How long have you worked at the hotel? Wheredid you work before?i worked here even before the reopening ofthe hotel; i joined the staff on september 16,2002. at that time, almost all of the staffworked in temporary offices set up in thebasement, where the storerooms are now.Prior to this i had never worked in a hotel andbecause of this i came across plenty of prob-lems at the beginning. aside from a two-yearbreak, i have always worked as the eventorganizer at the hotel.

The profession event organization covers agreat deal. Which areas are you in charge of? i have always dealt with event organization, itis the area i really know and love. the profes-sion of event organization is extremelydiverse; i am responsible for the local market.this means handle the sort of events whereaccommodation is not dominant, but ratherthe event itself: domestic conferences, pressbriefings, business breakfasts, balls, Christmasparties, and of course, very many beautiful,but challenging, weddings.

In all your years spent in the hotel, which wasthe event you have the fondest memories of,and why?it would be difficult to pick just one becausewe have hosted interesting events. there areso many that i remember with pleasure,events that have become close to me overthe years. one such event is the story gala

organized each year. during this event virtual-ly every hungarian celebrity is to be foundcirculating in the hotel. the conference inwhich tony blair, then prime minister of theunited Kingdom, participated was importantand interesting, and the us presidential elec-tion parties have been a great challenge, too.

I am sure that as an event organizer you areapproached by guests with very unusualrequests. Could you tell us about the mostinteresting? i’ve worked in the profession for many yearsand come across very many interesting andstrange questions, requests, but still perhapsthe most surprising are when i am askedwhether the hotel has a kitchen, a restaurantor furniture.

This year the hotel celebrates the 10thanniversary of its reopening. What sort ofevents are there related to this in 2013? We will hold the 10th birthday party of thereopening of the hotel at the end of april,and to mark the occasion we will host Mralfred Pisani, founder and Chairman ofCorinthia hotels international, and theMaltese tourism minister. furthermore, thehotel’s premium partners, prominent figuresfrom the hospitality profession and public lifewill also take part. We have advertised an open day for the general public on May 26, when guests cansee the hotel from a slightly different angle.

The beginning - Chapter 4

> the official opening of thE Grand hotEL royaL took place on april 301896, the first menu dates from april 28 when the GLÜCK brothers hosted thehotel’s inauguration dinner. daily when i stand in the middle of the new lobby, iclose my eyes for a moment and i try to visualize how the hotel looked in thoseglorious days...the hotel was a hospitality wonder world of 350 rooms, with 450 beds, 100offered the luxury of a private bathroom. all rooms were furnished with thefinest mahogany, while the bathrooms boasted the latest English fittings. the

rooms were lit by 300 electric light bulbs. ’rising rooms’ operated between the floors, powered bysteam engines. the elevators were exotically decorated and a wagon of tropical fruits and palm treeshad arrived from Cannes. on the ground floor there were offices, a barber, a huge meeting saloon, afully serviced telephone exchange with numerous telephone booths and ’urban’ telephone connec-tions on every floor. the lounge was covered by a huge bright glass-roof. the restaurant and the cof-fee house offered elegant terraces, also covered by glass. Various well-located reading rooms offeredall the major European daily and periodic newspapers. Presentation and meeting rooms for travelerswanting to either present their goods or hold a meeting in privacy had, like all rooms, electric light andgas heating. two large french courts (cours d’honneurs) were located between the three wings, one ofthem decorated as a ’Palm Court’. the hotel’s huge state-of-the-art kitchen was located on the otherside of the hotel, on hársfa street. there the true sensation of the hotel was hidden as well: on thefirst floor was a marvelous, artistic ballroom with lovely carnival scenes, murals painted by zsigmondVajda. over 200 employees looked after the needs and well-being of almost 400 guests. speciallyemployed interpreters accompanied foreigners on their city tours. Within no time the Grand hotelroyal became the epicenter of social action on the northern shores of the duna, the river danube. thebeau monde of Pest met here every day at five o’clock for high tea. it was hungary’s first afternoontea, a brand new institution – very fashionable. Later in the afternoon, from May 10, 1896, Eugenedupont hungarian representative of the Lumiere brothers, showed new movie programs in the parlorof the hotel every week. the 50 denier (a french coin, equal to one twelfth of sou) entrance fee wasquite a large sum at the time, but not enough to discourage the citizens of Pest to rush to the event.the royal forged a reputation in the first year of its existence as the venue of ’moving pictures’. thegreat interest generated by the daily movie performances at the royal laid the foundations forhungary’s national movie industry, which progressed faster in budapest than in other European cities.the ’french miracle’ - as Lumiere’s moving pictures were nicknamed - ran until april 5, 1897, almost oneyear, over 300 days. it brought over 10.000 people to the hotel.the hotel was quickly and affectionately nicknamed ’royal’. a group of staff even formed an associa-tion called the ’royalists’. hungarian artists, journalists and writers soon discovered the splendid con-veniences of living in a hotel. some even moved in for good. aristocrats left their castles and countryhomes – which were expensive to maintain over the winter months – and rented entire suites at thehotel for the cold season. Winter was the period of exciting cultural life in the city, while summerswere exclusively reserved for their country homes. artists who did not have permanent homes tried toestablish their ’nest’ at the hotel where they could meet in the evening to discuss common concerns.actors and their audiences, as well as hungary’s leading artists, painters, sculptors and writers, chosethe coffee house of the royal. they founded the royal artists’ Club, a veritable institution with itsvery own table rules. if an ordinary guest wanted to sit at a table next to the ’royalists’ (royalisták), hehad to come up with a ’donation’. this was paid into a sort of pension fund, and should a member ofthe club run low or out money he received a support from this fund. an interesting rule of the royal arists’ Club was that disputes between artists were only accepted asdialogues. no more than two members of the club could be engaged in an argument at the same time.this exchange of diverging or opposite views was also held in public, with the guests at the coffeehouse as an audience. this year the restored and rebuilt Grand hotel royal celebrates the 10th anniver-sary of its reopening on april 30, 2003 as Corinthia hotel. several historical periods and chapters willbe presented to the readers in the coming issues to commemorate this magnificent hotel.To be continued…

Everything fromhandmade chocolates to cheeses, from bakery products to bio wines, andmuch more besides is on offer. there are also two cooking shows on bothdays (saturday: chocolate and far Eastern cuisine; sunday: indian cuisine andspirit of Corinthia), where top chefs let you onto a few trade secrets!

BEEF & ASPARAGUS TAGLIATArECiPE for 2 PErsonsPrEParation tiME: 20 minCooKinG tiME: 10 min

inGrEdiEnts• 200 gr fresh and tender beef sirloin (other beef cuts can be substituted)• 6pcs Green asparagus • 20 gr Parmesan shavings• 40 gr arugula leaves• 5 gr Pine nuts• 10 gr Extra virgin olive oil• 1 stem fresh rosemary • 30 gr oyster mushroom (optional)• salt & pepper to taste

PrEParation• Clean and peel the asparagus. Cook in salted boiling water for 2-3 minutes. feep the

asparagus crunchy, and cool in ice water to preserve the green color.• slightly roast the pine nuts to get a golden brown color.• Place a non-stick pan over high heat. When hot, add a little olive oil and the rosemary

to flavor the oil. season the meat with salt and pepper on both sides, and then place itin the pan and sear for two minutes per side keeping the meat rare.

• remove the meat from the pan and place it in a warm place; let it rest for about 5-10minutes. this allows the meat to become more tender.

• Pan-fry the oyster mushrooms in a little olive oil and season with salt and pepper.• Place the meat on a chopping board and cut it in slices of 2 cm thick. • serve on a bed of arugula, oyster mushroom and the cooked asparagus, then sprinkle

with the pine nuts and parmesan shavings.
