France  –  Minervois    The  Southern  Minervois,  where  St.  Antoine  is  located,  is  characterised  by  a  par5cularly  mild  climate.  Temperature  varia5ons  are  not  as  pronounced  as  elsewhere  in  the  Minervois,  slowing  the  maturing  process  down  in  comparison  and  adding  to  our  wines’  balance.    Viniculture  is  so  renowned  here  that  no  effort  was  made  to  promote  the  region’s  wine.  The  winemakers  rather  concentrated  on  the  product  itself.      Especially  during  the  last  few  years,  our  investment  in  various  vineyards  have  produced  wines  of  outstanding  quality  with  huge  effort  and  reduced  yields    –  all  of  this  for  wines  at  very  low  prices  but  with  excep5onal  flavours.      

The  wine  farm  is  owned  by  Petra  and  Christoph  Lehmann  from  Berlin,  a  married  German  couple  with  four  children.  Their  great  love  for  wine  and  the  Languedoc  persuaded  them  to  purchase  Domaine  St.  Antoine  in  2011.

Grape harvest and winemaking:

The harvest is carried out by hand, into crates holding just 18 kg, with the aim of minimising damage to the grapes. Our pickers select only the best, healthiest grapes.

We check the grapes regularly for ripeness and flavour development to ensure they are picked at the right moment.

The grapes are sorted a second time on a conveyor belt to ensure only healthy, ripe fruit is used.

The grapes are de-stemmed, pressed very gently in an enclosed pneumatic press, and then undergo minimal skin-contact.

Fermentation is carried out in stainless steel tanks at a controlled low temperature using selected yeast to emphasize the varietal aromas.

The young wine is then matured in tank on its fine lees before bottling. The  blend  is  50%  Fetească  Regală,  35%  Pinot  Gris  and  15%  Tămâioasă  

Românească.

Wine tasting: A light lemon-yellow hue with green highlights. A fresh and easy to drink wine. This wine shows notes of peach and lime on the nose. The palate is bright with a crunchy acidity and delicate honey flavours

How to enjoy:

Best served well chilled at around 7°C. We suggest you match it with goats cheese. It also goes well with seasonal salads or grilled fish. It could also make an appealing aperitif with nibbles or appetizers.

This is a unique blend, bringing together a local variety with an international favourite. The two grapes harmonize well in this special wine.

Geology and features

Well-drained, sandy-clay soil. Plenty of breezes from the river Olt, helping to reduce disease pressure and always producing

very healthy grapes.

Clay with a little chalk. The microclimate here favours early

ripening

Grape harvest and winemaking: The harvest is carried out by hand, into crates holding just 18 kg, with

the aim of minimising damage to the grapes. Our pickers select only the best, healthiest grapes.

We check the grapes regularly for ripeness and flavour development to ensure they are picked at the right moment.

Then grapes are sorted a second time on a conveyor belt to ensure only healthy, ripe fruit is used.

The grapes are de-stemmed, pressed very gently in an enclosed pneumatic press, and then undergo minimal skin-contact.

30% Fetească  Regală:  the  majority  of  which  was fermented and aged for 10 months in French oak barrels with regular lees stirring.

70% Pinot Gris: of which 30% was fermented and aged for 10 months in French oak barrels. The remainder was fermented in stainless steel.

Wine tasting: A bright golden hued wine. The wine shows a rich and complex bouquet, with notes of white

flowers with dried apricot and a hint of vanilla. On the palate, this wine is generous, mouth filling and well-structured,

with flavours of peach and spiced pear.

How to enjoy: We suggest you serve it lightly chilled at around 9 °C. It would be particularly good with chicken and wild mushrooms or with

truffle risotto. It goes very well with grilled salmon and all types of poultry. You could even match it to desserts with apple or pear.

Grape harvest and winemaking:

The harvest is carried out by hand, into crates holding just 18 kg, with the aim of minimising damage to the grapes. Our pickers select only the best, healthiest grapes.

We check the grapes regularly for ripeness and flavour development to ensure they are picked at the right moment.

The grapes are sorted a second time on a conveyor belt to ensure only healthy, ripe fruit is used.

The grapes are de-stemmed, pressed very gently in an enclosed pneumatic press, and then undergo minimal skin-contact.

Fermentation is carried out in stainless steel tanks at a controlled low temperature using selected yeast to emphasize the varietal aromas.

The blend is 60% Negru de Drăgăşani, Merlot 20% and Pinot Noir 20%

Wine tasting: A deep violet wine with ruby highlights. A fresh and easy to drink wine. The palate has plenty of juicy berry fruit, nicely rounded structure with

fresh acidity.

How to enjoy: We suggest serving this wine at around 17 °C It goes perfectly with grilled meat. We also recommend this wine with BBQ ribs. It pairs well with Asian food too.
