1. MANIFESTO

‘Organised by Restaurant magazine, The World's 50 Best Restaurants list is an annual snapshot of the opinions and experiences of over 900 international restaurant industry experts. What constitutes "best" is left to the judgment of these trusted and well-travelled gourmets.

There is no pre-determined check-list of criteria; for example an interesting experience in a simple establishment, where exceptional innovation was discovered, could be judged better than a more opulent meal from a widely feted restaurant team. The results are a simple computation of votes. Given that this well-constructed list is based on personal experiences it can never be definitive, but we believe it is an honourable survey of current tastes and a credible indicator of the best places to eat around the globe.’

2. THE AWARDS CEREMONY

The Awards ceremony will take place at Guildhall in London on Monday 28th April, 2014. At the ceremony, the list of The World's 50 Best Restaurants is announced, together with individual award winners, culminating in the coveted award for the S.Pellegrino World's Best Restaurant. The World’s 50 Best Restaurants 2014 will be presented in the company of the world’s most influential restaurateurs, finest chefs and international media. 2.2 How the list is compiled The list is created from The Diners Club® World’s 50 Best Restaurants Academy, an influential group of over 900 international leaders in the restaurant industry, each selected for their expert opinion of the international restaurant scene. The Academy comprises 26 separate regions around the world. Each region has its own panel of 36 members including a chairperson to head it up. The panel is made up of food critics, chefs, restaurateurs and highly regarded ‘foodies’ each of whom has seven votes. Of the seven votes, at least three must be used to recognise restaurants outside of their region. At least 10 panelists from each region change each year.

2.3 Results The results will be published online at www.theworlds50best.com - as soon as they have been announced to the assembled chefs and Academy members at The World’s 50 Best Restaurants ceremony in London on 28th April. The results will also feature in the May issue of Restaurant magazine and a standalone World’s 50 Best

Restaurants Guide available online http://shop.william-reed.com/store/products,worlds-50-best-

restaurants-guide_2552.htm from 1st May. Last year, the website received over 2.6 million unique

visitors between 28 April and 1 May, a 53% increase YOY, where an in-depth guide can be found on all

the restaurants in the list, past and present.

This list, voted for by the same experts who produce the highly anticipated annual list of The World's 50 Best Restaurants, ranks the 50 premier restaurants in Asia. ZACAPA is one of the finest rums in the world. Produced in the verdant land of Guatemala, this ultra-premium rum is the result of a unique combination of soil, climate and natural materials brought together with skilled distillation and a special high altitude aging process. There are two varieties of Zacapa: delicate and complex Zacapa 23 and expressive and balanced Zacapa XO.

From the virgin sugar cane honey of the volcano-shadowed lowlands, to a unique ageing process which takes place in the 'House Above the Clouds' 2300 meters above sea level, each aspect of production takes place under the watchful eye of Master Blender Lorena Vasquez. A perfectionist at heart, passionate about rum and devoted to her craft, Lorena uses a unique Sistema Solera ageing process to produce Zacapa. Based on a centuries-old Spanish method of ageing sherries, rums of different ages are slowly blended in a sequence of barrels which previously held American whiskies, sweet sherries and fine Pedro Ximenez wines. For Zacapa XO, a final ageing stage occurs in French cognac barrels.

Inexorably linked to Guatemala's history and culture, the final touch in the production process are the iconic hand-woven petate bands that adorn each bottle and have been perfected by the Mayan people since 1400 BC. The petate bands, created by artisan women in Guatemala, are not only an embodiment of the craftsmanship that goes into Zacapa rum, but also an important connection to the brand's Guatemalan heritage and intrinsic connection to the community.

How does a restaurant make it onto the list?

The list is the result of a poll of 936 experts, each who cast 7 votes for their favourite restaurants that they have dined in during the last 18 months.

Who organises The World’s 50 Best Restaurants sponsored by S.Pellegrino & Acqua Panna?

The results and the awards are staged and published by Restaurant magazine in the UK. S.Pellegrino & Acqua Panna are the main sponsors, but do not have any involvement with the results or awards and their compilation. Neither do any of our other commercial partners.

Does a restaurant have to fit a certain criteria?

No. They do not have to sell a certain product, they do not have to have been open a certain number of years and they do not have to have won any other culinary accolades. Any restaurant in the world is eligible to be voted for by our Academy so long as it has been open during the voting period, and so long as it is not planning on closing shortly after we publish the results (although we cannot always know this of course).

What are the voting criteria for the Academy?

They cannot vote for any restaurant they have a stake or interest in. Panelists must have dined there in the previous 18 months prior to the voting period (so for the 2013 list this period was between 31st May 2011- 31st October 2012). Panelists are asked to submit a choice of their top 7 restaurants they have dined in during the voting period in order of preference. At least three of their choices must be outside of their geographical region.

How are the Academy regional panels assembled?

The Diners Club® World’s 50 Best Restaurants Academy contains 26 regions around the world. Each region has a chairperson, and that chairperson assembles 36 people (including themselves) to vote. This panel is an equal mix of the top chefs in that region, leading food journalists, restaurateurs and gourmands. At least 10 panelists from each region change each year.

Who are the Chairs?

The Chairs are selected for their prominent position within restaurant journalism in their region. They are in a position to best select an appropriate panel and their expertise is valued in developing the future strategy for the Awards and activities surrounding them.

Can a restaurant be taken off the list?

Not until the following year – and even then it will only be the results of the voting that determines this, or if we are advised that it will be closed in the year between April 2012 and April 2013.

Why do restaurants drop on the list or fall of it?

If a restaurant falls from the top 50 or the top 100 – it does not necessarily represent a decline in the standards of that restaurant. It could be an indication of shifting culinary tastes, or it could also represent that a geographical area is becoming more important. Many restaurants come back onto the list after initial success.

How did the list start?

The World’s 50 Best Restaurants list first appeared in Restaurant magazine in 2002, as a feature. Soon after an awards night was established to celebrate the results and so was born one of the most extraordinary gatherings of chefs on the planet. The results are now eagerly awaited and appear in the May issue of Restaurant magazine each year and a guide to be published on the awards night (28th April in 2014).
