Welcometo the first edition of
Welcome to the first Spring edition of “My Local Food Guide”.
We believe many residential customers andbusinesses in the Brentwood & Billericay areawill benefit from the launch of this magazine.
Brentwood and the surrounding villages includingBillericay have many excellent local restaurants,takeaways and food outlets, but how many people know which ones exist and where theyare located?
We often receive leaflets through our letterboxwith offers and menus for local restaurants ortakeaways and we tend to store them in adrawer at home, or throw them away. The mainfocus for bringing you this guide is to bring you special offers at participating outlets and highlight the different facilities that exist in each venue. We feel it’s easier to have all this information stored in one booklet, updated eachmonth with new offers. How helpful would it beto know that a particular restaurant has a children’s menu or a nice garden for those sunny days.
You may want to prepare your own meal, usingquality ingredients, so we have included detailsof several purveyors of fine foods and we trustthat you would agree that by choosing local independent suppliers you will be helping to support neighbourhood businesses.
We hope you find our guide useful and our advertisers’ offers helpful. Our guide is publishedmonthly and is distributed to a total of approxi-mately 5,000 homes a month (15,000 residentsover a 3 month period). We have categorised thepages for ease of use, and if you have any suggestions or comments for future issues wewould be delighted to hear from you.

Start in late winter by placingyour seed potatoes into eggboxes or trays. Place them inthe trays with their buds (eyes)pointing towards the sky.
Make sure you store the trays ina cool, dark area indoors for 6weeks. The shoots should startappearing in early spring reaching a height of 1 inch.
At this stage you need to transferthem outside and plant them inyour prepared vegetable area,preferably in a location whichgets maximum sun.
Dig a hole 6 inches deep andspace them out with a 12 inchgap between each tuber.
Make sure the shoots are point-ing upwards. Always use goodquality multipurpose compost
with organic matter and covereach tuber with very deep soil.
Water lightly if there is a dryspell. In areas of heavy clay itmay be better to use containersor raised beds to promotehealthy potatoes. If you feelthat the frost might still bearound, keep the container orbed covered in a clear plasticsheet until the frost passes.
Once the plant shoots havereached 10-12 inches tall, addloads more compost to cover thestems and form a mound. Thiswill help produce more potatoesand prevent the potatoes goingtoxic.
Once the plant has started toflower then the potatoes are normally ready to harvest.

Method
1 Sift the flour into a mixing bowl and add the salt and suet. Mix together well and then stir in the lemon rind andsugar.
2 Make a well in the centre and add the liquid to give a soft, elastic dough. Knead lightly until smooth. If you have time, wrap the dough in clingfilm and leave it to rest for 30 minutes.
3 Roll the dough into a 20 x 25 cm/8 x 10-inch rectangle.
4 Spread the jam over the dough, leavinga 1 cm/½ inch border. Brush the border with the milk and roll up the dough carefully, like a Swiss roll, from one short end. Seal the ends.
5 Wrap the roly-poly loosely in greaseproof paper and then in foil, sealing the ends well.
6 Prepare a steamer by half filling it with water and putting it on to boil. Place the roly-poly in the top of the steamer and steam over rapidly boiling water for 1 ½ to 2 hours, making sure you topup the water from time to time.
7 When cooked, remove from the steamer, unwrap and serve on a warm plate, cut into slices. Serve with piping hot custard.

225 grams/8oz self raising flourPinch of salt115 grams/4oz suetGrated rind of 1 lemon1 tbsp sugar125 ml/4 fl oz mixed milk and water4-6 tbsp strawberry jam2 tablespoons milk

Despite the latest mini cool snap, I witnessed the other day the first ominoussign of spring. A ‘fashionable’ couple huddled low in their car, sunglasses inplace, heat obviously on maximum, but with the roof down. I allowed myself amomentary image of warm days to come, places to go, good company, freshlocal food and excellent wine. Then a smile came over my face!
I do like this time of year. You notice the slight improvement in daylight, earlyflowers emerge and a general sense of ‘getting ready’ for the next seasontakes hold. Cafés and bars begin to tentatively place a few chairs outside onsunny afternoons, and you know it is only a matter of time before restaurantswill include some early English produce like asparagus on the menu.
On the wine front, the big chunky reds start to give way to a slightly softer style.Still full bodied, exceptionally smooth and most importantly able to complementa plate of food. One wine recently tried which meets this brief, was the 2009Rosso Passo del Veneto by Lenotti (£9.49). A beautiful wine from the equallystunning location on the banks of Lake Garda in northern Italy, encompassing allone would expect from such a culinary nation. Whilst the other was a delight-fully light, dry Sauvignon from Terre de Soleil in the South of France (£7.29) -the perfect complement for lightlunch dishes, early season asparagus or simply to enjoywhile pondering the amount ofwork that needs to be done in the garden.

Method
1 In a food processor or blender, combine the basil leaves, pine kernels, peeled garlic cloves and Parmesan cheese.
2 Process until the ingredients are finely chopped.
3 Gradually pour in the olive oil in a thin stream.
4 Season to taste with salt and pepper.The sauce should be thin and creamy.
5 Put the lamb chops in a shallow dish that will hold them comfortably side by side. Pour the basil sauce over thechops. Turn to coat on both sides.
6 Let marinate for 1 hour.
7 Preheat the grill. Brush the rack in the grill pan with olive oil.Transfer the chops to the grill rack.
8 Grill at about 3 in (8 cm) from the heat for approximately 15 minutes, until well browned and cooked to taste, turning once. Serve with fresh basil sprigs.
