Biography

The major contributing factor in Matt Thom and Monica Wright becoming Australia’s most successful Fitness Couple (with a combined 11 World Fitness Titles), has been their food management; ensuring their bodies remain Alkaline. Matt and Monica’s extensive research and personal trial and error, has resulted in a tried and proven formula that will keep their bodies Healthy and Lean for life.

Both Matt & Monica, have for a long time been extremely passionate about sharing their knowledge and experience with others. Their first book, “Change Your Body with the World’s Fittest Couple”, has become a best seller and helped educate thousands of people throughout the world, that the secret to losing body fat is by making your body Alkaline through food management, whole food supplements and exercise.

The incredible success of their first book ensured that the sequel, the “84 Day Body Challenge” Action Manual, was also a life changing publication for thousands of people globally. EAT, EAT, EAT... all of us are responsible for what goes into our bodies and the choices we make regarding the types of foods we eat. How much food and how often we eat can determine our level of health, energy and body fat.

EAT, EAT, EAT is full of nutrient rich recipes containing high alkaline foods. All meals follow a simple healthy eating plan that will help increase your health and vitality, decrease unwanted body fat and increase your energy.

By eating yourself to health, you will add years to your life and life to your years! YOU can and will have the body you always wanted.

Eating more nutritious foods containing essential nutrients that our bodies crave is the key to good health. Our bodies require 92 essential nutrients every day to function at optimal health. Essential nutrients must be ingested through food or supplementation as our bodies cannot manufacture them.

We have had amazing weight loss results with clients when they changed their lifestyles and used this Eat Green Stay LeanTM diet and alkaline supplements. Your dinner should be the lightest meal of the day since we don’t need energy from carbohydrates to watch TV and sleep! But for most people, this is their largest meal of the day and very carbohydrate-based. Remember to only use carbohydrate foods for energy; work, exercise, and during the day. Restrict carbohydrates at night, and that includes fruit. Today, some popular diets treat carbohydrates as if they are the sole cause of all body fat and excess weight gain. This is not the case. Your body needs complex carbohydrates . . . just during the day, not at night!

Remember it is so important to eat 5-6 small meals over the whole day. We follow this regime and we never go hungry or gain lots of weight. The number one lesson to learn from eating healthy versus eating junk or processed food is that you can eat much more healthy food because it is lower in calories. One upsized burger meal with the lot is roughly the same amount of calories as our whole day’s intake of wholesome food!

Eating more nutritious food more often helps our bodies burn a lot more calories, by first elevating our metabolic rate and secondly through digestion.

If you focus on eating say a healthy salad and a bowl of fresh veggies everyday then you are less likely to be hungry and tempted to eat high fat processed takeaway foods.

Any of the dinner options can be used for lunch options, just make sure you add some carbohydrates such as a slice of bread, rice, potatoes or rice cakes for lunches.

Easy Alkaline BreakfastServes 1

Ingredients1 cup brown rice, cooked1/3 package of frozen spinach, thawed2 eggs2 teaspoons of chilli sauce

DirectionsHeat up the brown rice in the microwave with frozen spinach, stir through with chilli sauce so that they are well combined. Meanwhile poach the 2 eggs and serve on top of the brown rice/spinach mix.

Adding baked beans is also nice with this dish.

Ingredients150g low-fat ricotta cheese2 tbs low-fat strawberry yoghurt1/2 cup natural muesli with nuts4 slices mountain bread2 medium bananas, sliced1/2 cup LSA mix

DirectionsMix the ricotta, yoghurt, muesli and LSA into a bowl. Lay the mountain bread on a flat surface. Spread the ricotta mixture down the centre of the bread and top with the sliced bananas and strawberries. Roll up to enclose the filling. Cut in half and serve immediately.

Avocado & Cheese Omelette with Tomato Bean SalsaServes 2

Ingredients2/3 cup finely chopped tomato2 tbs finely chopped red onion2 tbs fresh coriander, cut finely1 tbs fresh lime or lemon juice4 large eggs2 tbs waterCoconut oil1 small avocado, diced1/2 cup low fat cheddar cheese, coarsely grated1/2 cup red kidney beans

DirectionsIn a small bowl, stir together the tomato, onion, beans, coriander, lime juice, salt and pepper to taste until the salsa is combined well. In a bowl, whisk together the eggs, water, salt and pepper to taste.

Heat the oil in a fry pan. Pour half of the mixture into hot pan, tilting to spread the mixture evenly over the bottom and cook it for 1 minute, or until it is almost set. Sprinkle half the omelette with half the avocado and half the cheese, and cook the omelette for 1 minute, or until it is set. Fold the omelette over the filling, transfer it to a plate, and keep it warm. Then repeat for next omelette.

Matt’s Breakfast BurgerServes 1

Ingredients2 slices grainy bread2 eggs1 tbs Melrose ABC Nut spread (mix of almonds, brazil nuts & cashews)1 rice cake1/2 cup diced strawberries1 bananaCoconut oil

DirectionsHeat the oil in a fry pan. Cut a small hole in both slices of bread and place in pan. Crack an egg in each hole. Cook both sides and place on plate.

Spread nut spread, strawberries, banana and rice cake on first slice of bread then place the second slice on top!

Monica’s Breakfast MuffinServes 1

Ingredients1 full egg and 1 egg white1/2 cup oats1 tbs LSA mix2 tbs chopped almonds4 strawberries, cut finely1 apple, cut finely1/2 teaspoon of ground cinnamon

DirectionsMix all ingredients together for 30 seconds in a small bowl with a fork and microwave for 4-5 minutes until middle is cooked. Cut up into quarters and serve warm with a big cup of herbal tea or coffee! If you are taking it with you, then wrap up in aluminium foil and have it at work or as morning tea.

Breakfast BurritoServes 2

Ingredients1-2 tbs coconut oil1/2 cup chopped onions1 cup soft tofu, chopped finely1 small tomato, chopped1/2 cup coriander and parsley, diced finely2 tbs soy sauce1/4 cup walnuts, chopped3 tbs low fat cheese, grated4 slices mountain bread1 small avocado

DirectionsHeat the oil in a fry pan, add onion and mix for 3-4 minutes, stirring frequently. Add tofu to onions. Cook for 2 minutes then add tomato, soy sauce and herbs, and heat until warm. Stir in walnuts and cheese and remove from stove.

Place half of mixture and half the avocado in a line in the centre of each mountain bread (2 for each person). Roll up and enjoy!
