School of Hospitality, Tourism & Culture ISSUE 2 FALL 2010 Many people define a chair as a seat for one person hav- ing a back and four legs. The definition of a Chair at the SHTC is ‘a person who can do the work of four people and still stand straight after a meeting, departmental discussion or never ending polite conversations in the hallway’. We would like to extend a warm welcome to Verona Barclay as the Chair in our School! She is succeeding Gary Robinson who re- tired this June. For those who do not know Verona, she has been described by colleagues, students and friends as ‘power packed with knowledge, insight and a great sense of humor’ and ‘a team builder and player who stands for and will do what is right’. Oh and she is also ‘very cool’… we don’t believe there is another Chair in the world who can say they received a bass guitar for their birthday (‘she plays the bass’ , they say)!! We strongly believe Mouthpiece speaks for every- one when stating we’re happy to have Verona as Chair! P.S.: Gary is enjoying every minute of his retirement! Officer Sue Galand, coordinators, and support staff, we ensured a smooth start! We have over 750 students in 10 programs and it is only fitting that we acknowledge contributions made by the following faculty: Our thanks to Program Advisory Committee members drawn from the industry and student body, and a special acknowledgement of faculty who have since retired -Gill Elias, Seamus Beatty, Gary Robinson, Dave Knowlton- their contribution has been instrumental in the transformation of a department into a school. We are working on sustainability, by creating a positive learning experience through academic and co curricular activities, while ensuring we stand behind our promise to provide quality education to our students. Collectively we can carve out a niche for Centennial’s Hospitality and Tourism cluster! Many people define a chair as a seat for one person hav-ing a back and four legs. Bkejwanong Reserve

Students visit Centennial

SHTC proudly hosted 35 high school students from the Bkejwanong First Nation Reserve Walpole Island, this past July. Students toured our campuses, visited Canada’s Wonderland, the Science Centre and the CN Tower. This initiative is the first of a number of community based projects that we envisage to support recruitment efforts and pave the way for voluntourism projects for Centennial students.

Plans for Phase II of this program include onsite fieldwork for students and faculty at Walpole: potential activities include undertaking an inventory of the island, clearing eco trails,

conducting a marketing and skills workshop for island residents, recording oral history and setting the stage for a welcome and interpretive centre at the island.

SHTC at Guild Inn’s ‘Alive

with Arts’ Fest

SHTC operated the “Centennial College Café” at The Guild Alive with Culture Festival this August. A showcase of food items from the Guildwood Village Communi-ty Association Cook Books, students in the Event Management Class, undertook their summer practicum exercise under faculty Lino Simonassi, Corey Kovacs and Bob Dallas. The festival which exhibited and sold works of art produced by the Scarborough and Toronto com-munities, attracted approximately

4,000 visitors over the weekend and was under the auspices of Paul Ainslie, Councillor for Scarborough.

CHI Symposium on Cultural

& Heritage Tourism: Oct 5-6

The Culture & Heritage Institute (CHI) hosted its 4th conference this Fall featuring keynotes from UNESCO Canadian Commission’s Secretary General David Walden, National Geographic’s Jon Tourtellot and Olympian Charmaine Crooks. Also in attendance were Minister for Tourism & Culture Hon. Michael Chan and Local MPP Margaret Best, among other national and international delegates, and student attendees and senior team from Centennial.

BLAME IT ON BLACKBOARD (BB)!

Thanks to all those who participated in the ‘BB’ survey. Part of our ongoing research to gauge BB usage, effectiveness, user friendliness, and to improve curriculum delivery, we are happy to share the first part of our findings. Stay tuned for more interesting factoids in our next edition of ‘Mouthpiece’!

SHTC partakes in the CARIBANA 2010 spirit!

DID YOU KNOW?! John (Neil) Moore was nominated for The George Wicken Award for Excellence in Teaching and

Annisa Mohammed for The George Wicken Professional Excellence Award... congratulations!

Salome Odeny, native Kenyan, and 3rd year HTA student, was the masquerader for the two-storey high, whop-ping 200 pound showpiece costume, that reflected an “Amazon Rainforest” theme and design. This marked the first time an Ontario college had participated in the King & Queen Show at the Caribana Parade.

Stephanie Carrillo, Administrative Assistant to the Dean has left college to complete her education at York University. Always bubbly, energetic and ready with answers for all kinds of situations, Stephanie’s enthusiasm has been infectious. Stephanie’s significant contributions to daily going-ons at SHTC, her involvement with the Culture & Heritage Institute and its annual conferences, and her plain helpfulness at all times around the office, are some of things many administrators, faculty, staff and students will remember best. Good luck Steph... We’ll miss you!
