PARIS, France (Reuters) -First it was mad cows, then dodgy duck and

now sullied slauEhterhouses. Another food scandalhit France on Friday, and with it the announcementthat one ofthe country's top restaurants was shunningrneat for good.

food scene, will soon turn vegetarian as a result ofChef Alain Passard's personal tastes, French dailyLiberation reported.

"We must get back to the essences of theearth. I hope to contribute to a deep change in culi-

nary creation," the 44-year-old chef said, capping ayear in which French pride in its cuisine has been

dashed by one food scare after another.

However, Passard's announcement was up-staged by a report about unsanitary pig meat pro-duction practices in France.

Daily Le Figaro published sections of a reportdescribing severe hygiene problems, lack of veteri-nary controls and significant lapses in animalwelfarewitnessed during an European Union fact-finding mis-

sion to French slaughterhouses, farms and laborato-ries earlier this summer. At one slaughterhouse, in-

spectors from the EU's Food and Veterinary Officesaid blood from pigs was collected for human con-

sumption in an unclean way. "The animals werestabbed on a conveyor belt and blood was collectedin an open system with high risk of contamination

from the unclean skin," the experts wrote in the re-port. "Not allworkers had easy access to hand wash

facilities and sterilizers. Hand held hoses were fre-quently used for rinsing hands and tools, leading to a

high risk of contaminating carcasses," the report said.

The report also detailed how animals withchronic diseases and old infected fractures were seen

at one site. "Some of these animals had been trans-ported to the slaughterhouses despite the fact thatthey were obviously not fit for transport or humanconsumption," the report said. "ln some cases sick

animals in obvious pain were left for several hours inthe pens before being inspected by a veterinarianand killed," it said.

ln one of the report's more graphic examplesof animal welfare lapses, the inspectors describedseeing a pig that had been stunned in order to be

killed but which then regained consciousness.

"The animal recovered and jumped off theconveyor belt just before the chaining was to takeplace," said the report.

Claire Gaudot, assistant director of food safetyat the farm ministry's General-Directorate for Foods,

acknowledged that the report had highlighted someshortcomings, but said these had since been recti-fied. Gaudot told Reuters that France had recentlyadopted rules designed to make the collection of bloodat abattoirs more hygienic. Gaudot said that since

June, injured animals could no longer be transportedto slaughterhouses.

News of the pig slaughter report emerged aday after France reported eight new cases of madcow disease. That brought the total number of French

cases of the deadly, brain-wasting disease this yearto I 5 3 - more than five times the number reportedin 1999.

Consumers in France and elsewhere in Europe

have shunned beefsince three French supermarketchains reported in Octoberthey had accidentally soldbeef from a herd containing an animal suffering frommad cow disease, which has been linked to a similarillness in humans.

Shortly after that disclosure, officials con-

firmed a reportthat 23 tons of duck confit, a heartysouthwest specialty of duck meat preserved in itsown fat, turned out to be rotten in a routine inspec-tion last ye6r.

The New Year provides us with an opportunity

to consider howwe can improve our lives and makethe

world a befter place for everyone.

A simple but powerful approach toward this goal

is through our food choices. By shifting to a plant-

based diet, we benefit our health, preservethe environ-

ment and reduce animal suffering.

According to the American Dietetic Association,

studies have shown that vegetarians and vegans have a

lower risk of breast cancer, colon cancer,diabetes

Because livestock animals are injected, fed and

sprayed with antibiotics and pesticides, theirwaste is

The Animal Welfare Act does not apply to ani-

lives in tiny cages and stalls where theyare often unable

to even turn around or Iie down. They live on concrete,

slatted metal, orwire mesh floors. They are forced tolive in theirown and otheranimals'wastes.

lndeed, the new millennium provides every one

of us a greatopportunity to examinethe impacts of ourdiet on our health, the planet, and the billions of ani-

malstormented and killed forfood.

iuice improve the elasticity of bloodvessels and thin the blood. The organo-sulfur compounds in onionoppear to increase levels of good cholesterol. So does olive oil.

Just about all fruits and vegetables can help - including such staples as bananas and orangeswhich aie rich in bloodpressure loweringpotassium. But less commonfoods like pomegranates couldbe highly beneficial too. They increase blood levels of an enzyme called paraoxonase that appears tobreakup arterial plaque. According to lipids expert Michael Aviram of the Technion-Israel Institute ofTechnologlt in Haifa, just four ounces of pomegranate juice every day could help reduce arteriallesions.
