ramadan dEliGhtsGet ready to serve up a chic Ramadan feast with a recipe for Salmon Sayadieh from the Ramee Grand Hotel & Spa by

Method
the first process is to make a stock of fish bones, lemon, cinnamon, cardamom, onion and seven spices for the rice.then cook the rice until done using the absorption method and using the flavoured stock.marinate the salmon fillet with garlic, olive oil, lemon juice, white pepper, cinnamon powder, fresh coriander and salt. Grill on a chargrill until cooked.then, make the sauce using butter and flour. Add the fish stock, fish sauce and season to taste. Finish with cream and lemon juice.to plate, mold the rice in to the centre of the plate.Place the grilled fresh salmon on top of a ricetop up with fried red onion and drizzle the sayadieh sauce around in dots.Finally, garnish with a lemon star and a sprig of English parsley.

Patrick Dempsey on Racing Porsche3RI�SJ�XSHE] W�XST�XIPIZMWMSR�ERH�ÁPQ�actors, few will know that Patrick Dempsey has also been racing professionally for nearly ten years.
We caught up with him during a recent visit to the Bahrain International Circuit…
You’ve been a fan of Porsche for quite some time, but how did your relationship with them develop into motorsport?PD. I started racing about 10 years ago and now to be racing at this level, especially with Porsche, is incredible.
What this brand represents in motorsport is huge and so I wanted make sure I was a little bit more experienced before I started with them. A couple of years ago my deal was up with another manufacturer and it seemed like the right time to move over. I’m really excited and surprised by how much care there is and desire for me to develop as a driver. We are doing all the right things in order for me to progress. It ’s very moving to me, very inspiring.
Racing for a brand like Porsche at the 24 Hours of Le Mans – what’s that like?PD. This will be my third time doing it and it is special, especially given the connection between Porsche and Le Mans. Being at Le Mans you can really see the importance of motorsport. Look at the Porsche 919 Hybrid in the LMP1 programme and what that represents, how that technology will eventually find its way to the road and already has in many ways. To be at Le Mans is magical – there’s just something that happens there – you transcend everything else in life.
What are you hoping to achieve this year?PD. Le Mans is our focus for this year. I would love to be on the podium. We’ve been close in fourth and fifth but

to win you can’t make any mistakes, you have to be on it. The opportunity to race around the world with Porsche is a wonderful thing for me as an individual just to learn and understand different cultures first hand. Coming here to the Middle East from the United States especially, there is a preconceived notion about the culture but it is so multicultural here and it really opens you up to appreciate people for who they are.
How do you prepare for something like endurance racing?PD. There is a lot of testing, seat time and racing. Because of the multiple classes that are going on in a race, your situational awareness has to be really focused and finely tuned. The physical conditioning is important - being in the gym, running, cardio, upper body – and so is the mental conditioning. How you live your life is how you drive and you have to be aware of that. I think that’s exciting.
Tell us how it feels when you get behind the wheel and race. PD. It is physically tough. Parts of your body hurt more than others like your lower back because of the amount of pressure that you put on your brake pedal. But there’s a rhythm that you get into, a mindset. You transcend pain when you are in that zone. There is an emptiness of thought and complete focus. When you get in that place it is sublime and that is why you do it.

Owning her very first camera at the age of 12, Sheikha Hanan knew her love affair with photography was one for keeps. At a time when technology
wasn’t as advanced as it is today – she would painstakingly work on every photograph still-by-still, frame after every frame and film upon each film.
Today, she possesses the same kind of meticulous discipline in her work – thoroughly researching her subjects before any photography assignment or ‘adventure’ as she would prefer to call them.
As a child, her adventurous spirit has seen her go to places around the world with her father. Later in life, she has journeyed on photo-trips to Japan, China, Vietnam and other parts of Asia, as well countries in Africa, Europe and of course, the Middle East – to countries like Yemen for instance where the faint-hearted daren’t explore.
“I am inspired by people and places and their cultures. There is so much the world can teach us, and with the experiences I go through, I always come away with something,” she shares. “If one looks close enough, they will find beauty in everything.”
She has recently spearheaded a photography exhibition entitled ‘Man and Labour’ – a collective show of works by 20 photographers, including her photographs and was displayed at the Ministry of Labour Isa Town premises. The other participating artists include: Abbas Al

As head of the labour studies section for the Ministry of Labour since 1977, Sheikha Hanan is currently the ministry’s director of labour relations. She has a Masters in Public Administration from the University of Southern California, USA, and a Bachelor of Political Science and Economics from Kuwait University.
Sheikha Hanan is a regular participant of major photo exhibitions in Bahrain and abroad since 1995. She represented Bahrain in the Federation of International Art Professionals (FIAP) Congress in Prato, Italy and the Bahrain 2003 Heritage Exhibition held in Paris, France.
If one were to observe her photographs, they will notice that Sheikha has an uncanny ability to make her subjects relax and reveal their candid side through her photography. She shares her tips on how to achieve this: “I talk to them. I do my utmost to make them comfortable with me and trust me enough to take their photograph. Photography can be very invasive for most people, and for some cultures, they even believe that when you take a photograph of them, you are ‘taking their soul’. So one must be conscious of the nuances of different cultures and their beliefs. It ’s important that you respect them.”
For an artist and a photographer of her calibre, I ask Sheikha what her advice is to budding photographers. She believes that, “After God, you must love your country. Because only then will you learn to love everything that’s around you. And when you’re a photographer, there is always a surprise waiting at every turn.”

W ere you always interested in music?HL. Yes but not necessarily music but definitely
entertainment! I ’ve been told that I had the gift of depicting stories whether via stage presence or written [material]. So it was more about finding exactly what avenue of entertainment I would land in.My career began shortly after I won a silver medal for the school district of over 20,000 students. After that, I realised I was blessed with the uncanny ability to not only write but I’ve been told that I could do so at such an extremely passionately level which could captivate readers. How was it like growing up? HL. Growing up was an adventure. Where I’m from you have to adapt to your circumstances and surroundings at a moment’s notice. I was surrounded by siblings, family and friends so it seemed as if there were new ‘episodes of life’ daily. The common factor growing up was not music surprisingly but sports – everyone I hung out with was a type of athlete. So everyone would go to practice for sports, and if you didn’t go you wouldn’t have friends – cut and dry. Sports had such a heavy influence in my area because it provided an outlet and escape from all the surrounding conflicts and troubles.Can you cite some highlights of your career?HL. To name a few: Reverbnation Number One trending artist in the world, Virgin Megastore Bahrain’s topselling hip-hop/R&B artist of the year 2013, Virgin Top 10 selling CD – all genres 2014; meeting Akon, passing my album to and having a chat with T Pain, interviewing Kelly Rowland, congratulating John Legend and hanging out with his band, performing in Switzerland, being acknowledged by hip hop legends, performing in various parts of Europe, and completing the track ‘International Ace’ which took close to a year to complete.What does it take to make it in the music industry?HL. It takes savvy and persistence. There will be a thousand ‘no’s’ before the first ‘yes’. Believing in your vision and being willing to work at it also goes a long way.What’s next for you?HL. Music videos, a three-country-ten-city tour and a bunch of other things that are better to just see instead of talking about.
