T he cooking demonstration stage, sponsored by Whole

Foods Market and PNW Co-op Specialty Foods, is an attraction designed to help people learn all the delicious and easy ways to cook lentils in the comfort of their own home!

On Friday at 6:30pm, the cooking demo stage will feature “Ask the Expert – From Growing to Cooking to Eating” panel discussion giving people an

professionals” anything they want to know about how to cook

of including lentils in your daily diet and the importance of lentil production on the Palouse.

On Saturday, watch as three professional chefs give live demonstrations of how to cook their favorite lentil recipes and give you step by step instructions on how to make those recipes at home! The demos kick off at 11am with local chef, Jamie Callison, Executive Chef at WSU School of Hospitality Business Management

and author of “The Crimson Spoon” cookbook. At 12pm, catch Robin Leventhal, Chef Instructor at Wine Country Culinary Institute and Top Chef Contestant. At 1pm watch Hayden Smissen, Marketing and Events Chef at Whole Foods Market. At 2pm, watch as the top

Don’t Miss Cooking Demos from these Professional Chefs!

Jamie Callison became executive chef in the Washington State University Schoolof Hospitality

Business Management in 2006. He oversees the HBM student-run catering events, and creates and implements new menu concepts and recipes. He’s also an HBM instructor and co-leads summer institutes for the National Restaurant Association. Callison builds relationships with local farmers and the WSU organic program to ensure the availability of local, sustainable products for university guests. He also coordinates the WSU food and wine program at the Apicius

International School of Hospitality in Florence, Italy. Callison is the author of “The Crimson Spoon: Plating Regional Cuisine on the Palouse” cookbook, which features

signature recipes and WSU products.

Before becoming a chef, Robin was an artist. But it quickly became clear she had a passion for food. She formerly

owned and operated “Crave” a popular Seattle bistro serving up Contemporary Comfort Food on Capitol Hill. In 1999 she had a life-altering experience representing Seattle on the sixth season of Bravo TV’s “Top Chef,” where

found an ideal balance in her life making art, teaching at Wine Country Culinary Institute in Walla Walla and catering. She keeps her knives sharp in kitchens for causes like “Fred Hutchinson Cancer Research Center” and “Bristol Bay.” Passionate about the future health of our food systems, she sits on the Seattle Slow Food Advisory Board, where they focus on raising community awareness and best practice methods.

Growing up in kitchens since the time he could walk, Hayden was immersed in the Mexican and Cuban cuisine of his family and would often nap under the counter

of his grandparent’s restaurant. At the age of 15 he left Seattle for Spain and began his career cooking in Barcelona and Cadaques. At the age of 18

with his father in California’s Bay Area. Eventually making his way home to Seattle, he cooked at Cafe Alexis and opened The Painted Table, honing his craft alongside culinary visionaries Jerry Traunfeld and Emily Moore. For much of the 90’s he was Chef at the iconic Still Life Coffeehouse in the Fremont neighborhood of Seattle. In 2000 Hayden found himself at Whole Foods Market and was blown away by the quality and variety of everyday and rare

his home within the company, 14 years later he is currently the Marketing and Events Chef at Whole Foods Market South Lake Union where he cooks for Seattle Metro community events for organizations like FareStart, Solid Ground, and Seattle Tilth, to name a few. “Food to me is the deepest expression of love, and that is true to my core. How wonderfully lucky I am to be able to cook for people from the bottom of my heart every single day.”
