The Cookie was invented in the days

before thermostats so rather than

ruin an entire cake, a "little cake,"

or cookie, was tested first to see if

primitive ovens were the right

temperature to bake cakes. The

earliest cookie-style cakes are

thought to date back to Persia in

the 7th century C.E.

Macarons are often thought to have appeared in the eighth century in

Venetian monasteries after almonds arrived in Italy

with the Arabs…A macaron is a sweet

meringue-based cookie made with eggs, icing

sugar & almond meal. The macaron is commonly

filled with ganache, butter cream or jam,

sandwiched between two cookies. It is mildly moist

and easily melts in the mouth.

The original shortbreads were made with oatmeal. The more elegant white

flour came later and lightened the cookie. Its invention is attributed to Mary, Queen of Scots in

the 16th century. She had a team of French chefs

perfect the recipe. MENA cookies are a fine-

textured cookie melting in the mouth while the

smooth, velvety chocolate adds a silky richness. The cookies are a mixture of

artisan flour, pure butter, icing sugar and vanilla

baked at a low temperature to prevent

browning.

According to the history, the first

cakes were baked by the Egyptians

during Ancient Egypt, followed by

the Romans and Greeks. The first

cakes were baked like breads and

the ingredients were taken from

dried fruits, honey, nuts, currents

and butter. Cakes ended up in 14th

century Britain, nicely decorated

and served at banquets for the

wealthiest people.

the New Stone Age. These early

cakes. Evidence of which can be

found on the tomb walls of the

Valley of the Kings. With the

knowledge transferred, historians

MENA Cuisines originated from the

land between the Tigris and

Euphrates rivers, also known as the

Middle East or Western Asia. This is

where wheat was first cultivated,

followed by barley, pistachios, figs,
