turnoutandawonderfulnightcelebratingDickHaugen’sretirementfromNorthOaksGolfClub.Morethan400attendeesheardgreattributestoandheartfeltmemoriesaboutDickfromanarrayofspeakers.IwanttothankMayorJohnSchaafandMayorElectMikeEgelstonwhodeclaredJanuary5,2015asDickHaugenDayinNorthOaks.Inaddition,RollieCarlson,RayVennewitz,ChuckYoung,TomDiffleyandAndreaMarboe(Dick’sdaughter)recognizedDickwithaperfectmixofhumorandwarmththatwewillallremember.Also,IwanttothankJoeCoyneforbothorchestratingtheeveningandservingasemcee.Hewasexceptional.Finally,Iwanttothanktheentirestaffwhoworkedhardtomakeitaclassynightfortheiroldboss.Itwasafittingtributetoanoutstandingcareer,andIthinkDickandhisfamilyenjoyedtheevening.

PlansareunderwayforJoel’sretirementpartyintheyear2040!Untilthen,Joelhasbeenbusymeetingthemembersandbecom-ingimmersedintheday-to-dayactivitiesoftheClub.He’shitthegroundrunning,andI’mconfidenthewillprovetobeagreatleaderofourClub.

Thankstoeveryonewhohelpedplan,workedatandattendedthePresident’sGala.Wehadafantasticturnout,andagreattimewashadbyall.Pleasemarkyourcalendarsforournewsummerevent:TheWhitePartyonAugust14,2015.TheWhitePartyisyetan-otherwonderfulideageneratedbyourHouseCommitteethatyouwillbehearingmuchmoreaboutinthecomingmonths.

I’mnotsurewhat’swrong,butDennisJohnsonhasnothadahole-in-oneinmorethanfivemonths.Irealizethecoursehasbeenclosedformostofthattime,butDennis,youneedtopickupthepace!

Our North Oaks Golf Club sign has been garneringalotofattention,andIwanttoanswerafewquestionsaboutitthatI’vere-ceived.Yes,itisnew.Somefolkshaveaskedifit’salwaysbeenthereandtheyarejustnownoticingit.No,itdidnottakelongertocon-structthantheGoldenGateBridge,althoughitwasclose.No,itwasnotexpensive.Thesigncameinwellbelowbudget,withasimpledesignthatIthinkcomplementsourclub-housenicely.Ihopeyoulikeit.

Withthecoldweatherandsnowycondi-tions,Iwouldguessthatgolfisnottopofmindformanypeoplethistimeofyear;however,youcanstillenjoythecourseforwinteractivitiesincludingcrosscountryski-ing,snowshoeingandwalking.Brianandhisteamhavestakedthecourse,andIencour-ageyoutotakeadvantageoftheseoff-seasonopportunities.Ifsnowandcoldarenotyourthings,thegoodnewsisweshouldbegolfinginabout90days.TheMasters,mypersonalharbingerofspring,startsApril9.Untilthen,takeadvantageofalltheClubhastoofferintheoff-season:Enjoyagreatmeal,stopbyforhappyhourorhavebreakfastonSundaymornings(greatideaDoc!).Beforeyouknowit,wewillbebackoutsideonourwonderfulgreencourse.

Ifthereisonethingthatstandsoutaftermyfirsttwomonths,itisthatthemembers

andstaffatNorthOaksGolfClubaresomeofthefinestIhaveevermetorhadthepleasureofworkingwith.Dickdidatremendousjobselectingandretaining,whatIthink,isaworldclassteamofclubprofessionals.FromJessicaandKayintheofficetoKristaandthefoodandbeverageteamtoRayandBrianattheheartofourgolfoperation,everyoneiscommittedtocreatingamemorableexperienceforyoueachtimeyouvisityourclub.

YourNorthOaksteamalsoembraceschangeandweareexcitedabouttheop-portunitiesthatlieahead.Itishumannaturetobeuncomfortablewithchange,butitwasBenjaminFranklinwhosaid,"Whenyou'refinishedchanging,you'refinished."Wedomanythingswell,butIliketoask,“Howcanwedoitbetter?”“Howcanwenotjustmeet,butexceedyourexpectationseachtimeyou

visityourclub?”Iwantyoutoknowthatallchangeswillbethoughtful,considerallpointsofview,andinvolveyou.Yourfeedbackisthemostvaluablepieceofinformationwecanreceive.Inthecomingweekswewillbeask-ingyoutocompleteacomprehensivesurveyaboutyourclub.Ihopeyoucanfindthetimetoprovideuswithyouropinionandbeapartoftheprocess.

Ourgoalistocreateexceptionalmemberexperiencesthatyoucan’thelpbutsharewitheachotherandpotentialnewmembers.Todothat,weneedtouseactionablemetricsthathelpuscreateaneffectivebusinessmodeltoleadourteamandcreateasharedvisionforwhatwewantNorthOaksGolfClubtobe.

ItiswithmixedemotionsthatIhaveacoupleofstaffingchangestoannounce.Busi-nessManagerBillDoylehasannouncedhisretirementafternearly25yearsofservice.HislastdaywillbeMarch27th.Billhasbeen

atrueassettoNorthOaksandwillbedearlymissed.JustinDordal,currentlyouraccount-ingassistant,willassumeBill’sdutiesasournewDirectorofFinanceonMarch28th.Jus-tin’sbetterhalf,Krista,hasalsoannouncedthatshewillbesteppingdownfromherroleasFood&BeverageManager.Kristajustcom-pletedher10thyearofserviceandhasdoneagreatjobinhernewposition.Shewillbewithusuntilareplacementhasbeenselectedandtrainedtoensureasmoothtransition.

watchedmyalmama-terwintheir4thstraightDivision1FCSNationalChampionshipinFootball,mythoughtswentbacktomytimeatNorthDakotaStateUniversityandsomeoftheles-sonsIlearnedbothintheclassroomandonthefootballfield.Onesuchlessonlearnedonthefield,“The6P’s,”translatestosomeoftheitemsweareaccomplishingatNorthOaksGolfClubinthewintermonths.

“The6P’s”areasfollows:ProperPriorPreparationPreventsPoorPerformance.Icanstillrememberourfootballcoachsayingthisadageaswewerehardatworkwithourwinteroff-seasonstrengthandconditioningprograms.Aswinterturnedtospringandfootballseasonbegan,hewasquicktomen-tionthehardworkandadversitywefacedthroughouttheprioryearpreparingusfortheseasonnowuponus.

Wetakethesame“6P’s”mentalitytotheGroundsTeamhereatNorthOaksGolfClubinthewintermonths.Webeginbyevaluatingthepreviousseason;identifyingthestrengths,challenges,andopportunitiesforchangetoprepareforevenmoresuccess-fulgolfingseasons.Forinstance,threeyearsagoweidentifiedthemovementofwateroffthegolfcourseasoneofourchallenges.Wesawthisasanopportunityforchangeandbeganourdeeptineaerationofthefairwaysinthefall.Webelievethatopeningup6inchesofsoiltoabsorbthewaterhaspaidoffwithbettergolfingconditionandhealthi-

erturf.Westillhaveworktobedoneinthisarea,buthavetakenstepsintherightdirec-tiontryingtopreventpoorperformance.

Afterweevaluatepreviousseasons,wepreparefortheupcomingseasonbydevelop-ingourFertilizerandFungicidePrograms.Wepayspecificattentiontothefertilizerneedsoftheturf.Onthetees,weplacemorefertilizertoencouragerecoveryfromdivots.Onfairways,welooktopreventflushesofgrowththatleadstodiseasedevelopmentandextraclippings.Onthegreens,ourtargetistoprovideasteadyamplelevelofnutrientstokeeptheturfhealthy.Wearecarefulnottoallowanyexcessthatwouldleadtomoregrowth,whichequalsslowergreenspeeds.Thefungicideprogramisde-velopedtotargetspecificdiseasesthrough-outthegrowingseason,alwaysassuringrotationofdifferentproductstominimizeresistanceissues.Thisresistancestrategyisverysimilartorotatingantibioticsfordiseasecontrolforhumans.Ourfungicideplanisalwaysflexibleasweaccountfordifferentweatherconditionsoverthecourseoftheseason.

Anotherhugecomponentofourwinterplanningisdevelopingourstafffortheupcomingyear.Eachyear,wehavemanyreturningstaffmembersaswellassomenewfacestohelpwiththemanyduties.Wetakeextremelydetailedrecordsofvariousstaffneedsthroughouttheseasonandtrytoformateamtomeetallofthoseneeds.Weneedtofillpositionsthatrangefrommid-Marchthroughmid-November.Ourstaffgrowsto28peopleinthepeakseasonoflateMay

throughAugust.Wefillmanyofourposi-tionsbyearlytomid-March,soifyouknowofanyoneinterestedinemploymentontheGroundsTeam,encouragethemtoapplyearlybysubmittinganapplicationviatheClub’swebsite(www.northoaksgolfclub)andclickingthe‘employment’tab.WeespeciallyseemtostruggletofindindividualstoworkfromApriltoOctober.

Finally,wetaketimeinthewintersea-sontoattendtradeshowandconferencesto learn from some of the best in the Golf CourseManagementfield.Ican’ttellyouhowmanytimeswearelisteningtospeak-ersandseehowanideacandirectlybenefitNorthOaksGolfClub.Somebenefitsaresmallandothersmoresignificant,butallareworthourtimeaswepreparetodeliveran-othersuccessfulseasonatNorthOaksGolfClub.ProperPriorPreparationPreventsPoorPerformance.

getmoreinvolvedinanexcitingenvironmentalimprovementprogramforourgolfcourse.TheAudubonCooperativeSanctuaryProgram(ACSP)providesinformation,guidance,andsupporttohelpgolfcoursesconductproactiveenvironmentalprojectsthatbenefitpeopleandtheenvironment.Wehavemanysoundenvironmentalpracticesinplacealreadyandthisprogramwillhelpusexpand

upontheseandgainrecognitionforourefforts.Theprogramaddressesfivekeyenvironmentalqualityareas:WildlifeandHabitatManagement,ChemicalUseSafetyandReduction,WaterConservation,WaterQualityManagement,andOutreach&Education.

OurfirststepwasEnvironmentalPlanning.Recently,wehavefilledoutaSiteAssessmentandEnvironmentalPlantotellAudubonIn-ternationalstaffaboutourorganizationand

thetypesofprojectswewanttopursue.Theynowhaveabettersenseofwhoweareandwhatourgoalsare.Oncewehaveimplement-edavarietyofprojectsineachenvironmentalcomponent,wecanapplytobecomeaCerti-fiedAudubonCooperativeSanctuary.Thisexemplarydistinctionisanationalrecogni-tionofenvironmentalexcellencebestowedonorganizationsthataretakingaleadershiproleinconservationprojects.Aswebeginthis

Wehavebeguntheprocessofplanningnewmenusandworkingwithafewofourfarmersselectingitemstobegrownfortheupcomingseason.InthecomingmonthswewillseetheintroductionofanewbreakfastmenuthatwillhighlightalloftheClub’sclassicsalongwithsomenewitems.Wewillalsocontinuetoseenewmenusforhappyhourandthetendollarmenuwhichchangemonthly.MakesuretomarkyourcalendarsforValentine’sDay.Wehaveaddedseveraloptionsthisyear.Wewillfeatureamulti-coursetastingmenuin

theDiningRoom.TheHillRoommenuwillconsistoffamily-styleItalianfavoritesandtheTurnerBar&Grillewithfeatureapub-stylemenu.

Thecertificationprocesscanbedoneinarelativelyshorttime,buttheenvironmentalstewardshipwillbecontinuous.Thisproper-

tyisavaluablegreenspacetothelocalcom-munityandregion.Waterflowingthroughthegolfcourseleadsintomanywaterwaysdownstream,withthat,ourenvironmentalstewardshipeffortisveryimportant.Also,thenaturalhabitatsandwildlifepresentonthegolfcoursecreateanimportantecologi-calareathatweareresponsibleformaintain-ingandpreserving.TheACSPprogramismeanttobeacommunityproject,increasingenjoymentforallthosewhousethegolfcourse.Thosewhoareinterestedinassistingwiththisprocess,pleaseletusknow,aswewillbelookingtomakeprogressassoonasthesnowmelts.

Method:Combinethechocolateandthebutterina

largebowlsetoveradoubleboilerandletthechocolatemelt.

Inanotherlargebowlcombine¾ofthesugarwiththeeggyolksandbeatthemix-turewithanelectricbeateruntilaribbonisformedwhenthebeaterislifted.

AddtheremainingsugarandtheGrandMarniertothechocolatemixtureandcom-bineitwell.

Inthebowlofanelectricmixerbeattheeggwhitesuntiltheyformsoftpeaks.

Foldthechocolatemixtureintotheeggyolkmixtureandthengentlyfoldinthebeateneggwhites.Transferthecakemixturetothepreparedbakingpan.Filladeep-sidedbakingpan1/2fullwithwaterinordertocre-ateabain-marie,carefullytransferthecakepanwiththemoussecaketothebain-marie(thewatershouldreachabout2/3thewayupthebakingpan),andbakethecakeinapreheated230F.degreeovenfor40minutes.Afterthemoussecakeisbaked,letitcool,andtransferittotherefrigerator.Letthecakechillforabout12hoursbeforeunmoldingit.

Tounmoldthecake,warmthepanslightlyinhotwaterorovermediumheatforafewseconds.Putalargeplateoverthecakeandturnthecakeupsidedownontotheplate.Sprinklethecakewithcocoapowderforgarnish.
