The final countdown to Investiture is upon us (and I don't mean the one with the aircraft carrier). My court is set, but what of that of my heirs, Carolus and Isolda? Do they have any business that they would like to take care of? No, they don't. Because we have no award recommendations for them. It is too late for my court, but they will be starting a new reign and will need plenty of recommendations to keep them busy for the next three or four years.

Please, take a few minutes to think of some fellow Haelies who y'all think should be publicly recognized and tell Carolus and Isolda. If you can do it before next Tuesday's Scribal meeting, scrolls can be started by our Barony's insanely talented scribes.

By the way: Zosia is Awesome.

Senechals Report:

Greetings, Friends!

October was a great month for our Barony. We attended regular practices and traveled forth to go to events and our people did great things and much fun was had. Alyce Green hosted October's Baronial At Home and this small pot luck and evening of social conver-sation was good fun and a great opportunity for us to gather and talk old stories and new ideas. November's Ba-ronial At Home will be held at Terclin's new place on Thursday the seventeenth. I hope to see you all there and that you've found a tasty new recipe to share with us.

At the Barony Meeting on November first, we accepted Cordelia Colton's (Colleen Martino) resume and applica-tion to hold the position of Chancellor Minor for the Bar-ony. I have a copy of her resume and will be available for anybody who has any questions about the job or the appli-cant. Next Barony Business meeting we will discuss the application and see if any other applications or resumes have been turned in.

There is going to be a Baronial 12th Night celebration this year, details to follow.

Captain of the Archers Report Report by

We have moved indoors due to not enought light(without candles) to shoot. Indoor Archery (11/11/11) at 6:30- 8:00 PM Friday at Doc's Archery. The fee for shooting is $7.00 for the night, and I will have loaner gear for the people who want to try the sport. Hope to see all the new Archers and some of the older One's (you know who you are) to come out and shoot. So come on out and shoot with the "Old" Hound. This week Milhim will be running the practice due to other mundane obligations. Belgraunde Remember Artimus is watching. Doc's Archery at 908 Niagara Falls Blvd. in North Tonawanda 14120. Not one to be content with the status quo and ever em-bracing new advances in “Steward Technologies”, our very own cultural icon THL Augusto is proud to pre-sent the “Shed of the Future”.

Autocrats will be able access a life size three dimen-sional hologram of the shed and all of its inventory. In this very same cyber shed reality the Autocrat will be able to request any item in the shed with the use of really cool hand gestures and pointing wavy motions even cooler than those used on current tablet technolo-gies.

THL Augusto was even kind enough to lend his charac-ter to a 3-D holographic Shed Guide who can help you with your questions as well as a brief history of the Shed. The shed guide can be modified to show Augusto in thrown weapons garb, court garb and the occasion-ally seen shirtless Augusto mode. All kidding aside, thanks to Augusto who has kept up the shed, delivered items to countless demos and events and then made sure all was returned correctly. Vivat and thanks Augusto

From The Dance Mistress I mentioned that dance would resume in November. I will be holding an interest meeting next week (November 9th) at fight practice to see who is inter-ested and what we would like to work on for investi-ture and future events. If you are not able to make fight practice, send me an email of your interest and/or what dances are your fa-vorites. Suggestions of when dance practice should be are also helpful. I usually have held them at my house on Thursdays but am open to dif-ferent nights and location. I have toyed with the idea of teaching at fight prac-tice either during the first or last hour. YIS

The A&S day on October 9th was a great suc-cess and a very relaxing day. I want to thank eve-ryone who offered their time to teach and those who came to learn. Classes were taught by, in no particular order, Caleb, Tiercelin, Ottfrid, Wolf-gang, and Katryn. Isolda also organized a scripto-rium for people to come and work on projects. I would also like to thank Carolus for getting us the site. I am planning to have another one sometime after the holidays. I am looking for a site that is ei-ther free or very economical for the barony. If any-one has ideas or suggestions please contact me. For the next gathering, I would like to have a space for textile projects. However, anyone inter-ested in teaching anything is more than welcome. Tell me what you need and I will make it happen. That being said, I would like to talk a bit this month about the wide range of things that could be considered the Arts and Sciences (insert soap box here). Recently, several people have said to me "It's not A&S but..." and proceeded to describe their class. Even if a class will not produce a concrete artistic "THING" , it is still A&S. Within our period, there is a close as-sociation between the arts and sciences. Many well educated people were also either very gifted musicians in their own right or very good friends with some highly accomplished musical geniuses. Galileo played quite a mean lute, as well as the in-fluence his laws of motion had on the later work of Dante. Robert Grossoteste was a major contribu-tor to the english optics tradition as well as a very gifted poet and good friend of Sir Roger Bacon but these are just a few.

Everything we do in the SCA, reflects this idea. While embroidery and scribal are both very beautiful arts, the execution of paint strokes and stitches is a very exacting science. The choice or color schemes and fabric are artistic decisions, but they must be used by well trained hands to produce something wonderful. Neglecting either aspect would diminish the end result. The same is true for the martial arts. While generally taught on the field this is also some-thing that could be brought to the classroom. It is as equally important to be consistent in the handling of your weapon as it is to balance the fine arts of attack and defense. It is also paramount to match weapon and armor to fighting style. No matter how spiffy it looks, if it hinders your fighting style, it inhibits your skill. One of my most scary and educational experi-ences as a fencer was adjudicating other fencers. It gave me a great oppor-tunity to look more carefully at another's approach to fencing and how they affected my style for good or bad. This same idea can easily be applied to any other activity in the SCA, my point is nothing in the SCA is just and art or just a science. Everything in the SCA is both an art and a science. One cannot flourish and grow without the other, what could be a more period notion. I encourage all of you go one step beyond teaching the science of what you do well, and share the joy and inspiration of your art with someone who may not have considered its relevance to their love in the SCA.(humbly stepping off the soap box) " Use what talent you possess: the woods would be very silent if no birds sang except those who sang

Orange Mead At the October A&S day, we made a batch of orange mead using: 5 pounds - Orange Blossom Honey 2 Gallons - water 2 ounces - Sweet Orange Peel 1 tablespoon - ground cinnamon 1 packet - Cooper's Ale yeast 1/2 gallon - pure orange juice The method: Pour the honey into a large pot. Heat a cup of water (from the original two gallons) and flush out the honey container. Add 1/2 gallon of water to the honey and heat until the honey has liquefied. Turn off the heat. In an additional pot, add 1 cup of water (again from the original two gallons) along with the cinna-mon and orange peal. Boil for ten minutes. Pour the liquid honey (must) and the spices into the fermentation bucket and use the remaining water to rise out both pots. Let stand over-night to cool, then add the yeast. Ferment for two to three weeks, rack over into a secondary fermented and let stand for another week or two. Add the 1/2 gallon of orange juice then bottle. The explanation: 1) Water: Yes, there is an explanation for water. For this class, we used two gallons of generic spring wa-ter. Not tap water, not mineral water and not fla-vored water. two one gallon containers. One we used and the other was left at home because I didn't want to carry an extra heavy fermentation bucket down a flight of stairs. All of the water used in the process came from the bottled water; no additional water was added (except for the orange juice). By adjusting the ratio of honey (in pounds) to water (in gallons) we can guide the final quality of mead (assuming that fer-mentation time, temperature and yeast remain the same).

How to Make Orange Meade Continued A 1 to 1 ratio will give you a dry, weak mead. A 2 to 1 ratio will give you dry to sweet, medium strength mead. A 3 to 1 ratio will give you a sweet, medium to strong mead. And anything 4 to 1 or higher will end up more syrupy then anything else, unless you use multiple types of yeast and let it ferment for a year. We are going with a 5 to 2 ratio with an additional 1/2 gallon of tart, sugar water added after fermentation. The expected result should be sweet, but not stuck-on-your-tounge-candy sweet. Using gallon containers for your water is convenient and allows you to quickly scale up or down a recipe. 1) Honey: This batch starts off with 5 pounds of or-ange blossom honey. We could use clover or wild-flower honey, but the orange blossom was only $1 more. With the sweetness and the addition of spices, the subtle flavors of the orange blossom honey will be lost, but it will give a richer aroma. Add the honey to a cold pot. Make sure that all of the honey is in the pot before you add any heat: this will ensure that you do not burn the sugar in the honey while you are pre-occupied. Add about a half gallon of water to the pot; the water will help the honey to liquefy by moving heat more evenly throughout the honey. Do not boil the honey. Since the honey we used for this class was already pasteurized and filtered, we do not need to over heat it: Any wild yeast has already been killed off and the major "chunks" have already been removed. Boiling honey also breaks down the honey and can release chemicals called esters; many of which have very un-pleasant tastes and smells. All we really want to do is to liquefy the honey and let any "scum" float to the top. Put the pot off center from the heat to allow the scum to collect to one side for easy removal. However: if not a whole lot of scum rises: leave it alone. A slight film of white is fine; as long as you can still see the liquid honey

How to Make Orange Meade Continued By removing this outer layer, the good stuff is in the outer millimeter, we can add a lot of flavor with mini-mum material. Just under the zest is the pith, which is white and bitter. Zest too much flesh and you will end up with bitter peel, which has its uses, but not for us. We used sweet peel with no pith. Dried peel isn't as good as fresh, but the aroma of oranges filled the kitchen when I opened up the cellophane package and passed out small pieces of the peel. We also used a tablespoon of fresh ground cinnamon. Real cinnamon: Ceylon cinnamon. Red gold. Far East-ern Tea. Not Cassia. Cassia is what most "cinnamon" sticks and power actually are. Cassia is spicier and harsher flavor than cinnamon and less aroma. Real cin-namon is sweeter and has a more pungent aroma. Real cinnamon is dark red-brown and sticks are made up of broad sheets that are layered and crumbled easily be-tween the fingers. Cassia is light brown and can be found as sticks of narrow sheets that are thick and du-rable. They can be used interchangeably in most baking recipes, but we want to compliment the sweetness of the mead, not make it spicy. I ground the cinnamon the night before and let everyone smell the bag. Once you compare cinnamon and cassia side-by-side, there is no way to confuse the two. Both the orange peel and cinnamon went into a small sauce pan with a cup of water and was brought to a boil. Unlike our honey, which doesn't like high heat, the essential oils in the peel and power requires boiling water to be extracted. Ten minutes of boiling and the water was murky brown. Off the heat it came, and was mixed with the must and added to the fermentation bucket. The remainder of the first gallon container was used to rinse out both pots to capture anything left in each (don't want to waste anything). cool overnight and sprinkle the yeast over the surface; no blooming required. I always keep some in the 'fridge just incase the first batch doesn't take off. In fact, I al-ways buy two packets at a time, just in case.

How to Make Orange Meade Continued If the scum is thick, thick enough that it looks like frosting on a cake, then you will have to remove enough of the scum so that it doesn't keep the yeast from reaching the must (if you are using lager yeast, which ferments at the bottom of the container, then ignore it all together). Whatever scum remains will settle to the bottom of the fermented, during fermentation, and will be left behind when the mead is racked over. 2) Orange Juice: Once the honey is liquefied, you can let it cool, pitch some yeast and ferment it into mead. Dull, boring, bland, flat mead. Honey is very one dimensional, and makes one dimensional mead. Even using speciality honey, adding nothing else to the party will give you a mead that will sit on your taste buds for a moment and then vanish, leaving you wondering why you went through all that work. Wine drinkers can describe wine with complicated descriptions not because wine is better than mead, but because wine is acidic and mead is pretty much neutral. The acid is wine enhances the flavors in the batch, bringing out even very subtle flavors. Acid also cranks up our taste buds, brightening flavors. We can pump-up the flavor of our mead by adding an acid. In this batch, we will be using 100% natural orange juice; no added anything. But, because the yeast we will be using (Cooper's ale yeast) is sensi-tive to acid, we will be adding the juice after the mead is done fermenting. The tartness of the orange juice will also cut down the sweetness of the honey, giving a more balanced flavor. 3) The Spices: To layer more flavor into our mead, we will be adding sweet orange peel and cinnamon. If I wasn't so lazy, the day of the class, I would have picked up a fresh orange and zested it myself. But, I didn't. This is why I keep dried orange peel in my brewing stash. You can pick up dried or-ange peel at brewing supply shops as well as at most supper markets and spice shops. The majoring or the flavor and aroma of an orange comes from the zest; the outer layer of the peel.

How to Make Orange Meade Continued 4) The Yeast: The type of yeast used will determine the final flavor and alcohol content of the end prod-uct. Given the same amount of fermentation time, ale yeast will give you a sweeter mead: lager yeast will give you a stronger (more alcoholic) mead that will be less sweet. Wine yeast will give you a mead that is stronger still and drier. Cham-pagne yeast will give you and even stronger mead that will be even drier. This is because, in part, that the various strains of yeast are tolerant to different levels of alcohol. Most ale yeast will die off in rela-tively low quantities of alcohol (3 to 5 percent on average) and can only convert so much sugar before they die off. Lager yeast can withstand higher alcohol content (5 to 7 percent) and, thus, can convert more sugar, giv-ing you a drier mead. Wine and champagne yeast strains can withstand up to 20% alcohol; some strains can convert all of the sugar into alcohol giv-ing the brewer a very dry mead. We want a sweet mead, so we used an ale yeast. Cooper's dry ale yeast. It is cheap (under $1) and al-most bullet proof. Just let the must cool overnight and sprinkle the yeast over the surface; no blooming required. I always keep some in the 'fridge just in-case the first batch doesn't take off. Its an extensive collection put together by James Matterrer. http://www.godecookery.com/scafeast I was looking at AEthelmearc 12th Night XXXII AS Hosted by the Shire of Misty Highlands, January 10th, 1998. Prepared by The Pandemaynea Guild of Cookery: Master Huen Damebrigge of Wychwood, Lady Glynnis of the Inn of the Laughing Fox, Lord Cydifor ap Manogan, Lady Derdriu Gilbride, Guy Talbot. 175. (Pies of Herbs, Cheese, and Eggs): Take parsley, mint, chard, spinach, lettuce, marjoram, basil and wild thyme, and grind everything together in a mortar, moisten with pure water and squeeze out the juice; break a large number of eggs into the juice and add powdered ginger, cinnamon and long pepper, a good quality cheese, grated, and salt; beat everything to-gether. Then make very thin pastry to put in your dish, of the size of your dish, and then line your dish with it; coat the inside of the dish with pork fat, then put in your pastry, put your dish on the coals and again coat the inside of the pastry with pork fat; when it has melted, put your filling in your pastry and cover it with the other dish and put fire on top as well as underneath and let your pie dry out a little; uncover the top of the dish and put five egg yolks and fine spice powder care-fully over your pie; then replace the dish as it was be-fore and let it gradually cook in a low coal fire; check often to see that it is not overcooking. Put sugar over the top when serving it.
