February 19th we will be celebrating the first day of spring. Time to clear out the flower beds and think about what plants, flowers and veggies we want to start growing. Time to get outside and enjoy the glorious spring weather. This month we will be creating and reading poetry. We will be exploring interesting themes to create, share and inspire! your favorite green outfit and join the

party. Maybe try a little Irish Jig? Our

chefs will be preparing a delicious

meal of the Irish-American traditional

dish of corned beef & cabbage. ( Did

you know ham is actually the more

common dish in Ireland?) Any basketball lovers out there? We are

also looking forward to March Madness– who is your favorite team?

GOOD MOOD FOODS: Eat your vegetables ! Veggies such as broccoli and

spinach are good mood foods because of folate's mood-

controlling effect. Also, Iron, found in decent amounts in

leafy greens such as spinach, is involved in many

neurological functions that can help improve mood. A

large study at the University of Sydney School of Public

Health noted that people who ate 3-4 daily servings of

vegetables had a 12 per cent lower risk of stress than

those who ate 0-1 servings daily. https://sydney.edu.au/news-opinion/

SPINACH & FETA SOUFFLE Position rack in lower third of oven; preheat to 375

degrees F. Coat a 2-quart souffle dish or similar deep,

straight-sided casserole dish with cooking spray.

Sprinkle with breadcrumbs, tapping out the excess. Heat

a large skillet over medium heat. Add spinach and cook,

stirring, just until wilted, 2 to 3 minutes. Transfer to a

colander to drain. Squeeze out excess liquid and chop.

Wipe out the pan, add oil and heat over medium heat.

Add onion and garlic and cook, stirring, until softened, 2

to 4 minutes. Add the chopped spinach and cook,

stirring, until heated through and quite dry, about 2

minutes. Heat 1 cup milk in a heavy medium saucepan

until steaming. Dissolve cornstarch in the remaining 1/2

cup cold milk in a small bowl. Add to the hot milk and

cook, whisking constantly, until thickened and smooth, 2

to 3 minutes. Remove from the heat and let cool slightly.

Add egg yolks, one at a time, whisking until incorporated.

Stir in the reserved spinach mixture, feta, mint (or dill),

1/4 teaspoon salt and pepper. Beat egg whites in a large

mixing bowl with an electric mixer on medium speed

until foamy. Add the remaining 1/4 teaspoon salt;

gradually increase speed to high and beat until stiff

(but not dry) peaks form. Whisk about one-third of

the beaten egg whites into the spinach mixture to

lighten it. Fold the spinach mixture back into the

remaining whites with a rubber spatula. Turn into the

prepared dish and smooth the top. Bake the souffle

until puffed and the top feels firm to the touch, 35 to

40 minutes. Serve immediately. EatingWell Test Kitchen

1 onion (medium, finely chopped)

1 clove garlic (finely chopped)

1 1/2 cups low fat milk (divided)

1/3 cup cornstarch

1/2 cup crumbled feta cheese

2 tablespoons chopped fresh

mint (or dill)

1/2 teaspoon salt (divided)

1/2 teaspoon freshly ground

pepper

Hand Washing 101- Catie Chung PhD, RN Touro University

This time of year we notice a lot of sneezing and coughing,

don’t we? Especially when our loved one is older we want to try

and prevent germs from spreading. Believe it or not, the best

way to avoid getting a cold or the flu for you or your loved ones

is for everybody to wash their hands! Yes, sometimes “old

school” habits are the best! Hand washing works best if the

water is a little bit warmer than our body temperature, and we use soap. To

really get all the germs off we are supposed to wash hands for about 20

seconds. Have someone sing the ABCs or Happy Birthday to time the washing!

No need to scrub too hard. Make sure to get the front and back of the hands,

under the nails, and between the fingers. Hand washing is actually better than

using the hand sanitizer, but if you can’t get to a sink hand sanitizer is certainly

better than not doing anything! Stay clean and healthy this flu season !

Senior Wellness Programs

GAP Geriatric Assessment Program-a free medical assessment program for senior adults 60 years of age and

older. The 2 hour assessment includes memory screening and mood scale, medication review, nutrition review, eye

sight screening, function/fall risk assessment and medical assessment. GAP clinic includes a Geriatric Physician,

Occupational Therapist, Social Worker and Nurse. GAP addresses Caregiver concerns and can also provide/renew

Be Well Series are free lunch and learn programs for senior adults 60+ presented throughout the Las Vegas Valley.

There are 3 modules of the Be Well Series covering information on Nutrition, “Chasing the Blues Away” and Sleep.

Each program has a seated activity including yoga, chi kung, laughing yoga, dance, mindfulness and relaxation

Aging Mastery Program This NCOA program is designed to empower older adults to make and maintain small but

impactful changes in their lives. The ten classes, facilitated by experts in their field, explore navigating longer lives,

physical activity, sleep, healthy eating and hydration, financial fitness, medication management, advanced
