Ancient Greekskicked off their festivitieswith bits of fish andcheese, and Renaissancechefs did the same thingwith thin rolls of grilledveal. All we have in mindis soup.

But it can’t be justany soup. Because of thelast minute bedlam thatusually hits the Thanks-giving kitchen, we need arecipe that can be madeahead and served withoutfuss.

Whatever wechoose, it has to be moreinteresting than broth butnothing too filling. Wewant a starter that will in-troduce the meal, but leteveryone know it is just torev up their appetites—inother words, somethinglight.

Chowders andcream soups are the firstthings that come to mind,and after bouncing ideasaround, we settled on but-ternut squash soup. Thestarchy winter squash willgive the soup the textureof a chowder, and puree-ing it would give the“creaminess” of creamsoup.

Most groceries carry pre-cubed butternut squash.Using it makes this soupa snap. If you want tostart with whole butter-nuts, you’ll need to peelthem. Cut off both ends

with a sharp knife, andplace bell-side down on acutting board. Use a veg-etable peeler to scrape offthe thick skin and an icecream scoop to removeseeds. Then cut thesquash into cubes.Butternut Squash Soup

2 Lbs. butternut squash, peeled and cut into chunks (about 3 C cubed)4 C reduced-sodium

chicken broth1 C low-fat sour cream1 T butter1/4 t ground cayenne1/4 t kosher saltWhite pepper1 T sugar (optional)Chopped fresh chives

1. To preparesoup, combine squashand broth in a largesaucepan; bring to boilover high heat. Reduceheat to medium, coverand simmer until squashis tender, about 20 min-utes. Uncover and letcool. Purée squash inblender or food proces-sor. Return purée tosaucepan and place overmedium-low heat. Stir insour cream, butter andcayenne. Add salt andwhite pepper. If squashlacks sweetness, addsugar. Cook soup justuntil thoroughly heatedbut not boiling. Ladle intobowls and garnish withchives. Serves 6.
