I hail from Wales where I had a career as a commercial fisherman and oyster farmer. I came to Australia as a self-funded retiree, but needed to do something, so followed my nose back into oyster farming.

I know the marine environment well and pride myself on running a tight ship. I believe one of the secrets to growing good oysters is being careful and well organised so that the product is well looked after at all stages. It’s about being in tune with how oysters respond to their environment.

Wapengo Lake is fed by a single creek running down from an overlooking mountain. The environmentally minded community ensures the waterway is kept clean and pristine. Australian oysters are a food for the people, and I want to make sure they have the best experience possible.

Working in the marine environment comes naturally to me, it’s where I feel at home
