The Cookie was invented in the days
before thermostats so rather than
ruin an entire cake, a "little cake,"
or cookie, was tested rst to see if
primitive ovens were the right
temperature to bake cakes. The
earliest cookie-style cakes are
thought to date back to Persia in
the 7th century C.E.
Macarons are often thought to have appeared in the eighth century in
Venetian monasteries after almonds arrived in Italy
with the ArabsA macaron is a sweet
meringue-based cookie made with eggs, icing
sugar & almond meal. The macaron is commonly
lled with ganache, butter cream or jam,
sandwiched between two cookies. It is mildly moist
and easily melts in the mouth.

The original shortbreads were made with oatmeal. The more elegant white
our came later and lightened the cookie. Its invention is attributed to Mary, Queen of Scots in
the 16th century. She had a team of French chefs
perfect the recipe. MENA cookies are a ne-
textured cookie melting in the mouth while the
smooth, velvety chocolate adds a silky richness. The cookies are a mixture of
