It never fails. The holidays arrive, yougather your family together for a groupphoto and you take what you think is agood shot, only to find out minutes laterit wasn't so good after all. Aunt Edna waslooking at your cousin Billy, while yoursister Pauline closed her eyes and yourgrandfather actually dozed off. How didthat happen? It's amazing what can hap-pen in the seconds between clicking thebutton on your digital camera and takingthe picture. Here are some tips to ensureyour next family group photo turns outwell.

Leave people be: This is your family,and while asking them to wear similarstyles or colors of clothing might makefor a lovely shot, it probably won't reflecttheir true personalities. C'mon, wouldyour great uncle Pete be caught deadwithout his flannel shirt if you hadn'tasked him to? Leave your family be andgo for a more natural shot in their naturalattire.

Find a spot with good light: The bestphotos are taken in an area with goodlight. Find one in your home for yourgroup photo or go outside. Who knows.Sitting outside of the house in front of thebig oak tree might provide more breath-ing room and a better shot altogether.

Put the group at ease: Gather every-one together, place them in position andthen start cracking the family jokes. Themore comfortable people feel, the more atease they will be and the better shot youwill get all around.

Focus in on the faces: Move in andget the group up close. Don't worry aboutcutting off the lower half of their torsos.The key is to get their smiling, happyfaces, not their legs, feet and toes.

Watch for the right shot: While hav-ing everyone say, "Cheese," will get theirattention, it will also make them rigid andprovide for forced smiles on the part ofsome. Sit back, relax and wait for theright shot. It will happen. Don't be afraid

to take some candid shots in the mean-time. This will help people relax andallow you to get in some good individualshots.

Take more than one shot: The firstattempt at anything rarely turns out to bethe best, so when the opportunity presentsitself, take successive shots rapidly.People will undoubtedly move betweenshots, and if you take several shots, youmight just get one where everyone isactually looking at the camera and smil-ing beautifully.

Try, try again: If none of these tipsgarner success, don't be afraid to tryagain. Getting a good group photo is noteasy, even for the professionals. Fuss lesswith the pose and more on getting every-one to feel comfortable and smile. Theshot will happen, maybe not right then,but eventually. Just make sure when itdoes you save a copy of the digital fileand send it to everyone you know!

Try these tips•If you have an ink stain on fabric, try

blotting it with hairspray. Saturate the inkspot with hairspray, and blot using a cleanwhite cloth or non-decorated paper towel.Repeat until all the ink is gone. Makesure you test on an inconspicuous areafirst.

•For every degree you lower yourthermostat during the heating season, yougenerally reduce your energy costs by 3percent. Also, turn down the temperaturesetting on your hot-water heater.

•Here's a no-fail strategy for raking upleaves: Rake leaves into a single longline, preferably onto a sidewalk. Thenturn a large garbage can on its side andsweep the leaf pile into the can, takingbreaks to empty leaves into bags as need-ed. The raking goes much quicker whendone in "stripes." And bagging is faster aswell.

11 ways to save on heating costs

Games to play while holiday traveling

By David UffingtonHere are a few ideas to help you save

money during the coldest months of theyear.

1. If you haven't had your furnaceinspected this year, it's not too late to doso. Consider buying one of the serviceplans. If your furnace quits in the middleof a cold night, you not only want to knowwho's going to come fix it, you want toknow that some or all of the repair costsare covered.

2. Be sure you're not blocking any airvents with furniture.

3. If you never got around to caulkingyour windows and are feeling drafts whenthe wind blows, head to the hardware storeand look for Frost King plastic windowsheeting. This clear plastic goes on theinside of windows with the adhesive tapethat's supplied. Shrink the plastic tight witha hair dryer and trim off the extra. The

trick is to get a few inches of dead airspace between the window glass and theplastic. The wider that area, the better theinsulation factor.

4. While you're at the hardware store,pick up two or three furnace filters. Plan tochange them on the first of every monthduring the winter, when the furnace is run-ning frequently.

5. If you have ceiling fans, run them inreverse to move the warm ceiling air downinto the main part of the rooms.

6. Consider turning down the tempera-ture on your water heater. Generallythey're set at 140 degrees F. You can stillget a hot shower, and it will save 3 percentto 5 percent of your energy bill with thetemperature set at 120 F.

7. If you're home during the day, openthe drapes on the sunny side of the house,and close them when the sun moves to theother side.

8. Turn down the temperature on yourthermostat 1 degree. In a few days, turn itdown another degree. You likely won't feelthe difference in temperature, but you'llsave between 2 percent and 5 percent onyour heating costs. If you can, invest in aprogrammable thermostat set to lower thetemperature when no one is home.

9. Insulate your attic access door, if youhave one.

10. Add a warm-air humidifier: Moistair feels warmer.

11. If you're in the market for a newfurnace, water heater, doors and windowsor attic insulation, remember to checkwww.energysavers.gov for rebates beforeyou buy.

Holiday road trips present a wonderful opportunity for gettingin a little together time. Of course, with everyone squeezed intosuch a small space for such a long time, they also present anopportunity for ruffled feathers. You can keep the conflict to aminimum with some entertaining games, like the following.

20 Questions: In this game, one player selects a subject, whilethe other players try to guess what it is by asking 20 questionsabout it. Responses are limited to "yes" or "no." The first playerto guess the subject wins the round and selects the next subject.The player with the most correct guesses at the end of the car ridewins.

"A" is for ...: In this game, one player selects a category likefruit and names an item within that category starting with an "a"-for example, "A is for apple." The next player repeats the phraseand adds to it, with an item starting with a "b." Any player thatcannot recall what has been said is out of the game. The firstplayer to reach the end of the alphabet and recite everything per-fectly wins.

Alphabet Game: In this game, one player names an objectthey see starting with an "a." The next player must spot threemore objects starting with the letter "a." Play continues in thismanner until the end of the alphabet is reached, with each player

spotting three objects beginning with successive letters of thealphabet. The first player to reach the end of the alphabet wins.

Counting Game: In this game, one player must spot an objectto count along the way, like horses or mailboxes. The remainingplayers then count that object as they see it on their side of thecar. Should any player spot a cemetery at any time, they muststart the counting over. The player with the highest number at theend of the car ride wins.

Geography: In this game, the first player names a geographi-cal place, like Mount Rushmore. The next player must then namea place starting with the last letter of the place just named. Anyplayer that fails to name a place is out of the game. The playerleft standing wins the game.

License Plates: In this game, players must keep a tally of thenumber of license plates they see from different states. The playerwith the highest total at the end of the car ride wins.

Slug Bug: In this game, players look for Volkwagen Beetles orsome other type of car. At the first sign of one, they yell, "Slugbug," and tap everyone else on the shoulder. The player with theleast amount of taps at the end of the car ride wins.

This is just seven of the many games you and your family canplay on your trip.

Preparing a turkey for the first time can be a dauntingtask, unless you know a few tricks. No matter how manyguests are expected -- whether it's dinner for four or 24,allow 1 pound of turkey per person. I never buy a turkeymore than 14 pounds, as it's easier to cook two turkeysthan it is to wrestle a turkey weighing 25 plus pounds inand out of the oven.

I cook one turkey the day before Thanksgiving. I let itrest and carve it ahead of time, cover it with basting juicesand aluminum foil to keep it moist, and reheat it to serveduring the meal. I also roast a turkey on Thanksgivingday. It's my "show" bird -- the one I display whole on adecorated platter. While my guests are serving themselves,I can carve the other turkey without feeling rushed.

When selecting a turkey, it's better to pick an unstuffedturkey for safety reasons, and then season and baste thebird yourself so that you can control the quality of theingredients. The "pop-up" timer that you find in somebrands of turkey usually only pops up when the turkey isovercooked! If you want to use a brand with a timer, leaveit in place until the turkey is ready to carve, but use a con-ventional meat thermometer to check your bird for done-ness.

Forgetting to thaw out the turkey is a common mistakethat many cooks make during the holidays. Allow approx-imately 24 hours for every 4 to 5 pounds of turkey,approximately three to seven days before Thanksgiving.Thaw the turkey in the refrigerator on a rimmed pan tocatch any drips or in a cooler kept at 38 F.

If you're preparing a turkey for the first time, my recipefor this Easy Holiday Turkey is a great way to begin.Read over the instructions a few days before the holidays,purchase and prep your ingredients ahead of time, andenjoy your Thanksgiving with a lot less stress!

Easy Holiday Turkey1 (12 to 14 pound) turkey (not self-basting)

3/4 cup canola oil

3 tablespoons poultry seasoning

1 1/2 tablespoons kosher salt

2 tablespoons freshly ground black pepper

1 stick unsalted butter, melted

Aromatics:

2 medium onions, peeled and chopped

3 large carrots, chopped,

2 large apples, cored and chopped

2 to 3 sprigs of fresh rosemary, thyme, sage, pars-

ley, in any combination

6 sage leaves

1/2 cup water or chicken broth

1. Adjust the oven racks to the lowest level of the oven.Preheat oven to 500 F.

2. Pull the package containing the neck and giblets outof the neck and interior rear cavity of the turkey (neckcavity may be covered with a flap of skin). Set the liver,heart and giblets aside to use for the gravy. Reserve theturkey neck to use with the aromatics for the bastingbroth.

3. Rinse the turkey with cold water inside and out. Drythe turkey skin with food-safe paper towels. The turkeywill not brown if the skin is still wet. The turkey probablywill have the legs trussed in a metal or plastic clamp.Release the legs from the clamp and discard the truss.This will allow the dark meat on the legs to cook faster.

4. Rub the turkey inside and out with the canola oil.Sprinkle turkey all over, inside and out with the poultryseasoning, salt and pepper.

5. Fill the turkey with half of the aromatics -- choppedonions, carrots, apples and herbs. Place the turkey neckand the rest of the aromatics in the bottom of the roastingpan with the water or chicken broth.

6. Place a sheet of aluminum foil on a roasting rackand place it inside of a roasting pan. Using the tip of aknife, poke 20 to 30 holes in the foil. Place the turkey,breast-side down, on the foil-covered rack. Roast for 30minutes (set the timer on the oven to prevent overcook-ing).

7. Turn the temperature down to 325 F. Turn the turkeybreast-side up and tuck wing tips underneath the bird.Baste, inside and out, with the melted butter and the juicesthat have collected in the bottom of the roasting pan.

8. Roast for 1 1/2 hours for a 12-pound turkey (a 14- to

16-pound bird will require 2 to 2 1/2 hours. Add an extra15 minutes per pound for larger birds). Roast the turkeyuntil the meat at the thigh (when the thermometer isinserted without touching the bone), the thickest part ofthe wing and the meat at the breast registers 165 F. At thistemperature, juices should be clear, not reddish pink,when thigh muscle is pierced deeply.

9. Cover the turkey breast loosely with a sheet of alu-minum foil, creased in the middle to make a tent, to keepthe turkey warm without steaming the crispy skin. Let theturkey rest for at least 30 minutes before carving.

1 (4-serving) package sugar-free instant butter-

scotch pudding mix

1 (15-ounce) can solid packed pumpkin

1/4 cup fat-free sour cream

1/2 cup plus 2 tablespoons reduced-fat biscuit

baking mix

2 eggs or equivalent in egg substitute

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1 cup reduced-calorie whipped topping

2 tablespoons chopped pecans

1. Preheat oven to 350 F. Spray a 9-inch pie platewith butter-flavored cooking spray.

2. In a large bowl, stir cream cheese with a sturdyspoon until soft. Stir in dry pudding mix, pumpkin andsour cream. Add baking mix, eggs, vanilla extract andpumpkin pie spice. Mix well to combine, using a wirewhisk. Spread batter into prepared pie plate.

3. Bake for 40 to 50 minutes or just until center isfirm. Place pie plate on a wire rack and allow to cool forat least 45 minutes. Spread whipped topping evenly overcooled cheesecake. Evenly sprinkle pecans over top.Refrigerate for at least 1 hour. Makes 8 servings.

1/4 cup loosely packed fresh

cilantro leaves, chopped

1. In 6-quart saucepot, heat oil onmedium until hot. Add onion and serra-no; cook 8 to 10 minutes or until lightlybrowned and tender, stirring occasionally.Stir in garlic and cumin; cook 1 minute,stirring constantly.

2. Stir in clam juice, tomatoes, water,potatoes and 3/4 teaspoon salt; cover andheat to boiling on medium-high. Reduceheat to medium-low and simmer, cov-ered, 8 to 10 minutes or until potatoesare just fork-tender.

3. Meanwhile, cut 1 lime lengthwisein half. Cut 1 lime half in half again andremaining lime into 6 wedges to make 8wedges in all; set aside.

4. Add cod and remaining lime half tosaucepot; cover and cook 5 minutes. Addscallops and squid; cover and cook 1

minute.5. Remove saucepot from heat. With

tongs, remove lime half, squeezing juiceinto soup. Stir in chopped cilantro, andserve with reserved lime wedges. Makesabout 11 1/4 cups. Serves 8.

Citrus ScallopsLemon and lime add a boost of vita-

min C to this ultra-low-fat seafoodentree. For heart-healthy fiber, serve witha side of whole wheat couscous.

1 lemon

1 lime

1/4 teaspoon salt

1/4 teaspoon freshly ground black

pepper

1 1/4 pound sea scallops, rinsed

3 teaspoon olive oil

1 tablespoon finely chopped shallot

1 teaspoon Dijon mustard

1 bag (5- to 6-ounce) baby greens

1/4 cup fresh parsley leaves,

chopped

1. From lemon, grate 1/4 teaspoonpeel and squeeze 2 tablespoons juice.From lime, grate 1/4 teaspoon peel andsqueeze 1 tablespoon juice. Set juicesaside. In small bowl, combine peels, saltand pepper.

2. Place scallops on paper-towel-linedplate; pat dry. Sprinkle with citrus-peelmixture.

3. In 12-inch nonstick skillet, heat 2teaspoons oil on medium 1 minute. Addscallops; cook 6 to 8 minutes or untilopaque throughout, turning once.Remove from pan; cover.

4. To skillet, add 1 teaspoon oil andshallot; cook 3 minutes or until tender.Stir in Dijon mustard and citrus juices,scraping up browned bits; cook 1 minute.Toss sauce with greens; place on plates.Top with scallops and chopped parsley,and serve with whole wheat couscous (tomake couscous, follow package direc-tions). Serves 4.

Security cost-of-living increase in threeyears. But don't rush out to buy jewels,furs and vehicles with your new riches:The increase will be 3.6 percent and willtake effect in January.

These past two years were the first timesince 1975 that there was no adjustment,but the economy changed just enough totrigger the small increase. The Cost ofLiving Adjustment (COLA) is based onany increase in the Consumer Price Indexfrom one year to the next.

The average Social Security check thisyear was $1,177. The 3.6 percent increaseof $42.37 will bring that up to $1,219 permonth in 2012.

Per the Social Security website, theearnings limit for those under age 66 is asfollows: For those born in 1943 through1954, the limit will be $14,640 with $1deducted from benefits for each $2 earnedover that amount. If you'll turn 66 in 2012,you can earn up to $38,880 without penal-

ty, but will lose $1 for every $3 you earnover that amount until the month youreach age 66. These limits are slightincreases.

Then, too, there is the possibility of anincrease in Medicare Part B premiums.(You should have gotten your AnnualNotice of Change in the mail.) Your SocialSecurity increase might be completelyeaten up by the increase in Medicare pre-miums.

Gifts on tap?While some parties do not involve gift

If you are planning a holiday party andare not sure whether to involve a giftexchange, consider your guests first. Dothey have large a number of people to buyfor already? Have they been hit by hardtimes? If so, then you may want to forgothe gift exchange and give your guests abreak.

If you cannot bear the thought of hav-ing a party without a gift exchange butdon't want to burden your guests, you maybe able to compromise and set up a whiteelephant gift exchange. White elephantgifts need not be new or expensive. Youcan ask that gifts be something guests nolonger want or need or purchase for $5 to$10. The more absurd or sillier the gifts,the funnier the exchange will be.

White elephant gift exchanges can berun anyway you like, but most involvehaving guests draw numbers and selectinggifts in order. Time: How much time do you have todevote to the party preparations? If yourschedule is tight, you might want to havethe party elsewhere. Some venues willtake care of everything from start to fin-ish, while others will offer more limitedservices like food and clean-up.

er in addition to these. Having a party athome generally offers more freedom. Youcan start and end the party when youwish, invite as many people as you wish,decorate for it however you wish, andserve whatever you wish. Depending upon

the venue you choose, you could face anynumber of restrictions from the number ofguests to the types of food to the durationof the party permitted. The latter couldprove beneficial, however, as guests won'tbe tempted to overstay their welcome.

Leaves to treasureBy Donna Erickson

Memories of times and places frommy childhood flood my mind this time ofyear, whenever I toss on a light jacket andgrab a rake. I remember jumping in pilesof newly raked leaves on a Saturdaymorning, and the smell of burning themby the curb at day's end. It was legal todo that then, even in the city.

I also recall sitting on the front porchwith my friends, weaving colorful leavesinto crowns just as we had done withdandelions and daisies the previousspring.

Years later, in a dorm at North ParkUniversity in Chicago, fall's leavesarrived early, in a box mailed by myfriend's mom from Massachusetts.Carefully layered between sheets ofwaxed paper were dozens of the biggest,most brilliant red and orange mapleleaves I had ever seen. We taped them tothe walls, one by one, just like kindergart-ners decorating an elementary-schoolhallway.

Leaves and the memories they evokeare treasures for many families this timeof year - even in Orlando, Fla. AmyAnderson, mom of two girls ages 2 and 8,says that leaves just keep on falling in heryard long after the snow begins to fall in

states "up north." "Sometimes it takesextra effort to motivate my family to dothe constant raking, so we've turned thechore into a game," she says.

Here are a few leaf activities you canenjoy with your kids this season, even ifyou don't have a giant oak in the back-yard:

•After a rainfall, find a stick and use itto poke under a pile of fallen dampleaves. Look for bugs, worms and othercritters.

•Press leaves and use them for decoraround your home. Spread them outbetween sheets of smooth paper towels.Place heavy books on top and let theleaves dry for about one week. Removebooks and gently remove leaves.

•Draw pictures on pressed leavesusing nontoxic paint pens or permanentmarkers. Draw a fall scene of pumpkins,a colorful tree or a simple design. Set ona plate for a festive place card at a specialgathering of friends and family.
