Introduction
Istria
Istria, this magical and diverse miniature world, is also the largest peninsula
on the Adriatic Sea, located at the foot of the Alps.
In a relatively small area you will find a plethora of green fields and hills,
vineyards and olive groves, as well as seaside towns rich in historical and
cultural heritage. In the continental parts of the Istrian peninsula there are
medieval towns dotted around the hilltops and surrounded by mighty de-
fensive walls. For some decades now, Istria has been well known as a tourist
destination, with gentle beaches, a pleasant climate and a crystal clear sea.
Istria is a region which is increasingly being discovered by many visitors as
a holiday destination with excellent hotels, top quality wines and olive oils,
numerous restaurants and rural tourism.
In short, Istria is a treasure chest full of diverse beauty and gourmet food, not
too far from major European cities. With the aid of this booklet, we will help
you to get to know the region and the people of northwest Istria.

North-western Istria
North-western Istria stretches from the Slovenian border in the north to the
River Mirna in the south. Here we find a large variety of natural wealth,
from the mainly flatland area located near the shore, mainly dominated by
shrubs and fertile arable fields, to the gentle green hills.
From these hills the view spreads out over streams and small rivers, mean-
dering all the way to the fertile valley of the River Mirna.
There are traces of a rich historical heritage in many places. The medieval
town of Grožnjan, famous for its extraordinary beauty, is one of the most
interesting sites and is also famous for its numerous artists’ colonies and
events held there during the summer. In addition, the towns of Brtonigla
and Momjan are famous fortheir wine making traditions; Umag is the town
of tennis, and Savudrija the place most connected with the sea and fishing.
Further, the town of Novigrad is noteworthy for its perfectly preserved de-
fensive walls and the city hall located right next to the sea, and then there
is Buje, known as the “oil town” for its olive groves.

The north-western region of Istria, thanks to its diverse natural wealth in
a relatively small space, is an ideal destination for an interesting vaca-
tion, with exquisite food. The region has a coastline rich in fish and in-

Istria. Some of our routes offer selected local recipes, should you wish
to try to prepare our specialties at home.

Olive trees, the most durable of trees and the symbol of the Mediterranean,
have been grown here for centuries. Istrian olive oil has been appreciated
since the time of the Ancient Romans who considered it a delicacy of excep-
tional quality, as may be seen in written records from the first century AD. It
is slightly bitter when tasted, has an intense aroma and is an unsurpassed

groves situated on cascading hill slopes, perfectly incorporated into the
landscape. You will also have the opportunity to learn about the techniques
of growing olives and the production of extra virgin oil, and also, in the
unique and original setting of our oil pressing facilities, to taste and buy
some of the best Istrian oils. In this way, you can take the genuine flavours

Teran is a very old grape variety, one of the most widespread red grape
varieties in Istria. According to the available written records, Teran was first
mentioned 600 years ago.
It was written that Teran was given as a gift to Emperor’s ambassadors in
1390, who were given 20 ceramic bottles, and later, in 1408, Teran was
given as a gift to the Venetian Ambassador, and in 1411 to the Ambassador
of Austria. These facts certainly add to the value and quality of this red Is-
trian wine. The first description of Teran comes from the Istrian agronomist
Petar Stanković from 1825, while in local professional literature, Teran has
been talked about for around 180 years.
Just a few years ago, Teran was much more bitter in taste than today, but
Istrian winemakers succeeded in reducing its acerbity considerably by bal-
ancing modern technology and traditional processes to decrease the apple
acid in the wine, giving it a whole new quality.
We are sure that the modern Teran, the best examples of which can be
found here in north-western Istria on our Istrian Teran Route, will be ap-
preciated by many. Teran has a characteristic ruby red colour which is given
a purple tint when swirled in a glass. The aroma is pleasant, strong and
easily recognizable, the typical fruity character dominated by the fragrance
of raspberries. The relatively high acid content and the certain degree of
acidity combined with the high percentage of extract, give this wine its
characteristic full, strong and robust, but at the same time complete taste.
Because it is a well-rounded wine and contains a high antioxidant count,
it is considered to be beneficial to health.

Malvasia, whose name derives from the Greek city Monamvasia (located
on the Peloponnesian peninsula), is a grape variety which is at least 2000
years old. It is believed that Venetian wine traders brought it to Istria in the
14th century. When we talk about Malvasia, we are usually referring to a
white grape variety, although there is also a Malvasia nera (a red variety)
grown mostly in the Italian regions of Piedmont and Puglia. Today, the most
famous varieties are the white Malvasia from Italy, specifically Malvasia
Bianca del Chianti, Malvasia del Lazio, Malvasia delle Lipari, Malvasia di
Candia, Malvasia di Sardegna, and of course, Malvasia Istriana.
Malvasia became very popular in Istria in the nineteen thirties and for-
ties, and it is dominant amongst the white grape varieties here. Since the
technique used to produce Malvasia at that time was the same as for red
wine, its characteristics did not come to full expression.
Malvasia produced using this technique had a brownish tint and virtually
no scent, a slightly fruity and flowery aroma and it lacked freshness. In
short, it was an average wine and its aroma was mostly dominated by
the alcohol content.
During the nineteen-eighties things started to change for the better. A
handful of young Istrian winemakers started producing Malvasia in a tech-
nologically more advanced manner, and in the nineties a small revolution in
winemaking technology took place as more and more winemakers started
using modern techniques and production processes for this white wine.
Confirmation of the exceptional quality came in 1998 at the “Vinovita”
International Wine Fair in Zagreb when the Istrian Malvasia produced by
the Kozlović family was awarded the title of the Best White Wine in Croatia.
Following the world trend of the increasing popularity of local, indigenous
varieties, interest in the Istrian Malvasia is growing and it is appreciated
even outside Istria. Its strong alcohol and rich extract content, combined
with a moderate to low percentage of acid makes Malvasia a rich and full-
tasting wine. It is so discreet, flowery and fruity that many people say it
resembles the scent of the acacia flower. The fruity aromas are most often
dominated by apple and plum, and in a ripe wine you can also taste a hint
of bitter almond.

The little town of Brtonigla, best known as ‘The town of wine’ is the cradle
of Malvasia wine in the Istria region. For more than 30 years Brtonigla has
been hosting the Istrian Malvasia Fest in honour of the Queen of Wine, as
Malvasia is known. This food and wine festival, a mix of taste, tradition and
entertainment takes place every year in July. There is more information about

If you would like to experience something special, visit Momjan, a small
picturesque village in the northwest of the peninsula.
At 275m above sea level, the village offers stunning views of the Alps and
Dolomites from one end and lush greenery of undisturbed nature and a
beautiful sea panorama from the other.
The history of Momjan reaches far back to 1035, and the spirit of history
follows you wherever you go. What makes Momjan so irresistible is by all
means Momjan Muscat.
It is a white grape variety that grows in only some of the Momjan vineyards,
mostly on the hills from Oskoruš to St. Ivan near Merišće, at 200-350m above
sea level, in the sub-Mediterranean climate.
Over the centuries, thanks to the special features of the local climate and soil,
Muscat has attained almost perfect characteristics. As well as the traditional
production method still used by a few families in Merišće, in more recent
times a modern production method has gained a foothold. Many Istrian wine
connoisseurs would give Momjan Muscat top marks for its golden colour,
its intense scent of wild carnations and exquisite aroma. Dry and sweet, it
goes well with sweets and many other delicacies. Aphrodisiac properties
have been attributed to Muscat.
Due to its particularity, Momjan Muscat is also appreciated outside of Istria.
At the wine fair in Brussels in 1935 Muscat won a gold medal, and it was
readily enjoyed at the royal courts of Franz Joseph in Vienna and King Em-
manuel III in Rome. If emperors enjoyed Momjan muscat, you should too!

The hard work of peasants and natural selection over the centuries are finally
being appreciated in a unique gastronomic sense.
Whilst in the past, the traditional breed of Istrian ox - the Boškarin - worked
in the fields alongside the peasants, dragging stones for building houses and
walls, and ate modestly due to the poor grazing conditions, providing the
little milk needed for each family, today its meat is the source of regional
gastronomic delicacies.
The tradition of tastes returning to the kitchens of renowned restaurants and
to the centre of attention of top gastronomes enriches what Istria has to
offer, revitalising old customs in preparing food with the gorgeous aromas
that used to spread in the old days from the rural homes in the inland part
of the peninsula.
Boiled or sautéed, or baked under an iron bell (“pod pekom”, the traditional
method which involves the slow cooking of food, placed on an earthen
platter, covered with an iron bell and then surrounded by very hot embers),
prepared as a sauce with “fuži” pasta or gnocchi, marinated in home-made
olive oil or aromatized with wild plants... these are just some of the ways
to prepare this unique meat from our ancestors’ kitchen. The expression
“home-cooked” these days has become magical, truly describing the meat
of the Istrian ox, and awakens nostalgia, arouses your senses and makes
your stay in Istria even more special!

What is a truffle? Gastronomes still cannot agree if it is a type of food or a
type of spice, but they are positive about one thing – truffles are the peak
of gastronomy.
It is a strange and mysterious bulb hidden in the ground with no stem above
and it can only be found with the help of specially trained dogs or pigs.
In Istria there are three kinds of soil – red in the coastal area, white around
the Učka Mountain and grey in the inland. There, in the moist, grey dirt
grows the truffle, and the area in which it grows spreads from the valley of
the River Mirna to the Ćićarija Mountain in the north, and from the town of
Pazin and to Raški Zaljev (bay) in the south.
This strange and unsightly bulb, famous as an aphrodisiac, with its intense
and unique fragrance, has remained the inviolable king of cuisine from
ancient Roman times to the present day. The truffle is always an inexhaust-
ible source of culinary achievements, from appetizers and salads to main
dishes and desserts.
The Istrian white truffle is one of the most prized in the world. It matures
in autumn and is best eaten freshly picked, in the authentic setting of our
taverns and restaurants. As well as white truffles, which are the most prized
and expensive truffles (Tuber magnatum), maturing from mid-September
until the end of January, in Istria we may also find numerous species of black
truffle which mature almost throughout the entire year.
On our White Truffle Route we have chosen taverns and restaurants which
offer imaginative truffle-based menus combined with excellent Istrian wines,
and are outstanding in terms of the beauty of their setting and the kindness
and professionalism of their staff. Thanks to all of the above, these selected

'Fuži' with truffles (for 4 persons)
Ingredients
500 g “fuži” (pasta)
20 g white truffles
20 g black truffles
80 g butter
100 ml cooking cream
Salt and pepper
Preparation
Put the “fuži” in hot, previously salted and oiled water and cook as per pack-
age instructions. Melt butter in a frying pan and leave to boil for 1 - 2 minutes.
Remove from the stove and add thinly grated white truffles and the cooked
and drained noodles, then mix and put on plates. Grate black truffles over
each portion and serve.

Inner Istria, that likeable world of green hills and fertile valleys, provides a
fantastic backdrop for car trips into the colourful villages and locations, whose
names you probably won’t be able to pronounce, but which will startle you
with their beauty and you won’t be able to forget them. Precisely in that
inner part of Istria, diligent Istrian peasants have restored the old stone
houses of their ancestors in a traditional way, and today they welcome
their guests there, offering them traditional Istrian cuisine. Many of these
households still live off their land, offering meals made entirely of their own
products (agro-tourism), while others make a living by serving meals based
on traditional Istrian cuisine (taverns).
Traditional Istrian food is based on meat and pasta, and the most famous
meals are Istrian pršut ham, dried in the Bora wind (a local dry wind), sheep
cheese and Istrian bacon as a cold appetizer, Istrian “maneštra” (a soup
with beans, potatoes and dried meat), “fuži” (a kind of pasta), gnocchi or
ravioli (pasta) with game sauce or chicken gravy as a warm appetizer, and
veal cooked under an iron bell, or ombolo and sausages with cabbage as
a main dish. Dessert consists of traditional sweets, such as: fritule (a kind
of small donut) and kroštule (a dry sweet), or fresh fruit in season from
someone’s own garden.

believe you will experience a real adventure of original Istrian flavours and
all the kindness and warmth of the Istrians.

Gnocchi with stew (for 4 persons)
Ingredients for preparing a stew
600 g veal Oil (mixed olive and sunflower)
4 cloves of garlic
3 onions
3 dl mashed tomatoes
2 carrots
Rosemary
Parsley
A couple of laurel leaves
Salt
Pepper
0.2 dl red vine
PreparationCut a piece of veal into even sized pieces and add salt. Fry the onions. As the
onions start to acquire a golden colour add the meat and cook on a low heat for
five minutes. Add chopped garlic and mashed tomatoes. Cook and add water when
needed. Add crumbed laurel leaves and rosemary. Add some salt and pepper.
Cook until the meat softens. When almost finished, add the red wine. Add some
pepper and sprinkle with parsley. When the stew thickens the meal is finished!
Ingredients for preparing the gnocchi600 g potatoes
2 eggs
200 g flour (more if needed)
A tablespoon of lard (or margarine)
Some oil
Salt
PreparationWash the potatoes with the peel still on and cook them. Peel the cooked potatoes and mash them onto the table or surface where you will prepare the gnocchi.Add eggs, salt, lard, oil and flour to the mashed potatoes and knead the dough. Roll the dough into long “sausages” and then cut to pieces of 2 - 3 cm in length.Place the gnocchi into salted boiling water and cook until they rise to the surface. Take them out with a scoop and serve covered with the already prepared stew.

The word asparagus is of Greek origin and means offshoot. The whole genus
of asparagus includes over 300 species, of which Asparagus officinalis is used
as food, while some others are used as decorative plants.
Asparagus is one of the oldest wild Mediterranean cultures, and it has been
grown here since ancient times. The Egyptians used the wild asparagus which
grew along the banks of the Nile not only for food but also as offerings to
their gods, and, in the tombs of the Pharaohs pictures of it were painted
on the walls. The Greeks picked wild asparagus, and, like the Romans, they
believed it to have healing properties, so they also used it as a remedy for
insect bites and toothache. The Romans were the first to cultivate the plant,
they even knew how to preserve it by freezing: after picking it in the south,
they would transport it in carriages to the Alps, where they would keep the
shoots in the snow for up to six months, and then bring them back for major
celebrations. The Arabs believed those shoots to have aphrodisiac proper-
ties, and they are mentioned in a 16th-century love manual as stimulants
for love quests. Madame Pompadour had the same beliefs and the French
King Louis XIV had the shoots grown in greenhouses so he could have them
throughout the year.
Wild asparagus is definitively one of the most prized wild plants which flour-

'Fritaja' (fry-up) with wild asparagus (for 4 persons)
Ingredients
600 g wild asparagus
8 eggs
1 onion
100 g ‘pršut’ (prosciutto - a special form of ham)
Olive oil
Salt and pepper
Preparation
Wash the asparagus, remove the lower, woody part, and break the soft stems
with the tips into shorter pieces (app. 3 cm). Heat five spoonfuls of olive oil
in a frying pan, add the chopped onion, a little salt and fry on low fire until
the onion becomes soft. Then add the prepared asparagus, add pepper and
cook for some 4 - 5 minutes (the younger the asparaguses are, the shorter
cooking time they need). Mix the eggs in a bowl, add thin strips of pršut
ham, and a very small amount of salt and pepper, mix and pour over the
asparagus. Your “fritaja” can be firm or soft. Serve.

The history of Istria and its people has always been closely tied to the sea,
and the historic importance of Istrian coastal cities is noticeable in all the
elegance of their buildings and palaces. Over the last five hundred years
the sea and the beauty of the Istrian coast have contributed to Istria’s rapid
development into one of the leading tourism regions on the Mediterranean.
Thanks to the clean seawater, rocky coastline and sandy seabed of the open
sea off Istria’s shores, the sea area is rich in fish and other sea food. It is the
combination of traditional fishing, the wealth of the sea and tourism that
have led to the boom in gastronomy in the coastal area, so today there is
a number of supreme restaurants that will provide you with unforgettable
gastronomic experiences, based on fresh fish and sea food, combined of
course with supreme Istrian wines and extra virgin olive oil.
Try supreme fish, prepared “salted” or baked in the oven with potatoes, or, why
not raw with a little lemon juice and olive oil prepared right in front of you?
Enjoy your sea food risotto or a combination of shrimps and wild asparagus,
raw oysters from the Lim Bay or Channel, grilled shrimps or buzara, and for
a cold appetizer, an outstanding crab or octopus salad, or simply raw shrimp
tails with a glass of refreshing Istrian Malvasia.
White sole is a veritable delicacy of especially high quality in the area of
north-western Istria. The catch of local fishermen is the basis of both the
traditional cuisine of the region and the dishes prepared by sophisticated
culinary artists.
For all fish and sea food fans there is a gastronomic event called “Sole Fish
Days” held in the northwest of Istria from the second half of October until
mid-November, when it is possible to enjoy this extraordinary fish prepared
in the widest various of ways in specially selected restaurants and taverns.

the book: “Sole, delicious sole” written by Mrs Rosetta Martinčić Zancola,
owner of the Maruzza Restaurant.

Spaghettini in Sole Sauce with Red Pepper
Ingredients
320 g spaghettini noodles
400 g sole fillet
1 clove of garlic
1 spoonful of minced parsley
1 dl extra-virgin olive oil
1 dl white wine (Malvasia from Istria)
Salt
Red pepper
Preparation
Fry the garlic slightly in the olive oil, add the red pepper and the sole fillet cut
in stripes and season with salt. Afterwards add white wine and minced parsley.
In the meantime boil the spaghettini, add them to the prepared sauce and
leave them on a low flame for a couple of minutes.
The dish is completed by adding some olive oil at the end. The secret of this
recipe is the red pepper: it should be ground while still fresh.

Northwestern Istria gourmet guide
Istrian fishermen used to say that, “There are no squids until your hands
freeze”. Once the agricultural season was over, people would go squid fishing
in the shallow bays of Savudrija, Umag, Novigrad and other fishing ports
of north-western Istria, known for their rich fishing tradition from ancient
times. The little predators were patiently hunted with ingenious baits, while
children tried their luck with butterfly nets from the shore.
Its first known name – calamari – comes from the ancient Greeks. Although
the name became common throughout the Roman Empire, the Croatian
term “lignja” is derived from the Latin “loligo”. The Greeks, Byzantines and
the Venetians who ruled the Istrian shores for over 500 years, also came
up with the first recipes, and squid is now synonymous with a fast seafood
meal throughout the world.
The restaurants have them on their menus 365 days a year, but nothing
compares to the fresh squids from the Adriatic. The clean waters of the
Adriatic, with above average salt content, give them an authentic flavour,
best noticed during winter, when the squids are young and prefer the shal-
low bays of the northern Adriatic, where food abounds.
To help you enjoy the taste of the Adriatic squid, north-western Istria has
dedicated an entire event to this arthropod. During the “Adriatic Squid Days”,
from December until the beginning of January, restaurants and taverns will
offer menus with this tasty seafood at reasonable prices, paired with local
wines and olive oils of global renown.
Order grilled “baby“ squids or larger samples in stew, enjoy creamy black
risottos and, if you are after that authentic taste we owe to generations
of caring housewives, opt for Istrian stuffed squids, with thinly sliced pork
shoulder meat, prosciutto, rice, sheep cheese and Mediterranean herbs.

Braised Adriatic squids with polenta (for 4 persons)
Ingredients
1 kg Adriatic squids
500 g onions
5 garlic cloves
1 dl olive oil
10 g parsley
1.5 dl white wine
Fish stock
0.5 kg cornmeal - polenta
Salt and pepper
A slice of lemon
Preparation
Clean and chop (into squares) the Adriatic squid. Fry the onions on olive oil
until they turn gold. Add the chopped parsley leaves and garlic. Add squids
and braise until they are tender and the sauce thickens, meanwhile basting
them with white wine and fish stock. Season with salt, pepper and a slice
of lemon. Add a tablespoon of olive oil and salt to a litre of hot water and
cook polenta on a low heat. Serve cooked polenta warm with braised squids.

Istrian shellfish: scallops, mussels, Venus shells, Noah’s arks, queen scallops
and oysters, are a special experience for the sophisticated palate. Best during
winter, their light but full flavour derives from a seabed abounding with life,

the estuary of the River Mirna, off the western coast of Istria. You can taste

with local extra virgin olive oil and a drop of lemon.

sophisticatedly combining the shellfish with risottos and homemade pasta.

The Istrian “Shellfish Days”, organized by the tourist boards of Umag,

Scallops in Breadcrumbs (for 4 persons)
Ingredients
3 scallops
5 g breadcrumbs
5 g butter
2 tsp olive oil
Preparation
Clean fresh scallops, add a teaspoon of olive oil, a teaspoon of butter, gradu-
ally adding small quantities of breadcrumbs.
Bake in an oven at 200°C for approx. 10 minutes, until scallop meat turns
white and the breadcrumbs golden-brown. Serve warm.
