Christmas is here soon in about 2 weeks and we are going to count down for 2013. What is the

most exciting things you had made for this year? 2013 is definitely a meaningful and unforgettable

year for merci and team members. The team has been formed and from ideas to make it real is not

easy, but we made it step by step and the third issue of merci magazine is now ready on your hand.

For this chance, I would like to say Thank you to all members and contributors to make a fulfilled

year of 2013.

This issue we have great collections of perfect gifts to your beloved one on and the last minute

shopping. Special features of my home – Toronto, a lovely city and everyone may fall in love with

this energetic city in the world. If you were missing one of the biggest events hosted in Hong

Kong, don’t miss out our special post event section of Clockenflap Syndrome 2013! Of course,

wine lover, I am so sure you will not skip our wine section, especially on the editor’s recommenda-

tions. Additional, I would like congratulation to our wine editor; Winnie Ng. She has completed

Beyond this a more sophisticated modern living room space with modern lamps, ottomans and leather armchairs. At the very back of the store, you will find the gentlemen's room. Q: How did Ellermann come into being?

A: Diane and I both grew up in countries where there are lots of greenery and wide open spaces. She came from a small town in Germany, surrounded by flowers from her grandmother’s garden every day and I am from New Zealand. Diane wanted to share these experiences with Hong Kong and I also came on board. Ellermann Flower Boutique and Event Design Atelier was established in 2011 and the name, Ellermann is actually Diane’s maiden name which is also her grandmother’s surname.

Q: What is Ellermann’s philosophy?

A: We believe our service should evolve around our customers. Floral creations should be more personal because the people who you give them to, are special. It shouldn’t be made to look like you ordered from a catalogue. Buying flowers should be an engaging experience and we are trying to put the fun back into ordering flowers for the special day, person or occasion. We also believe in the notion that people not only should purchase flowers for others, but for their own homes and offices as well because they deserve to treat themselves to something of beauty and elegance.

Q: How does Ellermann set itself apart in the industry?

A: We provide bespoke floral creations because each of our clients is special to us. Our selection of flowers and plants is extensive and we source a large portion of our flowers from different, unique suppliers. A lot of our customers also demand terrariums as we create an extraordinary little world with each arrangement. People also appreciate floral creations that are easy to care for. So as part of our service, customers would bring their terrariums in every three months and we would rework and rearrange them. We believe in providing unique products and personalized service that no one else has.

Q: Where do you draw inspiration from in creating Ellermann and the bespoke pieces?

A: Diane being the creative director, travels a lot and draws inspiration around the world. But she also finds inspiration in her grandmother’s backyard in her native Germany. She adores the simplicity and natural beauty of the fresh cut flowers from the garden. It is the classic European heritage, charm and elegance that define Ellermann's style.

Q: Tell us about the new Landmark boutique.

A: Besides floral creations, the Landmark boutique offers home wares,

curios and vintage pieces which are not found at our flagship. Each piece

is one of the kind, mainly sourced from France and antique markets in

London. We designed the boutique to conjure the bustling, open plan

flower markets in Europe.

Q: Share with us some of Ellermann’s upcoming projects.

A: We have been lucky to work with some amazing individuals and

corporate clients. We have been involved in projects from wedding event

collaborations, to flowers for school principals, to working with Vera

Wang and Hermes. December marks the beginning of our partnership

with Lane Crawford. Orders of flowers through their concierge service are

fulfilled by Ellermann. We are also responsible for their in-store floral

arranagements and our winter floral collection is on display at Lane

Crawford IFC. More exciting projects with our partners are in the making.

Have you ever experienced a moment so perfect in your life, that you wished for time to stand still? Unfortunately, time continues. The good news is that humans have the ability to reflect on the savoured moments and re-experience it in our minds later on. This is a phenomenon that Martin Seligman, a globally respected psychologist and published author of Positive Psychology speaks of. One way to achieve this is by actively engaging in memory building by capturing a mental image of the moment or by taking a souvenir of that moment.

Wayne has collaborated with me as a photographer and videographer in my last dance theater production in 2012 in New York. He is an astonishing photographer capturing the real important moments in dance and life. Each time when I look at his photos I discover something new... even in my own work! This is due to his sharp and at the same time tender eye with which he sees the world. I am looking forward to many more col-laborations!

Clockenflap Syndrome 2013

Remember Clockenflap 2012? A year long wait, Clockenflap music & art festival has returned and gone with a

haze during the early December weekend. This year Clockenflap got much larger scale and spanned into 3 days

and hold at the West Kowloon Cultural District Promenade from November 29 to December 1, 2013. Over 100

artists, musicians and DJs performed across 7 stages, creative attractions for family fun, like art village, craft

market, silent disco, film tent, etc. and variety of food & beverage stalls were served day and night. The line-up

wasn’t so impressed compare to last year, but it’s unexpectedly successful with record breaking, attracted 33,500

audiences.

At the first extra day (Friday night) of this six-year event, you could check out the event in this soft opening night and

be ready for your itinerary on Saturday and Sunday. However, Clockenflap would not give you a break for every single

minute. American Rock band Black Rebel Motorcycle Club, a post-rock and electronic musician Four Tet and energetic

Irish band The Strypes were unveiled a rock night for all the Clockenflappers.

With a warm and sunny Saturday, it was time to enjoy the fun attractions before catching Chic featuring Nile Rodgers,

The 1975 and Franz Ferdinandind in the evening. Clockenflap is not only a music festival, but also a destination for fam-

ily gathering, people to share their culture, art and music and meet new and old friends. For those who love arts and

crafts, there were over 80 stalls produced handmade items in Clockenflap Market. Besides, the Art Village was suitable

for family to spend a day in there. Kids could enjoy their world with those features, like bouncy castle, face painting,

shoes painting, merry-bike-round, stilt walkers, etc. Parents could sneak to the section in Vans - Off the Wall, fathers

line-up for the free haircut by 2 barbers, while mothers enjoyed their free nail polish. Meanwhile, some singing and

entertaining live performances came across in the open area from time to time. When the sun set down, Harbourflap

stage was already jam-packed and waiting the legendary guitarist and king of disco heads - Nile Rodgers and Chic

performance. People were start dancing when the music on. Followed by the young and Manchester-based rocker who

is the hottest UK’s band currently, unusually attracted a huge crowd of teen girls clustered at the band’s feet. Took a

break after these 2 shows and got on your dancing shoes, top international Scotland band Franz Ferdinand were ready

to burn the stage. Enormous crowds headed to the Harbour Stage and break the record, nearly 20,000 audiences under

the stage. Alex were also singing “Hong Kong is out of control!” This must be the best moment of Clockenflap this year.

After an intensive Saturday night, The Somersby Cider Garden and Bearded Lady Side Show were the best space to relax during the day. Beanbags were placed on the green area and had a sip of apple cider under the wonderful sky. Alternatively, there were some yoga sessions, dance performances, Cantonese opera, DJ sets, acoustic jammers, etc. provided inside a dimmed show tent. Besides, there was a Film Tent showing different short films and documentary. Additionally, the Brit-ish Council Hong Kong and UK Trade & Investments’ Great Campaign presented a 1929 Hitchcock silent film - “Blackmail” at the Replay stage. Towards to evening, more artists performed on stage, like Copenhagen indie rock/orchestral band - Efterklang, Canadian twin sisters - Tegan & Sara and another Canadian new wave band - Metric. Surprisingly, a French psyche-punk rock band – La Femme caught some audiences at the Your Mum stage. They dressed with the Chinese traditional outfit with their synthetic and hypnotic music. While waiting the final per-former - the China’s rock legend, Cui Jian, swing to the cloud playground in the middle of the site. It was an interactive light installations de-signed by Marc & Chantal who were celebrating their 20th year anni-

versary. People could experiment the light drawing inside the inflatable cloud. Moreover, not far away the cloud, Silent Disco is returned. It must be another popular and recommended place for all the Clockenflappers.People were dancing crazy with their headphones which supplied by the official sound sponsor – Sennheiser. “It was a fun experience be-cause the people were outside watching what’s happening and people were underneath the headphones. If you were watching the crowd that they were having fun and dancing like crazy with no sound. People love it!” said Sennheiser’s president, Marc Vincent. Finally, it was a great hon-oured to have the China’s Godfather of modern rock – Cui Jian for the closing performance. He is one of the influential rockers to the Chinese young generation and society. There was an unexpected cut-off ending at last, but Cui Jian also expressed “We just finished the show in Clocken-flap, such a great honor to play in this festival, I hope I can come back!"

The first Clockenflap festival was held in 2008 at the Cyberport, with 1,500 people attended. It is founded by Jay Forster, Mike

Hill and Justin Sweeting. They expressed “We’re all felt Hong Kong was missing the kind of festival we wanted to produce, so

rather than complain about it, we set about creating one.” However, there was noise complaint that pushed Clockenflap moved

to West Kowloon Promenade in 2011. It was completely free to public because of late stage venue restrictions by the time. It was

surprisingly successful and become a remarkable event in Hong Kong. In 2012, Clockenflap was improved and pushing much

further with over 20,000 people attended.

We’re from this city and doing something thatwe hop e is positive for Hong Kong has very deep

resonant meaning for us.The Clockenflap founders - Jay Forster, Mike Hill and Justin Sweeting

There was a lot to explore in these intensive 3 days, for those who never been to Clockenflap, you can’t miss it next year!

Christmas in a glass

Mulled wine is a hot and spiced wine which is very popular among

many European countries (old world regions in wine). It has a long

history for around 2500 years. Dating back to as far as 500B.C., peo-

ple used to add spices & herbs to wine for taste enhancement and for

health reasons. The recipes varied depending on families & country

traditions. However, it’s common to find cinnamon, cloves, and raisins

in most of the mulled wine, of course red wine is the essential ingredi-

ent. In some regions, white mulled wine can also be found.

Wine & CoffeeMulled Wine

The ideal varieties for preparation would be Cabernet Sauvignon, Merlot or Zinfandel, Port or Madeira can also be

used. By adding cinnamon, cloves, nutmeg, anise, lemon peel, orange (depends on own taste) and perhaps crystallized

sugar, then heating up the wine gently for around 5 minutes. All these materials can be found easily in local markets,

or even supermarkets- they are now selling in a special pack for convenience in preparing mulled wine. After all, an

aromatic spiced warm red wine is ready!

Grace Vineyard, one of the biggest wineries in China, was founded in 1997 by a Hong Kong Chinese Mr. CK Chan and his French friend, Sylvain Janvier, with the assistance of a famous Bordeaux oenologist Denis Boubals. They planted the vines in Taigu County, Shanxi province where is located between Taiheng Mountain and Luliang mountain ranges, at an aver-age altitude of 900m. Taigu, Shanxi is typically continental in climate - dry, low rainfall, high diurnal temperature difference, long sunshine hours- all of these are ideal settings for grape growing and top-quality wine production. The first vintage was released in 2001, being 4 years after the establishment of the winery. The twin-head logo of Grace Vineyard symbolizes the great friendship between Mr. Chan and Mr. Janvier. Grace Vineyard is now based in Hong Kong under the management of a young but successful lady, Judy Leissner, the daughter of Mr. Chan, since 2002.

The wines are mainly made from international varieties, espe-cially red wines, which are all from Bordeaux varietal- Cabernet Sauvignon, Merlot, Cabernet Franc. Whites are mainly from Chardonnay and Chenin Blanc. Grapes are handpicked forpremium collections and wines are made in Bordeaux practice and style. Wines are aged in stainless steel tanks or French bar-rels. The wines got international awarded already in 2002 in Brussel, Belgium. This arose global interest by important and famous critics in the industry like Robert Parker, Jancis Robin-son, and Wine Spectator.

Apart from Japan where we introduced their wine in the First Issue, we have another fast-developing country for wine production in the industry. Guess what would that be? Yes, that’s China! The increase in production of their wine is as fast as the rate of their economy growth.

In June 2013, Grace Vineyard has launched a new series to tribute to the People in China, named

PEOPLE’s SERIES (with vintage of 2011). The labels and all packaging materials are designed by

Bodegas Torres, the largest winery in Spain, which has a close connection with Grace Vineyard. The

labels are drawn with different Chinese workers with happy faces holding the People’s Series with a

star as logo- representing one of the classes as shown in the China national flag.

A ruby color with hints of vermillion a bouquet with delicate notes of vanilla, toast and leather, and a mouth full of nuances. Very friendly, this wine will reach its full-ness quickly. Only 2000 bottles were produced. Best drinking year: 2009-2015

Ingredients : ( for1person)1Sweet potatoes small ( Indonesian type )

1 Portobello mushroom 2 tomatoes1 avocado Half onion

2 thin slices of halloumi cheeseCook spinach (stir fry with garlic)

Parsley chopped for topping

Sauces :Tahini paste, mix with bit warm water to thin down

How to make it :

•Cut and chop all ingredientsSlice onions,dice2 tomatoes into 4section

Slice 1 sweet potato, lay out all onto the grill plate into halogen electronic cook, set for 15mins

•heat up the pan, add garlic, lightly sauté spinach

After 15 minutes, add half cut avocado and cook spinach into the grill plate. Meantime, pour tahini sauce over the portobello mushroom & cheese for other 5mins .

Compose :

All ingredients were cook and stack up the layers as u like with all vegetables, topping with parsley

Winter month is coming, I want to create a lighter version meal for anytime but filling enough recipe. There aren't much spices because all vegetables it-selves are very tasty individually if they

are organic or local grown food. Halloumi cheese is pretty salty already, so I kept this version light, feel free to change fillings of your favourite picks , or any sauces & condiments.
