Water co olers provide a supply of co oled wat er wh ich, appropriately m etered, can be u sed to obta in mix-tures at constant temperature independently of the ambient temperature. It is therefore an e ssential work tool in modern bread-making, since adequate temperature control of the mixture contributes to the quality of the end product.

Standard specifications
Steel structure. Stainless steel tank and casing. Tank thermic insulation made of high density resins. Water mixing pump inside the tank to ensure temperatu-
re homogeneity. Sealed refrigerating unit. Electronic thermoregulator with display for both desired
and current water temperatures. Emergency ball-cock and anti-flooding electro-valve. Heating elements made of plated stainless steel serpent
coils (only for coolers/heaters). CONFIGURATIONS Vertical c oolers suitable to be placed on a stand
(optional) or hung to the wall at the Customer’s care and charge. Water can be taken by gravity feed or by water pump (option).
Suspended h orizontal coolers with brackets for wall hanging (at the Customer’s care and charge), 15 lt/min water pump and electronic litre counter.
PERFORMANCES (reference water temperatures: intake +18°C / pouring +3°C)
Normal coolers, for an hourly maximum water withdrawal
equal to the tank capacity. Rapid coolers, equipped with a special refrigerating unit
enabling to withdraw the tank capacity up to 4 times/hour.
Normal and rapid coolers with heater: in addition to the above mentioned features, they also are apt to heat wa-ter. An electronic thermoregulator starts automatically either the refrigerating unit or the heating unit according to the selected and current water temperatures. Running temperatures: +1°C + 35°C.
Accessories for vertical coolers E/A 30L e E /A 60L water pump (for remote withdrawal and coupling to electronic mixers and litre counters). E/C 30L electronic litre counter. CD/1 oven painted steel stand, height mm 800.

Construction and standard features
The tank, the cold unit and the control panel are included in an electro galvanized steel frame, built on 4 turning wheels (the 2 front ones have breaks) and equipped with two lateral stainless steel handles to move it.
Jackets of thermoformed plastic protecting against shocks, stainless steel lateral housing.
The general switch is placed on the side of the machine. Stainless steel tank and pair of tools for an efficient and
homogeneous mixing. Each tool is driven by a motor-reducer, in order to calibrate the working cycle of the liquid leaven, and to avoid excessive oxidation.
The main tool has a scraper to improve the mixing efficiency and to avoid the leaven remains on the tank walls. The tools are quickly and easily removable.
The flour loading is easier thanks to a large opening on the top of the machine protected by a grid. A transparent lid assures good visibility.
An integrated water connection device allows a connection to the water supply, or can be linked to a water mixer.
The FermentolevainTM is equipped with a double outlet as a standard:
- the upper outlet has a “guillotine” flood-gate, precise and perfectly tight - the lower outlet allows a total emptying of the tank for
The FERMENTOLEVAINTM PAVAILLER are machines for the making and the conservation of liquid leaven, to be mixed into different dough preparations. The range consists of 2 models:
FL 80 with global leaven capacity of Kg 75 (useful leaven capacity 60 Kg). FL 140 with global leaven capacity of Kg 125 (useful leaven capacity 100 Kg).
The FERMENTOLEVAINTM machines are designed for professional bakeries particularly attentive to the quality and pleasantness of the final product: the use of liquid leaven in bread making, indeed, shortens the dough mixing t ime, imp roves t he b read crumb structu re an d th e dough bette r ac cepts th e m echanisation (suppleness, moulding). In function of the amount used, the aroma and flavor of the final product will vary.

equipped with ventilation grids, at the front and at the back. Front access for easy maintenance operations. The refrigerant fluid gas is R404A, without impact on the ozone strata.
Hermetic control panel (IP65 classification). Easy programming of the 3 functioning parameters, with memorizing of the parameters: fermentation temperature, fermentation time and conservation time.
Automatic devices for operational safety and functional efficiency:
- automatic stop of the tools and of the heating and cooling devices when the safety grid is opened. - buzzer alarm when the safety grid is opened for more than 5 minutes. - the programmed cycle continues when grid is closed again. - device that self-regulates the mixing speed, to avoid risk of overflowing. The electrical box is quickly accessible at the top without
dismantling of the jackets. Electrical power supply: V 400/3/50 Hz (different voltages

Optimum balance between the bowl rotation and the spiral arm enables an ideal flow of the kneading and is perfect for a soft and gentle handling of the dough.
A perfectly shaped arm rotates along the sides of the bowl and the accurate proportions among bowl, spiral arm and dividing blade, work together seamlessly towards the creation of even, soft and distinguished dough, also when only small amounts are used.

TILTI Vertical bowl lifter-Tilter
The TILTI bowl lifter enables the contents of a removable ISE N A – ISE A (**) – FBLA (**) mixer bowl to be tipped automatically onto a table or into a SP – DVP divider hopper. The vertical lift of the bowl, the choice of front and lateral coupling, both with discharging to the right or to the left, allow the ideal flexibility of use and containment of operational dimensions. On request, for the typical needs of the industrial lines, the TILTI elevator can be built with pairing heights till mm 3100, with safety cage and automatic discharge.

Standard electronic control panel for TNSE
The TNSE B is a com pact self-tilting mixer, cons isting of an NSE spira l mixer permanently coupled to a hydraulic elevator, designed to vertically raise the whole structure and, with a rotation movement, tip the dough contained in the bowl on the bench beneath. Unloading is performed on the right or left side depending on the model.
The TNSE B therefore combines the functionality, modernity, ergonomic design and quality performance of the NSE mixers with the efficiency of a dependable safe hydraulic elevator-tipper which, in very limited spaces, transfers the dough on the bench without requiring any operator intervention. Standard electronic control panel for TNSE
The TNSE H is a compact self-tilt ing mixer, consisting of an NSE spiral m ixer permanent ly coupled to a hydraulic elevator, designed to vertically raise the whole structure and, with a ro tation movement, tip the mixture contained in the bowl inside the appropriate hopper of the volumetric divider. Unloading is performed on the right or left side depending on the model. The TNSE H therefore combines the functionality, modernity, ergonomic design and quality performance of the NSE mixers with the efficiency of a dependable safe hydraulic elevator-tipper which, in very l imited spaces, feeds the volumetric divider without requiring any operator intervention.

Control panel
The MON O-TWIN mix er consists of an ISE/F sp iral mix er permanently in stalled on a hy draulic cy linder el evator, designed to vertically raise the entire structure and tip the dough contained in the bowl on the right or left side as required by the user. According to the model chosen, the opposed unloading heights allow the machine to be com-bined with volumetric dividers and/or deposit the dough on a work bench, feeding one or two production lines, ac-cording to requirements. Versatile as regards use and highly compact, the MONO-TWIN has been designed and produced to reduce overall working dimensions to a minimum, at the same time guaranteeing all requirements in terms of dependability, qual-ity performance, mechanical solidity and safety, hallmarks of the Esmach mixers. The MONO-TWIN comes in 2 versions – with mixing capacity of 160 and 200 kg – and 4 models, which differ due to the height and position of the unloading points, as shown in the diagram of combinations.

The BITE twin arm mixer is particularly suitable for processing slack dough and preferably utilised by confec-tionery workshops, pastry manufacturers and bakeries wishing to obtain highly slack and developed dough.
