Matcha - a euphoric, delightful tonic. First known mention of it is in 1053 AD Chinese texts referencing matcha and its bamboo whisk. In 1197 the monk Eisai Myoan carried matcha to Japan. Only whole leaf green tea was used there prior. Powdered green tea, whisk, and matcha bowl are central to the Japanese tea ceremony. It remains a national cultural treasure there and is in the ‘Way of Tea’.

All true teas stem from the plant Camellia sinensis. It becomes green, black, or other varieties solely in how the leaves are handled and cured.

In early spring a reed net canopy is set above select bushes to protect them from strong sun. These most tender, delicate leaves are hand harvested in early May and immediately steamed. Steaming prevents oxidation (a.k.a. fermentation) and disperses chlorophyll throughout the leaves preserving their beautiful green. This protects the antioxidants. They are cooled and slow dried. Stems and leaf veins are hand removed. Hand harvesting, steaming, drying, and proper handling produces the purest, best tasting, and most healthful leaf. It also allows a more properly powdered matcha. To best protect flavor and efficacious components, the leaves are stoneground to a powder on small 14 inch granite, horizontal, slow turning stone sets that take one hour to make 30 grams of matcha, the equivalent of one can of EDEN Matcha.
