that CASI rules must be followed for the CASI chili contest. CASI chili must have a separate turn-in and

judging. The committee advises that the CASI judging cup should be different from cups for other catego-ries, and there are a number of ways to accomplish this. Of course, CASI cups may not be marked in any way that distinguishes one cup from the other. However, each category could use a different color of tape on the cup ticket, or different sizes of cups. Cups could be marked with a ‘B’ for beans, ‘S’ for salsa, ‘G’ for green chili, or any other system that makes sense to the Head Judge and Referee.

Should there be an additional rule for this question? I don’t think so – just a little common sense should be adequate. If you have any input on a cookoff’s judging cups, please advise them to make cups for additional competitions easily distinguishable from CASI cups.

Clarifying the new rule on Pod cookoffs: Until the rule designating Pod cookoffs as automatic qualifiers was adopted in 2014, only the CASI Executive Director was concerned about Pod cookoffs, as part of the credentials process. Now with the addition of rule VII.E.1.g, both the Upcomings Coordinator and the Tallymaster are directly affected by the rule. Over the past year and a half, the Rules Committee has devoted considerable time to interpreting and defining this rule.

One problem was that some Pods have multiple cookoffs, all named “(Pod name) Pod Cookoff.” On the other hands, some Pods give their Pod cookoff a different name. This caused lots of headaches for the Upcomings Coordinator and the Tallymaster, so much so that the Senior Referee now maintains a list of which Pod cookoffs are eligible as automatic qualifiers. This is very confusing to the chili-cooking public.

This could be solved so very easily. Name only the cookoff designated as the automatic qualifying cookoff as the “(Pod name) Pod Cookoff.” Every other cookoff your Pod is involved with should have a different name. A couple of ladies who do an awful lot of work for CASI will be very, very happy.

Each year Pendery’s, Inc., the oldest family-owned business in Texas and the inventor of Chile Blend, sponsors the DFW Metroplex Regional Championship Charity Challenge Chili Cookoff. Over the last three years, this championship cookoff has raised over $360,000 for local charities. This year, just over $110,000 was distributed to the Housing Crisis Center, Cattle Barons Ball, CASI Scholarship Fund, Assist the Officer Foundation, SuiteHope, Children’s Cancer Fund, SMU Relay for Life, and the American Cancer Society.

This year, CASI received a donation from Pendery’s in the amount of $10,145.15, of which $8,000 will go to the CASI Scholarship Fund.

Houston, TX - A call for the CASI Chili family came in as a result of the floods that hit Houston in the past weeks.

CASI members Larry and Nancy Netardus (Nancy is Great Pepper of the Piney Woods Pod) have lived in their Houston home for over 30 years. The Netarduses did not have flood insurance nor had their home flooded in over 30 years. At the end of April, the stormy weather resulted in Larry and Nancy’s home being flooded with seven inches of water.

Larry and Nancy have always come to the aid of other chili family members without being asked. Now it was time for this Great Pepper to have help from her CASI family come to her.

What do CASI cooks do? They give in more ways than cooking chili; they protect and support the CASI family.

A call for help went out, and 15 chili cooks showed up on the Ne-tardus doorstep with strong backs and lots of elbow grease and went to work. Of course we made it a fun CASI event with good food, water, beer, and brotherhood as we worked.

A lot of hard work is ahead for this family to get their life back in order. But the CASI family will be there to help as needed to help their own. Keep this CASI family in your prayers.

2016 TICC POSTER CONTEST

It’s time once again to get creative and start thinking about a poster design for the 2016 Terlingua International Chili Championship (TICC). CASI is looking for a unique, creative design that embodies the essence of TICC and CASI. Poster deadline this year is Monday, JUNE 6, 2016.

Poster Guidelines• When designing the piece of art, please keep in mind that the

poster is a vital element to the success of the event. The artwork chosen will not only become the official poster of the Terlingua International Chili Championship, but it will also possibly add to the development of the retail merchandise.

• Artwork must incorporate the following elements:

o Name of Event: Terlingua International Chili Championship

o Annual Designation: 50th Annual

o Location: Held at Rancho CASI de los Chisos

o Date of Event: November 5, 2016

• Artist should keep in mind that the Sponsor Logos, CASI logos, pictures of the previous year’s winners and names of the current Board members will be included in the finished poster.

• Artwork or photo must be original design, no copyrights, with the use of bold colors.

• Actual sizes of the finished posters are 19” X 25” and 11” X 17”. Submissions do not need to be that size but they need to maintain that proportion. The 11” x 17” poster is an infor-mational poster. Copies of previous years’ posters are available in PDF format upon request. These posters may be used as a guideline for some of the content required in the design.

• The artist should design an initial draft of the poster artwork. If selected, the artist will work with CASI staff in making changes and developing the final piece.

• Artwork must be camera ready. If selected, artist agrees to relin-quish ownership of artwork.

• If selected, artwork becomes the sole property of the Chili Ap-preciation Society International, Inc. The winning designer will receive credit with their name included on the final product.

• If selected, artist agrees to sign and number fifty (50) prints within 30 days of request.

The 500 year flood and seeing animals walking in pairs could not keep 85 brave chili cooks from attending the 45th Annual Houston Pod cookoff held at Trader’s Village on April 23. We had cooks from all over Texas, some of our good neighbors from Louisiana and a visitor from Maryland came to cook and celebrate with CASI’s oldest Pod. Nostalgia was in the air with trophies from the past made by the iconic Allegani Jani Schofield and donated back by several former winners to commemo-rate the Pod’s 45th anniversary.

Darrell Baxter from Grand Prairie had the winning bowl of red and is the 2016 Houston Pod Champion/Automatic TICC Qualifier. Noal Truitt came in second, and last year’s winner Kate Cavender was third. First time CASI Cook and past Junior Champion Lucas Nesbitt was 4th, Deanna Johnson 5th, Mack Walker 6th, Nancy Netardus 7th, Larry Russell of Shreveport, LA 8th, Katherine Cavender 9th and the lovely and talented Karin Barnes 10th. The winning show team was Amie Cavender, Autism Awareness. We had 10 very talented junior cooks representing the future of CASI with Scarlett Moore winning 1st.

We followed it up Sunday with 35 cooks battling it out again at the Hal John and Judy Wimberley Memorial cookoff to benefit Texas EquuSearch. Donna Foley won and is now qualified for the big dance in Terlingua for CASI’s 50th year. Congratulations to all our winners.

I would like to thank all the members, family and friends who vol-unteered and came out to support our charities – Santa Maria Hostel for Female Veterans and Texas EquuSearch. We could not do it without your help!

Thanks to Mayo and her crew for the omelets on Saturday and to Karin for the casserole-off on Sunday. Thank you, Nigel for the tunes all weekend, Bryan for being our emcee and Donna for hustling raffle tick-ets. I would also like to give a big THANK YOU to the Frito Pie booth volunteers – I love you all and y’all rocked to the tune of $925 in sales. Outstanding work by outstanding people.

ARIZONA WINE GROWERS FESTIVAL

ELGIN, AZ - The Southeast Arizona Wine Growers Festival Regional Cookoff, in spite of a little wind, was a huge success, making over $2,500 for the Pata-gonia-Sonoita Rotary Club. The money will go toward building a playground near the Fairgrounds and Race Track.

Along with the CASI Red Chili cookoff and the amazing wine tasting offerings of 21 winer-ies, there were several competi-tions to keep the CASI cooks busy throughout the Saturday event. Tom Edwards made the best Bis-cuits and Gravy, Carlton Johnson took People’s Choice, and Sunny Fichtl went home with the prize for Salsa. And, of course, the ladies

concluded the day with a Tequila Rose toast.

The 2nd Day Cookoff featured a People’s Choice competition with some Tucson Chefs entered. Great competition, but our own CASI

cook, John Johnson, took home the first place wine basket!

Free Quarter Page Ad to CASI Pods, State, Regional and International Opens

As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI" section in the Terlingua Trails. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
