Clinical researchOne study used 500 mL of beet root juice for six days and compared it to a placebo that used beet juice depleted of nitrates. Benefits included increased exercise tolerance and muscle performance for the regular beet juice group but no change for the nitrate depleted group.

The beet juice group also showed a reduction in resting blood pressure rates. The exercises involved testing the oxygen demands of walking, moderate intensity running and severe intensity running.

The time to exhaustion during the severe intensity running portion was increased by 15% for the group drinking regular beet juice. The 500 mL of juice is roughly equivalent to 6 tbsp. (60 g) of Salus® Red Beet Crystals.

• Had increased nitrite levels in plasma three hours after drinking the juice (nitrates in beets convert to nitrites, then to nitric oxide)

• Were able to walk 18% further before onset of pain, 17% longer peak walking time

• Had increased tissue oxygenation and decreased blood pressure both at rest and during exercise

Q: Why is citric acid added to the beet crystals?

A: It helps prevent discoloration and preserves freshness. The crystals contain 2% or less of citric acid.

Citric acid used in organic products is required to meet two criteria: it must be from fermentation of a sugar source and non-GMO.

Corn, sweet potato and tapioca are all potential sources of citric acid.

However, the end product is purified to such a degree that none of the source material remains.

Q: How should I store the product after opening?

A: After opening, store in a dry place. Replace the cap tightly after use as Red Beet Crystals readily absorb moisture when exposed to air. Although moisture may cause ”caking” of the crystals, the product’s integrity will not be compromised.

Q: Is it likely to change the color of my urine?

A: Beeturia is the harmless change in color of urine to a red or pinkish color as a result of the red pigments in beets not being broken down by about 10-15% of the population.

This is thought to mainly be due to the nitrate content of beet juice. Nitrate is broken down by saliva into nitrites, which then turns into nitric oxide in the body. Stomach acid aids this conversion.

This is a gaseous signaling molecule that is beneficial in small amounts by causing vasodilatation: blood vessels relax, blood pressure normalizes, and tissue perfusion of oxygen and nutrients improves.

The 500 mL of juice is roughly equivalent to 6 tbsp. (60 g) of Salus Red Beet Crystals. The Red Beet Crystals have been analyzed for their nitrate content and found to have 6700 mg/kg. This means each 200 g jar should have 1340 mg of beet nitrates. Each 10 g tbsp. would have 67 mg.

Questions and answersQ: How concentrated are the finished crystals?

A: By weight they are 9 times more concentrated than red beet juice. So 100 g of Red Beet Crystals would be the same as 900 g of red beet juice. Put another way, 3 tbsp. of Red Beet Crystals is made from approximately 270 mL (just under 10 fl. oz.) of juice.

The 9x concentrate compares the crystals to the juice – not to whole red beets. It would be even more concentrated when compared to the weight of whole red beets.

Each 200 g jar has the equivalent of 5.5 lb/2.5 kg of whole beets. This means each 10 g heaping tbsp. is made with 0.275 lb/125 g of beets. Each tbsp. = approx. 63% of a medium beet.
