overthrowing the southern government at that time. When Lodge arrived in Saigon, an old villa in District 3 was

converted into the Ambassador‟s residence. Mr. Lodge lived in this home between1960-1965 and the architecture is

a mix of Vietnamese, French and American. Today it remains a private residence owned by Trails of Indochina and

it has been fully restored to its former glory. The Vietnamese cooking class commences with a visit to Ben Thanh

market to buy all the fresh ingredients before continuing to this historic home for a private hands-on cooking

demonstration. The guide will provide an orientation tour of the house while the chef prepares the ingredients.

Learn typical Southern style dishes throughout the morning. The chef will show you how to serve each dish before

the meal, and you will need to master the chopsticks before you can savor your own culinary creations in the old

Saigon is the country‟s commercial centre and, with over nine million inhabitants and five million motorbikes, a city that never sleeps. Despite the well-documented hustle and bustle, Saigon retains its connections with the past. A walking tour to admire Saigon‟s historic landmarks is a must. Transfer to Dong Khoi street., or Rue Catinat as it was known in the time of the French occupation, to discover some of the beautiful French colonial buildings built in the late 19th and early 20th century. Appreciate the splendidly restored exteriors of the Opera House and the former Hotel de Ville which are still two of the finest buildings in Saigon. Wander up to the Notre Dame Cathedral,

Tuesday 17 Feb 2015: Cycling In Mekong Delta - Cai Lay (7km) Depart early in the morning from Saigon and head two hours to the southwest. Along the way notice lush rice paddies and fruit farms emerging alongside the highway. Upon arrival in Cai Lay, board a charming wooden boat to enjoy countryside scenery and river life. Then stretch your legs a bit and hop on a bicycle for a short ride of about 7km (over easy, level terrain) along narrow village lanes, past fruit orchards and local cottage industries. Locals will often greet you with a hello or “xin chao” as you pedal by. Arrive at the home of a tropical fruit farmer and have a walk around his orchard. Enjoy the opportunity to taste fresh fruits. Then relax while enjoying the view from a small sampan boat as you are paddled slowly along tropical canals. Disembark and walk through this Mekong village to a local home and enjoy a home-hosted lunch of Mekong Delta specialties. Limitation of liability & travel participation agreement Trails of Indochina Ltd. or its agents shall not be held liable for (A) any damage to, or loss of, property or injury to, or death of, persons occasioned directly or indirectly by an act or omission of any other provider, including but not limited to any defect in any aircraft, watercraft, or vehicle operated or provided by such other provider; and (B) any loss or damage due to delay, cancellation, or disruption in any manner caused by the laws, regulations, acts or failures to act, demands, orders, or interpositions of any government or any subdivision or agent thereof, or by acts of God, strikes, fire, flood, war, terrorism, insurrection, sickness, quarantine, epidemics, theft, or any other cause(s) beyond their control. Participants waive any claim against Trails of Indochina Ltd. for any such loss, damage, injury, or death.
